A taste of Motor City without the gluten: Gluten-free Detroit style pizza
All right folks this is the gluten-free Detroit using uh J Kenji Lopez’s serious seats with one small modification so 300 G of the gluten-free flour from Caputo and I got 220 water with 5 G of um instant dry yeast there already about this just changed from 9 to 10 so great so 10 G of salt and I am going to get oil in a.
Second um that’ll be kind of like the last thing that I add um when we put this all together so that’s it so far this is just got to just going to bloom this guy up here a bit so yeah all right so we got our stand mixer here with the hook on it and then I grab the oil cuz.
We’ll need that and then our yeast is doing okay in there and then I’m just going to grab the salt I’m going to jam it in here cuz why not we don’t care um and then we’re going to just like spin this dude on low just to get that salt mixed in and then what we’re going to do is.
We’re going to slowly add this water to this I don’t know if I can do this um with only one hand cuz I’m shooting this but uh I’m going to give it a shot and if I cut away really quick it’s cuz it’s it’s all gone horribly wrong that being said you’re going to like add this water to your flour and you’re going to notice cuz it’s the.
Gluten-free flour it’s just going to look like crazy but you’re going to let it do that and then once it kind of like comes together we’re going to let it sit for 10 minutes uh but I’ll show you that in a second all right so going keep this guy on low and just going to try and do this through.
The camera which is pretty hard all right there we go so like in between stuff what I like to do is just grab uh my favorite spatula and just kind of scrape down the sides a little bit and help it out here um this dough is hella sticky so you’ll notice oh.
Great I’m not even filing it you’ll notice that right away and then just mix it up a little bit more till it kind of like comes together this is as I guess as Shaggy as it’s going to get but um we’ll let it sit here for a minute and then uh we’ll add some oil all right so it’s been 10 minutes.
Maybe a couple minutes more but that’s fine doesn’t matter Grand to everything we got our Shaggy dough and what we’re going to do is we’re going to add the oil and then we’re just going to let this do its thing scrape it down bang it off the hook for the next 10 minutes I’m not going to film this for 10 minutes but I just I’ll I’ll let you know how.
It’s going to go so we’re going to go on low I’m going to add the oil a little at of time think I just fill it all over myself that’s fine and yeah it looks like utter trash.
Right now and I get it but you you got to trust the process folks trust the process and uh we’ll be back in a little bit all right so we’re about 3 minutes in and it’s starting to come together uh I told you you just got to try TR the process I know it seems weird if you’ve.
Ever made dough before this isn’t dough this is gluten-free dough you got to remember that so we’re going to let this go another uh 6 minutes now just a little checkin this is what we’re looking like now so we went from that crumbly mess into a coherent ball into now this thing on the ground here so this is.
Looking pretty good we’re honestly a couple minutes away from from it being the full 10 and I’ve never played with time on this so um I’ll let you know about that but yeah this is this is where we’re at so all right.
So we’re about at that time folks where we’re going to take this out and we’re going to form it into a ball now if You’ ever made pizza dough before like this isn’t going to stretch and you’re not going to be able to like roll it over and it’s just say I Can’t Describe what this really is going to feel like but it’s kind of like mashed.
Potatoes and Play-Doh all at once um certainly doesn’t smell like either of those things it smells like gluten-free flour um and so I’m going to scrape this out on my work surface I’m going to have oiled hands and I’m going to form this into a ball and I’m going to put it into my pan that’s already been uh oiled a little bit here um get yourself a Lloyd.
Pan I don’t care these are the best uh but that’s what we’re going to do next uh I can’t film it so um imagine in your mind I’m going to take this turn it into a ball and then put it in there all right so here’s our dough here’s our do ball and I’m just cleaning up some stuff too so uh I just scraped this out onto here formed it.
Into this shape and now I’m just going to slap my lid on and I’m going to let this go for an hour okay so it had been about an hour and I’m doing my first kind of like this is where you would normally stretch but like that gluten-free doesn’t stretch cuz there’s no gluten right so kind of just gently pushing it out towards the.
Edges a little bit it was a little bit bigger before I should have started the video earlier but um this is going to rest for another hour but you know you know this is gluten-free in comparison here’s a here’s a gluten boy and he hasn’t been in here as long so he’s just uh he’s going to need probably about another half hour before he gets.
Kind of stretched up so just just to compare this guy is’s like a nice smooth ball this guy is kind of like not a smooth Ball but it works out apparently so we’ll do that all right folks it’s been another hour and this is what we’re looking like on the.
Gluten-free little juicy in the corner there so very nice very kind of like puffed up and uh we’re going to put some more oil down the side and then do the pepperoni bit and then let it sit until it’s ready to cook all right so I’m just cooking down some sauce and we got the side.
Pepperonis in everything is pretty good and um we’re just going to top this thing now and then throw it in the oven uh oven is preheating to 500 it’s my June oven I got a cast iron plate in there so let this go and get kind of nice and hot and then we’ll throw it in for like 12 to 15 minutes and we’ll be good all right so June’s been at 500 for.
A little bit now and then this is our prepped gluten-free so uh we’re going to throw this into the oven now see how it goes and then uh I usually start with a timer for you know 12 minutes and uh we’ll check on you then all right so we hit the 12-minute.
Mark That’s what she’s looking like in there not bad not bad looking honestly um I’m going to let it go for a couple more minutes just to round it up on top all right so this is it it’s looking all right we will uh see how it comes out of the pan all right well there he is that’s.
The gluten-free one apparently it tastes amazing I’ve never actually tried it but hopefully it goes over well
