Indulge in the Cozy Goodness: Homemade Gluten-Free Bread Pudding

Hello everyone today I’m going to show you how to make my gluten-free bread pudding this is spectacular you guys if you love bread pudding you are going to love this one if you don’t think you like bread pudding try this one because it just might change your mind so let’s get started and I’ll show you how to make it I do things a little different.

Than most people do with their bread pudding I like to soak the bread in the milk and cream first and then mix the eggs with the sugar and spices and all that instead of making a custard to then soak the bread in so I’m starting with 480 mil or 2 cups of whole milk and 240 mil or 1 cup of heavy cream and I’m just pouring that over my bread cubes and.

Torn bread in my large bowl in this case I have eight cups or about 1.5 pounds of torn or cubed up gluten-free bread that is stale and we probably all have some of this laying around or even in our freezer I like to keep mine in my freezer when it goes stale I just put it in the freezer in baggies and eventually I make bread pudding or breadcrumbs out.

Of it depending on the type of bread now for bread pudding I like to use an enriched bread and I have all of those options listed within this uh recipe post but um you can use whatever you want I just feel like the enriched bread Works a little better for bread pudding versus something that is less enriched with butter and eggs and milk and all of.

That such as like my artisan bread or um sourdough or something like that so I’m just mixing this through with my hands I feel like it works better to use my hands and and then I’m pressing it down and letting it soak for at least 30 minutes in the bowl and I’ll go ahead and get the other mixture going while that is soaking in a large bowl I have.

Five large eggs and to that I am adding 100 G or a half a cup of regular sugar and 150 g or 3/4 of a cup of brown sugar and I’m just going to mix this together and I’m also adding in a teaspoon of ground cinnamon and two tasp oons of vanilla extract make sure you don’t add the sugars to the eggs until you are ready to whisk them up because they can.

Start actually cooking those egg yolks so just whisk this until it’s nice and whisk through and now our bread has been soaking for 30 minutes and to that I am adding some raisins this is about a half a cup of raisins totally optional if you don’t like them you can certainly leave them out you can also add other add-ins to this like chocolate chips or nuts or.

Whatever you’d like there are plenty of options within the recipe post um and then I just mix this through and it might look a little bit chunky or a little bit different than you would normally see in a regular gluten- filed bread pudding but just you wait it is going to be phenomenal I am telling you so now I’ve got a little bit of butter.

And I’m just um greasing My Pan this is a 9 by3 in pan you can also use um like a casserole dish that’s like round or oval whatever you have that will fit all of this bread pudding in there and we just pour it in there and then smooth the top and we’re going to bake this at 350° for about 35 to 45 minutes and I say that because depending on the size.

Of your pan it could take less time or it could take more time so what I would do is start at 35 minutes check it then if a toothpick inserted into the center comes out clean it is done if it doesn’t come out clean give it another 5 minutes and check again so in the meantime while that’s baking we’re going to make our sauce and you guys this sauce is just.

Everything it’s like a butterscotch sauce and it is divine you guys it is so good and it’s so simple to make so in a small saucepan I have a half a cup or 113 G of butter and to that I have added 1 cup or 200 g of brown sugar and I’m just going to let this go whisking every so often until it comes up to a boil and that will allow the sugars to melt.

Properly before I add in the heavy cream so here it is starting to come to a boil and now I can add in a half a cup or 120 mil of heavy cream and it is going to sputter and spit a little bit so just please be careful so you don’t burn yourself and get that all whis through and I’m going to set a timer for 3 minutes I’m going to let this boil for 3.

Minutes straight whisking every minute or so it doesn’t have to be constantly whisked and this is what it will look like at the end of the 3 minutes so take it off the heat at this point and we’ll go ahead and add in one teaspoon of vanilla extract and you can if you’d like add in just a pinch of salt so who says we can’t have bread.

Pudding if we have to be gluten-free not me that’s for sure and I love love love bread pudding and this bread pudding you will not be able to tell it’s gluten-free at all it comes out just like any other bread pudding you had in years past when you could eat gluten and with that sauce OMG you guys that sauce is good enough to drink but I’d rather.

Go ahead and pour it over my bread pudding just look at this you guys it cuts it slices just like any other bread pudding it cuts through just like any other bread pudding it is one of what I would say one of those cozy comforting desserts it’s made with this Rich sweet custard it’s spiced with the cinnamon and you can add the raisins you can add.

Nuts if you’d like um chocolate chips so many different variations can be made with this and it’s just absolutely incredible you guys so enjoy
