Crunchy Delights for the Gluten-Free Foodie
Welcome to my kitchen I have a great recipe that I want to share with you today it’s a family favorite and if you’re glutenfree and you always wish that you could eat the ice cream cake from some of these big stores uh and you can’t because those chocolate crumblies in between the layers of ice cream are not.
Glutenfree well I have the solution for you these are easy to make they’re delicious you can use them as an ice cream topping you can make your own ice cream cake using it uh between the layers of flavors of ice cream and you can also use it as a pie shell uh like a chocolate Gham cracker kind of crust um I like this recipe it is made with the.
Dark very black cocoa which resembles um your Oreo cookies but this is a much healthier version and it tastes very similar obviously without the cream so it’s really really easy to make and um I’ve already preheated my oven at 350 I have buttered My Pan and I’ve coated it with the black cocoa but you can use your gluten-free flour as well and I’m.
Also going to put my glutenfree blend that I like in my description under the video so um just a quick note if you wanted to make an ice cream cake I would make two of the recipe I would put one at the bottom of this pan uh for the first layer of the ice cream cake then you could put your ice cream then I would make the second batch in this kind.
Of a pan or something similar that you have at your house put that in between and then put another flavor of ice cream and then what I do is I buy um heavy cream so this is not gluten uh this is not a vegan recipe uh but it is glutenfree and I would just whip up some heavy cream to put as the icing so I’m going to get started I’m using uh 3/4 of.
A cup of my glutenfree flour blend I’m using um let’s see I’m cheating a little bit with my recipe I use 1/3 cup of organic turbinado sugar I use 1/4 cup of the unsweetened black cocoa you want it to be black cocoa any brand I just so happen to have this one at the moment which is Anthony’s organic uh believe it or not I.
Get a lot of my gluten-free flowers and my black Coco uh from V cost um I really like some of their products so you can check them out I’m going to put in an eighth of a teaspoon of salt and a/4 of a teaspoon of either your guar gum or your Anthem gum and I’m going to put my paddle in my.
Mixer up my bowl and give it a quick stir once you’ve had that all mixed together you want to put in 5 tablespoons of cold unsalted butter in and now you want to mix it until everything gets really crumbly it only takes a few minutes maybe you want to do that on.
Like a medium setting if you happen to have um a tabletop mixer you can make this with a hand mixer mixer as well few more minutes I love this recipe you can pretty much do anything with it now with the summer months coming eating a lot of ice cream it’s really good just sprinkling it on.
Top but my family likes homemade ice cream cakes so this looks pretty good you want to make sure all the butter is in Incorporated with the dry ingredients and so now I’m going to add the vanilla and we’ll be ready to cook it so it’s one.
Tablespoon of vanilla extract I use um the one from Trader Joe’s it’s called Pure B bourbon vanilla extract going to give it another mix for another minute or so and it’s done very very easy recipe okay that looks absolutely terrific and I’m just going to dump it.
In my pan and as you can see it’s quite dry and I’m just going to spread it around evenly just want to Pat it get it even so it looks like this and then I’m going to put it in the oven on the middle rack for about 18 minutes it’s been out of.
The oven and it’s nice and cool and what I like to do is just sort of break it up a little bit as you can see it gets pretty crumbly and then I like to take take a plastic bag and scoop it.
In and then you can just sit there and squeeze it and break it all up till it’s nice and crumbly and sprinkle it on top of your favorite ice cream we’ll stick a couple of cherries in.
