Slice it into two Fanci your mini cakes we’re going to begin by prepping our carrot and you can use one or two baby carrots depending on how strong you want that carrot flavor to be I’m going to go ahead and just use one and then I’ll just take my zester and quickly grate my carrot and honestly this is probably the most timeconsuming step of the entire.
Recipe and this will give you a good tablespoon of shredded carrot to make this super easy carrot cake batter we’re going to start with a small bowl and we’re going to add one egg and one teaspoon of oil and light olive oil is my favorite and for some delicious flavor we’re going to add half a teaspoon of apple cider vinegar half.
Half a teaspoon of vanilla 1 tbsp of maple syrup 1 tbsp of cane sugar and then I’m using my mini whisk to whisk this together until it’s well combined but you could also use a fork now we can add our dry ingredients which includes A3 a cup of almond flour a four teaspoon of baking powder and then to get that delicious carrot cake flavor we’re going.
