Fibian i’ve got one more Ghanaian recipe to share with you before exploring Mexican recipes this April so in today’s video I’m sharing a glutenfree recipe for buffs also known as Ghanaian puff puff a yummy street food that is very well loved in Ghana the buff I’m serving today has no yeast has a considerable amount of healthy fiber and low in sugar.
So if that’s something that fancies you then my dear you’re in for a treat stay tuned and enjoy the process i share clips of nature at particular intervals of my recipe videos but I don’t think I’ve shared this fact before gardening is one of my favorite outdoor activities it gives me a chance to interact with nature neighbors brings.
Me peace and the opportunity to love on my plants no matter what I’m growing I’m always fascinated and refreshed with the process it also helps me to heal or understand different parts of my life i’ll elaborate more on that later on in this video after making the batter for the buffer in one mixing bowl combine.
Together all the dry ingredients and they include chickpea flour brown rice flour sagum flour and cassava flour i’m using all four because they each absorbed liquid differently but together they complement each other so the batter does not fall apart or that it doesn’t turn to rock buns next add in the psyllium husk fiber to help add.
Structure to the batter since this is a glutenfree recipe adding some fine Himalayan salt i’m adding in some nutmeg and cinnamon powder for flavor as well as baking powder as a leveling agent once you’re done with this process whisk the combination very well and set it aside have you had home or made puff.
Puff before like Ghanaians Gambians and Nigerians love making puffpuff too but the recipes do vary you can also add ripened plantains or bananas to your puffpuff mixture to make your batter very rich and personally I do not like the one with yeast the scent of the yeast throws me off or maybe it’s the one I’ve tasted in the past which is why.
I used baking powder instead next mix the water and honey in another bowl or container since I’m not using granulated sugar I’m using honey instead because I wanted this recipe to be glutenfree while developing this recipe i discovered that using less water makes the buffer firmer and using more water makes the buffer moist on the inside now.
Feel free to experiment to see which one you prefer i prefer the one with more water according to the range I have provided on the full recipe which you can find on my website by using the link in the description box below adding more water makes the buffer or the puff puff bouncy and airy on the inside but in this recipe video I used.
Less water and the results surprised me you’ll see what I mean after the batter has reasoned add the honey water solution to the dry mixture and mix very well using a wooden spoon now if you want to escape the possibility of a serious one arm workout I suppose you do this step in a stand mixer but I do not have any notes for that yet once you’re.
Done cover the bowl with a cling film wrap or a pot cover then transfer this entire system to a warm spot like an oven with the light on for the batter to rest and rise well before it’s ready for frying but do not turn the oven on you do not want any of that.
composting have you done this before some people feel like you need a large space to do this or that it cannot be achieved while living in the city but I’m here to tell you that that is definitely not the case trust me you can make do with whatever you have this spring I want to get more engaged with.

Here I have some avocado oil from a previous batch of puff puff I made while developing this recipe so I’m using avocado oil to fry these puff puff growing up I used more vegetable oil and canola oil but now that I’m more health conscious you know got to make some switch up in the right way which is why I’m using avocado oil then line your.
Colander with some kitchen towel or kitchen tissue to drain the oil from the puff puff after it’s done frying and to ensure if the oil is just hot enough dip a wooden spoon in and if bubbles form around it then it’s ready for frying you do not want your oil to be too hot or smoking it should just be hot enough and when it’s time for frying scoop.
Small portions of the batter using your hand a spoon or I’d say a quarter measuring cup gently ease them one by one into the hot oil but do not fill it up and if you’re using your hand be very careful so you don’t get burnt by the oil now because I used less water I was able to roll the dough which made it easier to portion the farm batter before.
Frying them in portions if you use more water which I recommend so the puff puff doesn’t get too dry on the inside you would not be able to roll the dough you’ll have to use your hand or a spoon or a quarter measuring cup instead then let the portions of the buffer fry for about 5 to 7 minutes until they get golden brown most times.
These yummies will turn in their own but if that’s not the case use a wooden spoon to turn any that were left unturned now you can fry as much as can fit in the pot without the pot getting crowded would you say that this is one of the healthiest and glutenfree bufferts or puffpuff recipes you’ve seen let me know.
