Let’s get started! 3 carrots (250-300g) Peel and grate carrots Set aside 1/2 cup (60g) walnuts Chop the walnuts into pieces Leave some for garnish and set them aside 2 cups (200g) almond flour.

2 teaspoons chai masala powder 3/4 cup cornmeal (or fine polenta) 2 teaspoons baking powder Whisk together the dry ingredients 3 eggs 3/4 cup (150g) brown sugar Whisk together until light and smooth 1 cup (200g) salted butter melt and cooled.

Whisk until well combined Add the grated carrots Fold in until just combined Add the dry ingredients Mix gently until just combined 1/2 cup (60g) raisins chopped walnuts Fold the ingredients together until combined Transfer the batter into the prepared 8-inch (20cm) cake pan.

Smooth the top Bake at 355°F (180°C) for about 50 minutes until the batter is cooked through Allow the cakes to cool completely Let’s make cream cheese frosting 8 oz (250g) cream cheese (softened) 1/2 cup (50g) powdered sugar Mix until smooth and creamy Once the cake is completely cool, Spread the cream cheese frosting on top Garnish with chopped walnuts.
