Indulge in Irresistible Bliss: The Ultimate Gluten-Free Skillet Cookie Recipe

Hi everyone welcome back to my kitchen and today we’re cooking another recipe from delicious CLE andfree meals but we’re turning to the dessert chapter because I absolutely had to show you how to make my gluten-free sharing Skillet cookie how are you supposed to share it I’m not really sure but it is so good you’re going to want to make it over and.

Over and it’s so so easy I can’t wait to show you how to make this you can find the recipe on page 238 of my book delicious clef free meals let’s get stuck in okay the first thing you’re going to need to grab is a 20 cm Skillet or ovenproof frying pan now if you don’t have one of these don’t worry you can easily put it in a baking dish instead I.

Just love how it looks when it comes out of the oven in this so we’re going to use some butter to just grease this we want it nice and greased up so that the Cookie doesn’t get stuck and now that’s nice and greased up we’re going to put it to one side so that we can make the cookie mix so the.

First thing I’m going to do is I’m going to going to take my mixing bowl and I’m going to add my melted butter light brown sugar and granulated sugar and give it a good whiz up with electric whisk in with the melted butter it doesn’t need to be too hot it just needs to be runny and then I’ve got some granulated.

Sugar and some light brown sugar and I’m going to use my electric whisk to mix them up until they’re nice and cream together once that’s done I’m going to add an egg and vanilla extract and then give it another beet again so it’s all nice and combined I don’t want to over mix it you.

Just want to mix it up enough so that the egg is all combined in the mixture so we’re going in with one egg and some vanilla extract and give it another beat that’s literally all it needs so I’m going to pop that to one side for a second and then I’ve got my plain gluten-free.

Flour to that I’m going to add some salt I’m going to add some zamp and gum now this is really important for glutenfree bakes to help hold the texture together a little bit goes a long way trust me and then I’m going to add some bicarbon as well and I’m just going to give that a bit a stir just to combine those without.

Checking it absolutely everywhere and then that is going into my wet mixture and then of course the most important part the chocolate now you can add chocolate chips chocolate chunks you could add nut and fruit if you prefer that instead or as well but I’m going with a classic mix of dark chocolate and white chocolate chunks I didn’t have any.

Chocolate chips so I just chopped up some chocolate and it seems to work fine to me and then we’re just going to mix this up until there’s no loose flour left and it’s a nice dough and you can see quite quickly how all the loose flour gets mixed in and it.

Forms a nice dough okay so now I’ve got my pan back on the seam and I’m literally just going to scrape the dough into it and then the trick to getting this all pressed out nice and evenly is to wet your hands and just press it into.

Place and I’m just going to press it down into a nice even layer again don’t worry about it being too neat it’s just so it Cooks evenly it doesn’t have to be perfect and then if you want to for a final finishing touch you can put a few extra chocolate chips on top just so they look all melty and delicious when.

It comes out the oven that is our cookie ready to go into the oven so I’m going to pop that into my preheated oven for 20 minutes and then I’m ready to take out and enjoy and I cannot wait if you don’t want it to be so like gooey chewy in the middle you can leave it in 5 or 10 minutes longer but trust me the girer is the better.

Okay it’s out of the oven I’m going to leave this to cool off for about 5 to 10 minutes before I tuck in so there’s only one thing that can make this cookie better than it already is and that is ice cream just going to pop a nice dollop in the middle it looks so good and that my friends is the sharing Skillet cookie of Dreams find it on page.
