hey y’all welcome back to cooking with Southern Hannah we’re going to be making a wonderful recipe today our recipe today is a glutenfree Snicker doodle cookie I know that we have some people watching this right now that are crazy about Snicker doodle cookies especially going free.
They are hard to find and so personally I’m a Snicker doodle nut when it comes to cookies like that and I’m sure there’s someone watching that is thinking that this cookie is impossible to make and actually taste good and look right well today we’re going to discover a recipe that is easy and quick we’re going to do it step by step and learn.
How to make these cookies taste wonderful and look great so let’s get started here all righty so we’re going to go ahead and get started here so I have my allpurpose key Arthur gluten-free flour right here I have my egg I have my butter that’s been sitting at room temperature I have not melted this.
Butter just been sitting at room temperature I have my sugar right here I have my vanilla and then I have my salt my baking powder and my zamp buun gum so what we’re going to go ahead we’re going to go ahead and get started here I’m going to just add my butter to this and I’m going to be whipping this butter up so I’m going to go ahead and just.
Turn this on okay so I’m going to go ahead and just gently stir this and then I’m going to increase my speed to whip this butter so I’m going to turn go ahead and just turn it on the stir Moon and then here just a second I’m going to probably put it on the number four.
Setting so this is what my consistency looks like I have been mixing it on the level four for about 2 minutes and it’s a good consist consistency so far I really want this to be whipped I don’t want a bunch of like little clumps in there because that will kind of hinder from the consistency that it should be so what I’m going to go ahead and do is.
I’ve scried all this off of my paddle over here just get that little bit out okay I’m going to go ahead and add my white sugar into this mixture take this out I’m going to go ahead and just simply just pour this in right there just like that make sure you don’t have any stuck.
In there just like that and I’m gonna go ahead and mix it again but this time I’m not going to put on level four I’m just GNA simply just stir it okay so I’ve been mixing my butter and my sugar for about 1 minute and it has turned this beautiful cream color so make sure that your sugar and butter.
Turn into a cream color so we’re going to go ahead and get started again and I have my egg that I’m going to go ahead and crack here just like that okay and I’m going to go ahead and stir this now with a fork just stir that and while I’m putting this in I’m.
Also going to be adding my vanilla into there as well so I’m going to go ahead and add my egg there just like that perfect okay and then I’m going to go ahead and add my vanilla extract as well and I’m going to stir it again so I have added my vanilla my egg my butter and my sugar and I have been.
Stirring it for about 2 minutes until it looks like a good color and so this is a beautiful color here this is all mixed and it looks very good but not until I add the rest of the ingredients so I’m going to go ahead and simply add my salt my zanam gum and my baking powder so I’m just going to simply just add this this bowl right here and I’m just going to.
Gently Stir It it doesn’t need to be long probably like 30 seconds or something like that now I like adding the zanam gum to cookie recipes and breads because it helps with the structure of the Breads and the cookies and so that’s why I enoy adding this because it helps.
Tremendously with consistencies Okay so this looks like a good consistency it’s all it’s all stirred fine so I’m going to go ahead and just simply add my flour goe just lower this just add my glutenfree flour here just gently stir it in just like that I’m going to go ahead and stir this again so I’m going to push.
This up now I’m going to stir it again so this is the Snicker doodle cookie batter that we got for this recipe and it is a wonderful consistency I stirred it for about 2 minutes and don’t be careful not to over stir the batter because it will mess with the consistency and they will end up not turning out as well so be careful but.
Make sure it is stirred well enough I now have have my press and seal over my bowl that has my Snicker doodle cookie dough in it now you may be asking what what am I going to do with this presson seal so I am simply going to be refrigerating my dough and so it handles better especially working with gluten-free dough especially cookies in.
Particular they have a tendency to kind of spread out when you were baking them on a baking pan and so I found that for cookies refrigerating my dough for 30 minutes helps a lot better and it’s easier to handle so that’s what I’m going to go ahead do I’m going to simply be sticking my dough in the refrigerator for 30.
Minutes okay so I simply took my cinnamon and my sugar and I mixed them in this SP as you can tell I just simply mix them added them together and mix them so what I’m going to be doing for this particular recipe is I am going to be taking after my dough is refrigerated I went ahead and made this while I was waiting for the 30 minutes so what I’m.
Going to do is I’m going to take my dough and I’m going to be really which I will be showing you here in just a few minutes but I’m just talking right now so I’m going to be taking my dough I’m going to be rolling my balls into about one in balls and I’m just going to kind of roll them around in this so you can really use whatever kind of dish I would.
Suggest like this small bowl would work fine if you have a bigger goal you want to use if you have a plate whatever really works best for you another thing I also wanted to say is that I have a cookie baking pan right here that I have sprayed with oil now feel free to use olive oil coconut oil vegetable oil really whatever you have in your pantry.
Will work I mean any type of oil I always like using the olive oil I feel that it works best for me but really feel free to use whatever you want okay so I have let my dough sit covered in my press and seal and the refrigerator for 30 minutes and so now it defitely is a lot firmer as you could tell the consistency is a lot better okay so what.
I’m going to do is I’m going to make about 1 in size balls so I’m going to roll this up and feel free if you want to leave your dough in the refrigerator longer than 30 minutes that is absolutely fine whatever works best for you if you have something that you need to do you can let it sit you can let your dough sit in the refrigerator for.
Over 30 minutes it’s fine okay so what I’m going to do is I’m going to take about a 1 in ball right here and I’m going to simply be rolling it in the cinnamon sugar just like to make sure it’s covered okay and I’m going to put them about 1 and 1 half to 2 in apart from each other other so go ahead and roll.
This again just like that going to roll this one again okay so I have my last Snicker doodle cookie that I’m going to be doing so I’m just going to Simply do this again it’s.
A little large try to keep them all the same size because baking time will vary if you have large ones and you have small ones so make sure that they’re all approximately the same size just to keep it straight okay so this is my last one these are going to look so pretty I’m excited to see how these will.
Look okay so I’m going to go and put that there I have about an inch to uh I’m sorry one and a half to 2 in apart and so what I’m going to do is I’m going to Simply I’m going to just simply flatten them out just a hair just a little bit just to help them so you can take a spatula you can really take whatever you want whatever you have.
If you have a measuring cup you want to use a spoon you want to use whatever you have a cup just simply just push them down a little bit just like that and I’m going to go ahead and put them in my preheated oven which I have preheated to 375 so I’m just going to Simply go ahead put them over.
Here and I’m going to put them in the center rack right there and I am going to be setting my timer for 9 minutes okay I just wanted to clarify something so I said that this would take 9 minutes I actually found that they weren’t quite done and so especially dealing with cookies I like to make sure that they’re done but they’re not.
