Oh, this looks pretty! Mhm Hey! The beautiful season of change is here! All my life I’ve struggled to accept change, as i prefer the familiar and the known. So finding out that I am chronicallyill was no small feat for me and I am still deep in the process.
Of accepting my disabilities. There is still so much anger I carry about it and I often feel restricted and cursed, envious of able-bodied people. But i am willing to releasethat anger and to transform it into appreciation for thegood days, the happy days, the days where my body doesn’t feel too heavy to hold its own weight, where I can walk or even run without pain,.
The days i spend with people I can unmask with, like my family and not think about my performance and what to say next or how. The days that I forget a bit that I am disabled. Lately I’ve been thinking about how I care less about superficialities as my struggles are aboutmuch more essential things like my health.
Still I’m very often upset about my circumstances. But i realized that being mad at something you can’t change will only make you feel worse. So again, I want to practice radical acceptance and build my life around my needs and boundaries to ensure I can live as happy and healthy as it is possible for me. For most of the year,.
I’ve beeneating a salad for lunch every day. I went gluten-free after a bowel cleanse last year and also my human design chart mentioned that my body digests room-temperature food best. But with the days getting colder I decided to return to warm meals and just wait for them to cool down a bit before enjoying them. Adjusting to a new meal plan was a bit tricky.
And I already miss the simplicity of preparing a salad and the shorter amount of time it takes, especially on days where i’m ina lot of pain while standing. But a part of me was also excited to try new recipes for the cold season. I prefer meals with a lot of different flavors and a variety of textures and consistencies. So i always add a meat substitute.
And top my dishes with some nuts or seeds. For this second meal iwanted to take it up a notch by making it look cute and aesthetic. I used similar vegetables as for the veggie pan I made a few days ago and added potatoes and one of the mini pumpkins that we got from my mom’s uncle. I believe that adding creativity to basic things.
Can make them way more fun ★! As I had already pre-cooked the sweet potato, it was easy to cut out the stars. And I love how the pumpkin slices look like crescent moons and fit so perfectly with the sweet potato stars. For more flavor and textures I added chickpeas, seeds and seasoned everything.
I also prepared some veganchunks and a cucumber salad. This tasted so good (◍•ᴗ•◍) And I hold so much gratitude for this blessing! Lately I’ve been craving a lot of snacks so i decided to make somegluten-free crispies from scratch. I altered a vegan pancake recipe, using oat bran instead of flour.
And added chia seeds, psyllium husks, mixed everything and then added some vegan coconut yogurt, 2 splashes of coconut milk and then lastly a super ripe banana. At the end I sprinkled on somecinnamon and stirred in some pecans. After spreading it evenly on the baking tray.
I left it in the oven for 25 mins. If you want them to be more soft, take them out of the oven just before the corners start to bronze, after about 15 mins. These crispies turned out super crispy! I cut them into squares and then I glazed them with some honey.
That we gotfrom a friend of my mom’s. I know honey isn’t vegan butsince it wasn’t industrial honey i made an exception. You can use maple or agave syrup instead or just eat them as they are. If you try this recipe, let me know how it turned out and if you liked it!.
