this recipe is in my cookbook 99 ninja foodie recipes and you can get a copy on my website which is www.san kitchen. today I’m attempting to make some gluten-free bread in the Ninja 15 in1 now I’ve tried a few different recipes and I’ve not been 100% happy.
With them it’s really hard to find a really decent recipe for gluten-free bread so I’ve been amending the recipes switching them up hopefully today’s is going to work a little bit better than the other ones the other ones have come out really nice tasted great been nice warm but then been just too dense and that is just not a texture that we want.
The bread we want it to be light and fluffy so here goes nothing wish Lu let’s try again I’m starting off by 100 MLS of water into a bowl you want to make sure that is warm water and then measure in 5 G of yeast give this a mix then we’re going to set it to one side to activate need to be using some gluten-free flour I’m using plain flour.
And that’s 180 gam 25 G of ground almonds went in half a teaspoon of zanam gum a tablespoon of corn flour 4 G of salt and a teaspoon of sugar and give that good mix now our yeast mixture has gone a little bit froy and we’ve got some bubbles there and it smells quite yeasty so I think we are ready to go with that.
So in with that in the bowl we also want 100 ml of warm water as well so that was 200 100 total which we used 100 earlier and 100 now and we also want a little bit of a random ingredient a tablespoon of mayonnaise now we just want to whisk this together until we get a nice smooth.
Batter gluten-free bread always looks a little bit random it’s such a different process to making a normal loaf of bread but fingers crossed we can make this work okay that’s nice and thick now as you can see and we got no lumps in there now I’m using my ninja tin which I got in my ninja bake wear set so the bake wear set.

Here and I’m just going to pour this sounds strange when you say pour doesn’t it with bread we’re going to pour that into our tin and then we can just level that out roughly doesn’t have to be perfect now we want to set this on to prove and we want this to really show that it’s growing before we bake it so I’m hoping that something around 40.
Minutes might be enough but we will see let’s go and get that ready right let’s lower our tin into the ninja and close the lid we’re on to prove and I’m going to select 40 minutes there you go and let’s pray that this Rises up now we’re getting close to the time being up so I thought we have a little sneak let’s see how much it’s risen oh.
Okay not bad I would say that it’s almost doubled quickly put the lid back down I might actually give it a little bit longer and just see how much more it will go let’s have a look where we’re at now now that is looking pretty good to me that has doubled in size we’ve got lots of little air bubbles as well on here I think I’m ready to bake.
It I don’t think I want to wait any longer that’s had quite a lengthy amount of time I would say we’re now up to sort of 50 minutes something like that so let’s get that on to bake it’s exactly what I’m going to use I’m not going to go steam bread I’m actually going to bake this at 180 and I’ll let you know how long it takes now this is how had.
Around 25 minutes I’m going to get it out and show you so around five minutes ago I took it out and I turned the bread over just to make sure we get a nice crust on the bottom and to make sure that that was fully cooked let’s turn the bread out we’ve got some nice Iration and look it’s kind of crusty and.
It it feels and smells like normal bread which I know sounds weird but this has done pretty good gluten-free bread is always smaller maybe I could have proved it slightly longer maybe a little bit more yeast I’m not sure but this is pretty good considering it’s taken me quite a few attempts now this doesn’t have any egg in here but we used the.
Mayonnaise to give it moisture so I’m hoping that it’s quite light but still nice and moist and not dry and we definitely don’t want a dense loaf so I’m going to leave this to cool completely before we slice it and then we’ll see what we’ve got now I’m really Keen to see what this bread is like it’s.
Crispy it’s soft can you see that how it bounces back when I squid it look at that oh my goodness this looks really delicious I’m going to cut a slice let’s see what we’ve got it’s just so oh so so look at that texture I am so pleased with that look at that now that is good light fluffy and.
Still moist gluten-free bread I’m more excited about this than I probably should be but if you are glutenfree like me and you struggle with bread or you hate the price of bread I love the war biton Loaf the tiger loaf is amazing £370 it’s crazy money let’s see what this tastes like the texture of this just looks so good and we’ve got a nice.
