I’m showing you how to give a fun updated twist to Classic green bean casserole the creamy mushroom garlic sauce gets a healthy protein Boost from cottage cheese that’s been Blended smooth to remove the coddled texture the flavorful crispy topping is made with Parmesan cheese and is gluten-free with almond flour we’re going to start by.

Prepping one pound of green beans and I’ve already gone through and sliced off all of the ends and then I’ve cut them into about thirds and I have a pot of water on the stove behind me that I brought to a boil now we want to blanch our green beans which which is going to make them just fork tender and it’s also going to bring out their beautiful green.

Color I’m going to carefully pour this into my pot of boiling water and then let it boil for 4 minutes so I’ll set my timer for 4 minutes and then we can prepare our sauce so in a food processor or a small blender or in my case the chopper cup with my immersion blender you’re going to want to go ahead and add half a cup of cottage cheese next we’re.

Going to add half a cup of milk and I’m using almond milk then I’ll add a four teaspoon salt and a few dashes of pepper and I’ll just put on the lid and blend until well combined and this will smooth out the curdled texture of the cottage cheese so it’s nice and smooth now we can set this aside next we can prepare our garlic by.

Mincing four cloves of garlic and I’m just using my garlic press that is stainless steel I just have to give it a good squeeze and then out comes all of this delicious freshly minced garlic man that smells good well my timer just went off for the green beans and I have this bowl of ice water so I’m going to quickly remove my green beans from the.

Pot and then dump them into this bowl of water so they don’t cook any longer so they are beautiful in green and I’m just going to drop them right into that ice bath then we can set this aside next we want to slice 8 oz of mushrooms and you can use any variety that you like now you can decide if you want to have your mushroom pieces larger or if you want to.

Chop them up really fine in your sauce I personally like to have them a little bit larger so that I can see the shape of the mushrooms because I think they look really aesthetic in the dish you can cut them by hand with a knife or I found it goes really quick by using my egg slicer so just put the mushroom inside press it down and the mushroom.

That our garlic is nice and fragrant we can go ahead and add in our mushrooms and then we’ll give these a good stir to make sure they’re all well Incorporated so it’s been about 5 minutes you can see all of our mushrooms are nicely cooked down I’m going give this a good stir and now we can pour in our cottage cheese mixture now we can stir all of this.

Together to make a very delicious mushroom sauce and while that’s simmering I’ll go ahead and drain off our green beans those green beans look fantastic and you can see that they’re just kind of fork tender where you can break them but they still have a little body to them so it’s been about 3 minutes and we can see that our sauce is.

Starting to thicken so we go ahead and turn off our heat and then add in our green beans and then stir all of these ingredients together make sure all of our green beans are well coated in the sauce you can see that cheesy texture already starting to spread from the cottage cheese which is going to be so delicious next you want to prepare your.

Baking dish and this works really well in an 8×8 or like a 7 by9 like I have here but you want to spray it really well with some non-stick I’m just going to use some olive oil and then we’re going to very carefully pour all of our green beans and sauce into our pan we’ll definitely want to pour away from you and we don’t want to leave anything in.

The pan oh this smells so good we’ll go ahead and just spread this in our pan and I like to kind of press it down just to make sure all those green beans get to soak into that sauce so we’re going to make a very delicious crumble with some almond flour and some Parmesan cheese and some butter and a few other seasonings and the the best part is that.

It’s gluten-free and made with all natural ingredients I’ve added 2 tablespoons of butter to this microwave safe bowl and I’m just going to put this in the microwave for about 25 seconds to melt the butter well that looks perfect so next we’re going to add a/ thir a cup of some almond flour and we want to add a third a cup of grated Parmesan cheese.

I find it works best to use a block of Parmesan cheese and then just shred it with my zesting grater because if you use the pre-bought shredded cheese it’s been coated in cellulose which keeps those little strands from sticking together and I have found that it doesn’t melt down quite as easily and it’s one less artificial ingredient to.

Have in this dish so I’m just going to quickly grate about a thir a cup of Parmesan cheese I’ll add that to our Bowl we’re going to add a four a teaspoon of paprika half a teaspoon of dried parsley a four a teaspoon of salt and a few dashes of pepper and you want it to be like a dry pasty texture once that’s all mixed.

Together we’re going to add in about 2 tbspoon of some sliced almonds and this will add a little more Crunch and flavor then we’ll mix those together and then I find it works easiest to just take it in my hands and then spread it over the top of the green beans and this will turn golden brown as it bakes and get nice and crunchy now it’s ready to go into a.

375° oven for about 25 to 28 minutes or until the crumble on top starts to turn a golden brown my casserole baked for 25 minutes and then I allowed it to sit out on my counter and cool for a few minutes you can see how it has this beautiful crust on top and then with these bright green green beans and then these beautiful mushrooms this looks gorgeous.

Make sure you bite with some green beans as well as the crumble on top M that is delicious those green beans just have the perfect consistency they’re nice and soft without being mushy and there’s so much flavor in that crumble on top with that almond flour and I love having that little bit of crunch that comes in from.
