All right, it’s time for Foodie Friday and today we are going to a bakery on Northwest 23rd in Portland, which is serving up some awesome pastries, awesome loaves without a single trace of gluten. Oh yeah, it’s fun for everyone. Joining us in studio is the owner of Kerrari West Bakery Cafe Hero. Thank you.

So much for being here. Good to be here. This is Oh my gosh, this smells great. I’m like, freshly baked cinnamon rolls. What a way to start the day. So, let’s talk about this. You’re a gluten-free bakery, right? How is gluten-free baking different from regular baking? Uh gluten-free baking tend to be a little dense and a little dry. Yeah. So, um.

We’ve been tweaking our recipe for over 10 years and uh you know, we we got it to uh a soft and kind of moist texture. It must be dialed in because your lines are out the door. Uh so, you have all kinds of things in here. Obviously, the cinnamon rolls are are front and center. What What is your pride with the cinnamon rolls? Are they are they uh the.

The big staple the signature Diaz? Yeah. Yeah. So, it’s the most popular item we sell uh this uh Portland location and we use brios dough to make the cinnamon rolls and uh it just tasty. Um if you have it, you won’t notice if it’s gluten-free or not. So, that’s I mean that’s the key, right? You want to be able to like eat it and just not even.

Know that there’s any substitution stuff. I know a lot of gluten-free people like compromise. You know, a lot of people come to me say, you know, I always eat cardboard uh type of texture bread every day. So, I wish I could. Yeah. Now, you don’t have to wish. You can come try it. But I am noticing the cinnamon rolls are looking a little.

Naked this morning. What do you normally um top them with? You got some options, right? Yeah. So, we do uh cream cheese frosting and we put that on top and uh cinnamon on top of that. I’m going to I’m going to give it a try. Right. So you go from outside to inside outside in and try not to have much gap in between the lines. Oh, okay. So you.

Want like solid solid topper of cream cheese frosting. Well, luckily Wow, that’s good. I love Did you hear the cream cheese frosting? This is my favorite part of the cinnamon roll. So I will I will spare no no topper there. Wow, that’s a good job. Well done. Impressive. Do you bake and do Oh, only um only when it comes out of a box. I’m.

Not telling you otherwise. So, yeah. You know, shall I continue? Okay. Well, as Emily is doing that, uh what else is on your menu? So, we have sandwiches. Um we bake all the bread in house and we use that bread and make sandwiches and we do uh smoothies. We do uh scones, muffins. Oh, wow. Quinoa balls. Uh fresh squeeze juice. Kind of breakfast. You also have.

Like some lunch and and you know, type ideas. Yeah, that’s great. That’s great. So, it’s not just the the breakfast like focus cinnamon rolls and scones and toasts. That’s wonderful. And now you mentioned this is your Portland location. You’re originally from uh Northern California. Right. Right. Well, I I grew up in Japan. Okay. And then uh.

I uh right now I live in LA and I have two stores there. Wow. And this Portland location is the third one. Okay. So, how’s how’s business been? What’s it been like opening up in the Rose City? Great. Yeah. Um I love being here. Uh it’s a great city. I saw you like that. I love that. It’s really good. Thank you. Delish. I’ll let Travis try. Oh, it.

Would be an honor. You’re going to be able to pretty easily tell which one’s mine and which one’s Emil, please. When it’s all said and done. I don’t even know the technique. I’m going to just squeeze it like a two two outside in. Outside in. All right. Outside. I’m going to I’m going to like How much is there such thing as too much frosting on.

A cinnamon roll? No. You’re going to be eating this. You can put as much as you want. I’m going to get after it. We’re going to We’re going to deck it out. Oh man. Okay. Okay. So, if you’re looking for something just a little less sweet to start your day, you also have an awesome ricotta toast to That’s right. Yeah. So, uh we bake bio loaves and we.

Slice them thin and then um we put this home whipped ricotta cheese and then we got homemade jam. Oh my gosh. And fresh berries on top. I’ll show you how to uh Yeah, please you you show us how you like to assemble because um we have we have successfully Oh wow. I don’t know what’s happening over there. It’s going to be yours. That one will be mine.

Okay, there you go. Okay, so now come together. Yeah. So, I grabbed two two slices of which I’m like looking at this. I’m like, look at the crumb. Look at the fluff. I would never know that this is this is gluten-free. That looks fantastic. Soft and moist. We are We’re running tight on time here, so we might not have.

Uh time to finish our toast, but uh folks can come check you out. Do they need reservations? Can they just roll on by? What do you need to know? Yeah, I just walking by. Uh we actually don’t take reservations like cafe style. Um but usually there’s seating available and um wonderful. You go enjoy this new cafe on Northwest 23rd. They’re open.
