Hi friends welcome back to my Channel today I’m going to be making a glutenfree coconut bread it’s going to be glutenfree and sugarfree and here I have my coconut and I have my honey which I’m going to be using for the um sweetener I also have some coconut oil I’m going to use that for the oil two eggs this is.
Our glutenfree flour here with some cinnamon and baking powder in it and I also have some vanilla extract I also have some avocado oil to grease the pan and this is my um loaf pan right here so welcome I’m getting the coconut ready for grating you could have also use shredded coconut flakes unsweeten first up I punch a hole in the.
Bottom eye which is a little bit softer and I drain the coconut water out of the coconut I then crack the coconut with a a mallet or with anything that’s hard I just crack the coconut shell as you can see here and what I’m going to do I am going to um separate the meat from the shell using a grater I then grate the coconut pieces as you can see here I’m.
Grating the coconut um pieces on the um greater side of the um of The Grater again as I said before you could always use shredded coconut which is much um faster and easier accessible okay so the coconut is all graded and this is um my grated coconut I have about maybe 2 cups here and that’s from a whole.
Coconut and then I’m going to add two eggs lightly beaten so I add two eggs lightly beaten in the coconut and then I’m going to add some honey and for the honey I’m going to add one cup of honey cuz I really don’t want it to be too sweet so I’m adding one cup of honey.
You can depend on the sweetness you can also how you like it um sweet you can also add a little bit extra honey if you prefer I I don’t like it too sweet so I’m not going to add too much honey so I have ballpark about a cup of honey here and then I’m going to just just mix that in into the coconut okay as you can see I’m mixing.
It into the coconut and then I’m going to add some coconut oil so this is some organic coconut oil that I have and I’m doing a half a cup of that into the mixture and then I’m just going to whip that in to the coconut okay this is what it look like now I’m going to add a little bit of vanilla extract to the.
Mixture and then going to whip that in nicely and then I’m going to add the flour baking powder and cinnamon mixture and that I’m going to fold that in with a spatula and I do that a little at a time okay and this is the um glutenfree flour I have um 2 teaspoon of baking powder and about a 4 teaspoon of brown cinnamon and I’m.
Just going to fold that into the bter lightly now this is going to be a quick bread so I’m using the baking powder as the rising agent okay now I could have added also a little bit of milk as you can see the mixture is pretty thick but it’s going to be a bread and.
So I want it to be a bit thick but if you want it to be lighter you can add a little bit of water to the mixture so here I’m just adding the honey um container I just add a little bit of water to um rinse out that honey container and I add it in here and I just lightly mix it in not too much maybe about 1/4 cup of um water you.
Could also add some almond milk and you just lightly mix the mixture in okay so this this is it right here this is my glutenfree sugarfree but I use honey so it is sweet bread okay and this is my pan that I line with some parchment paper and I lightly sprayed it with some avocado oil.
And then I’m just going to pour the bter see this is the butter okay so I’m going to just put the b in the loaf pan and this is it this is our coconut glutenfree bread and then I’m going to pop it in my oven which I already have my oven here preheated so I’m just going to pop it in.
The oven at 350° F and I’m going to bake it for about 35 to um 40 minutes until it’s done and you know it’s done when you use a screw on and pour it in stick it in the middle and it comes out.
Clean okay so this is it right here our coconut glutenfree bread and it’s ready for the oven the sweetener we used was honey and we used freshly grated coconut so I’m going to put that in the oven and I’ll be back to show you the finished product so here it is friends.
