In today’s video I’m going to be making some Delicious coconut carrot cupcakes and Guys these are not just delicious but but they’re super nutritious we’re using homemade o flour instead of white flour and we’re using the leftover carrot um fiber that I got after I juice my carrots wait until you taste this guys.
Let’s get started okay so let’s check out the ingredients of course you’re going to need your carrots and for these carrots this is actually some leftover the carrot pop that was left over after juice carrots um you need two cups of carrots if you if you don’t have leftover PP what you can do is just.
Grate um about three medium carrots but just make sure you have like two cups of carrots um I’m going to be adding some coconut flakes you can use sweetened or unsweetened this is 1/3 um cup of coconut flakes we’re going to be using brown sugar baking soda gr cinnamon nutmeg baking powder salt and another star of to show is um.
Oat oat flour and what you can do is just get your regular rolled oats or your oldfashioned rolled oats and blend it of course you want to you don’t want to use the flavored roll oats you want to get the plain rolled oats and then put it through your your ninja to blend it up and then that’s how you get your old flour otherwise you can purchase o.
Flor but it’s a lot cheaper to just make your own um then for the wet ingredients we’re going to be using coconut oil um a couple large eggs and some milk and and vanilla there a full list of the ingredients will be down below so the very first thing you want to do is melt your coconut oil and add it to a bowl.
And then to that bowl you’re going to add 3/4 cup of sugar so for the coconut oil you’re using 1/3 cup coconut oil and you’re adding 3/4 cup of brown sugar if you want to use coconut sugar you can you can use whatever sugar you wish I’m using just dark brown sugar we’re going to waste this.
Up to this we’ll add two large eggs look how pretty those eggs are now we’re going to add our milk and vanilla and we’re adding about 3/4 cup milk and you can use milk of your choice I’m just using lactate if you prefer to use like a almond milk or oat milk that’s fine I’m using lacto lactate 2% milk.
Then we’re going to add about a teaspoon of vanilla and I’m just going to pour let’s say that’s a teaspoon teaspoon of vanilla and we’re going to blend this up then we’re going to add our dry ingredients guys this is a really easy recipe really quick and really delicious now let’s add our.
Oatmeal our oat flour so I’m just going to dump this right on top and we’re going to add all our um dried ingredients so this is about 1 and 1/2 teaspoon of baking powder half a teaspoon of baking soda about 1/4 teaspoon of salt and about half a teaspoon of nutmeg and about a teaspoon of cinnamon all.
Right if there are other spices that you like you can go ahead and add that so let’s incorporate this start off slow so it doesn’t make a mess don’t want to mix too much you just want to get it make sure it’s well Incorporated all right now we’re going to add the star of the show we’re going.
To add our two cups of carrots so what I do guys is after I do my juicing um I save two cups of the carrot pulp in Ziploc bags I put two cups for bag and put them in the freezer so when I’m ready to bake most of my um recipes require two cups of carrots so I can just take one bag and use it and there are the grown carrots here’s what they.
Look like and this would normally be thrown away or added to the compost pile but this is so much better to use you’re getting all that nutrient from the carrot that you would have otherwise thrown away after you Juiced all right and to that final ingredients is 13 cup of um shredded um coconuts at.
This point if you want to add some say you want to add some walnuts you can if you want to add some peons you can with a coconut just make sure it’s not lumpy yeah so this is nice shredded coconut if you want to use sweetened coconut you can or if you’re watching your sugar use unsweetened I’m using sweetened all right I’m not going to.
Turn the mixer on at this point I’m just going to use my spatula to fold fold in the carrots and a coconut want to stir it until it’s well Incorporated make sure that there no clumps of um coconut or carrot so this is looking pretty good now at this point you can if you have like the smaller um muffin pan you can this is enough for 12.
Small muffins um I only have a a six-pack of the large the larger muffins these are like a giant muffins you buy in the in the um restaurants so I’m going to make six muffins um if you have 12 muffins put it in the 400° oven for about 18 to 20 minutes test um these are larger muffins so I’m going to put them in for 20 minutes and then I’ll test and.
See how it is all right so now it’s time to get these muffins in the oven great and the whole house smells so good let them sit for like at least 10 15 minutes to cool off and then we’re going to try one together so my brother is here visiting and he’s going to try the carrot muffins.
Um for the first time so n what I did with these muffins is instead of buying carrots and grates are in it the carrot juice I I just use the leftover PP so what would normally be thrown away or added to the compost P I’m reusing it I’m using oat flour so I bought the oats Blended up the oats to make it a little bit you know cheaper and easier and then.
Added some coconut flak my m is baking into water can I jump in yes yes yes go ahead go ahead all right nice it’s warm you get a nice piece here mhm M wow very nice very nice nice you know and it’s healthy it’s healthy you can see the the Coconuts in there y coconut flakes mhm C the car everything is good nice nice combination good job all right.
