Deliciously Light and Fluffy Crepes for a Guilt-Free Treat

It’s Mike and today I’m going to feed my wife blueberry crepes as always the ingredients list will be in the description we’re going to start out with two eggs 34 cup of milk this can be dairy milk or uh nut milk if you like.
Next we’re going to use a half a cup of water and then one cup of gluten-free flour or you can use one cup of regular flour I am using a 1: one gluten-free mix and what’s important about that is it has xantham gum already added if you use a almond flour or any kind of nut flour on its own you’ll have to add the xantham gum yourself.
2 tablespoon sugar or monk fruit 1 teaspoon vanilla extract 3 tablespoon melted butter then we’re going to mix all of that thoroughly and we can set that aside for now and go ahead and grab a deep pan or a pot and add four cups of.
Blueberries if you like you can use the exact same recipe with mangoes raspberries whatever fruit you want one cup brown sugar and 1/2 teaspoon of vanilla extract we are going to set that on a low heat while we prepare the cream cheese in a separate mixing bowl we are going to get eight oz of cream.
Cheese a pinch of salt and one teaspoon lemon juice make sure to keep an eye on your blueberry mixture you don’t want that to burn to the bottom so continually stir that I leave everything on a low heat I like to do a slow cook so plus it keeps things from getting away from me as that starts to heat up you’ll see it releasing a lot of juice.
It looks like a lot of blueberries and a lot of juice but trust me it’ll cook down it’ll be the perfect amount while that’s cooking it gives you time to keep working that cream cheese you want it very spreadable I transferred my crepe batter to a bowl with a spout to make it easier to pour and we can go ahead and get a hot.
Griddle pour about a pancake sized portion out give it a little shake to level it and then what you want to do is when the bub bubbles stop forming and and bursting that’s when you want to flip it it’ll take a little bit but as you can see the blueberries have uh cooked down this the liquid is evaporated go ahead and grab a crepe.
Spread that cream cheese on there it is still a little bit tough um sometimes if you hold the crepe in your hand and just kind of wipe a knife across it’s a little bit easier but get the cream cheese in there and then you want want to take a nice glob of uh blueberry filling throw that in there then you just want to roll it up.
Kind of tuck it in underneath itself and then top it off with a little bit more blueberry repeat that as many times as you want put as many Crepes on one plate as you’d like and then there you have it glutenfree unless she use regular wheat flour blueberry crepes happy to report that this is yet another six thumbs up.
