We’re making quick and easy no yeast pretzel bites that are soft on the inside and golden brown on the outside. They don’t require any rising and can be made with a variety of flowers, including gluten-free with oat flour. Right place. To give these bites that classic pretzel flavor, we’re going to add a little baking soda wash. So, I just brought two cups of water to a boil. And then I’m going to pour in 2 Tbsp of some baking soda. and it will sizzle when it hits that hot water. And then we’ll just give this a quick stir for it to dissolve. And then we’ll set.
This aside. Now, to make this really easy pretzel dough, we’re going to start by adding our dry ingredients. Frequently asked questions. So, I’m going to start with half a cup of some oat flour. And I just quickly ground down some oldfashioned oats into a flour. And I also include a table with different flour combinations, which you can access in the link below. And then I’m going to add a/4 a cup of some gluten-free flour, but you could also.
Use allpurpose flour if you don’t need it to be gluten-free. Now, you could use all oat flour, but I found subbing in a little bit of this finer flour gives a better texture, more like a traditional pretzel. And then we’re going to add 1 teaspoon of baking powder and just about an eighth a teaspoon salt. And then I’m just going to mix this together with a.
Fork. Next, we’ll add our wet ingredients, which includes 2/3 of a cup of plain Greek yogurt. And I like to use full fat for the most creaminess. Next, we’re going to add 1 tbsp of some light olive oil, but you could also use avocado oil. And for just a little sweetness, we’re going to add 1 tbsp of honey. And I intentionally added it.
After I did the oil cuz that’s going to help it slip right out of our measuring spoon. Works like a charm. And then we’re just going to mix this together with our spatula. Now, you could also use a dough hook or a hand mixer, but I found it’s really easy just to use the spatula. And it makes it easy for just kind of mashing the flour into the Greek.
Yogurt. And then when it’s all mixed together, you’re going to have this very sticky and fluffy dough. And you’ll know it’s just right if it sticks to your fingers when you touch it. But if it looks too wet, go ahead and add a little more flour. And if it’s too dry and not sticky, then you’ll want to add a little bit more Greek yogurt. Now, to form the.
Pretzel bites, I just took a sheet of parchment paper and then I cut it to the size of my cookie sheet. And then I’ll just put the parchment paper onto my work surface. Now, to shape these pretzels, we don’t need to roll them in any extra flour because we want them to stay really soft. So, we’re going to need to put some oil on our hands to.
Keep it from sticking. And first, we’ll remove any jewelry. And then, I’m just going to pour some light olive oil onto my hands. Then, just kind of rub that together. And then, I’m just going to scoop out about a fourth of the dough. And then, gradually start rolling it into kind of a long worm or rope. And then, I can put it down onto my surface.
And then I’ll just kind of like gently spread it out till it’s about 1 inch thick. And the length doesn’t really matter because we’ll be cutting it into smaller pieces. And you could use either a sharp knife, or I’m just going to use my pastry cutter. So, I’m just going to go in and cut them into about.
One and a half inch long pieces. And if needed, if you have any that are offsiz, you can always just squish them back together and roll them and shape the pieces however you like. This dough is very forgiving. Now, you could just bake these as is, but to give them that classic pretzel flavor, we want to dip them into the baking soda first. Now,.
We’re not trying to pre-cook them in the baking soda. Just give them a light coating for the flavor. So, I’m just going to drop several pieces down into the water. And then just kind of give my pan a little shake to make sure they’re well coated. And then I’ll just take my fork and fish them back out. And I do like to put them just onto a paper towel.
Or a clean cloth. And that will just help soak up any extra water off the bottom. And then we just repeat for the rest of the bites. And now that they’ve all been dipped in the baking soda bath, I’m going to put the parchment paper back into my pan. And I’ll just carefully lay them back in. Now, they might feel a little bit slimy, but.
They’re going to taste amazing. You can also use the fork if you don’t want to feel the slime on your hands. And then our final step is also optional, but we’re going to sprinkle on a little bit of coarse sea salt. So, I’m just going to take a little my fingers and just sprinkle it right on top. Well, these look adorable, and they’re ready to go.
Into a 425° oven for anywhere between 9 and 11 minutes or until they’re nice and golden brown on top. Well, here are our pretzel bites after 10 minutes in the oven. And they look so good.
