Deliciously Decadent and Guilt-Free Carrot Cake Recipe!

Hey everyone and welcome back to my channel gtic and welcome to today’s video where this is the second recipe video so today we are making gluten-free carrot cake if you’re wondering why I’m saying it’s the second video it’s because I did a little baking Vlog where I entered a baking competition with this recipe find out how I did in that video.

I’ll link it down below but today we’re making a really really good gluten-free carrot cake with cream cheese frosting very easy to make really tasty and I hope you enjoy if you do please give it a big thumbs up comment down below and subscribe if you’re new to the channel to start the carrot cake we have our.

First three ingredients which are going to be our oil brown sugar and eggs so first of all I’m going to add in my vegetable oil and like I said all the ingredients and quantities will be in the descriptions down below as well next goes in our brown sugar and finally we’re going to put in our three eggs.

And now we’re just going to put that all mixing together so here is the consistency of the mix after now we’re going to add in our gluten-free flour people always ask what’s my favorite gluten-free flour and it’s this does Farm free I love this one it’s so good and our spices so I love cinnamon we’re going to have a teaspoon of.

Cinnamon and half teaspoon of Ginger and let’s mix this all together so next we’re going to put in orange zest and our carrot this carrot I grated by hand it took me literally ages so I’m not going to put this in the mixer I’m just going to do this part by hand so I’m just going to do a bit at a time because I want it all nice and even.

Throughout and finally add in some orange zest so that’s the carot cake it looks really good it’s so orange which I really want it to be it’s gone in the oven 160° C for 50 to 55 minutes or until until it comes out clean with a skewer so I’m going to put that in the oven now and I’ll show you after so I’ve just.

Taken my car cake out of the oven it’s looking really good I’ll show you it later when we take it out of the tin but for now just going to test it put this in and you want it to come out clean like it did there so I’m going to leave it to cool in the tin for a bit and then we’ll take it out and let it cool there as well okay so I’ve taken it out I’ve.

Let it cool and it’s on the wire rack now so it looks so good oh my God the smell I tasted a little bit here it so good as well so we’re going to leave that cooling now I’m actually going to leave mine overnight and in the morning I’ll put on my cream cheese frosting but honestly if you could smell this it smells amazing so show you the cream.

Cheese frosting next to start our cream cheese frosting you want to have let your butter get soft overnight and then we’re going to mix it on a stand mixer for about 5 minutes until it’s pale so after about 5 minutes or until it’s looking pale we’re going to take it out then and add in our icing sugar so because icing sugar goes everywhere I.

Recommend doing it in two stages and mixing between each so I’m going to do the first part now and I’m actually going to save it in because I find that sometimes there’s a bit of clumps of icing sugar so I want to get rid of them and not have a grainy mix and finally the last ingredients so we’re going to put in teaspoon of.

Vanilla and our cream cheese and then we’re going to mix this for 2 minutes on the mix so my buttercream is ready but it’s very hot so I’m putting it in the fridge for 15 minutes to chill and while that happens I’m going to grate the zest of an orange cuz we’re going to use that to sprinkle on top of.

The carrot cake okay so now we have our frosting so now it is time to decorate so I’m going to put this on and then we’ll decorate the top and finally just to kind of contrast it going to put a bit of orange zest sprinkle it on top just to make it look really orangey.

Like carot cake and here is the finished product I just brought it outside you can see it in full in the nice bright sun and you can see how good having the orange on top really contrast the cake and here is the inside of the car cake just to show show you how the layers look and how well it’s all holding together gluten-free so I’m really happy.
