welcome back once again all my lowai friends and for those of you who are here for the first time welcome today I have another very easy keto recipe for you you a lot of you have probably seen or even tried the viral cottage cheese flatbread recipe that’s been floating around out there and maybe you’ve liked.
It maybe you haven’t I personally have tried it and haven’t really had a whole lot of Success With It the first time I made it it stuck to my paper and the second time I made it I got the edges too Brown and then when I made it again it just wasn’t the taste and texture that I really wanted so I was scrolling through social media few weeks back and.
I saw a recipe pop up for many cottage cheese flatbreads and I thought hey you know maybe this recipe will be better and maybe this will please my palette so today that is what we are going to do I am going to try to make mini cottage cheese flatbreads and see if I actually like them so if you want a printable version of this recipe you can check out.

There also and while you do all that let’s get cooking preheat your oven to 350° lightly grease 6 4 in diameter silicone Burger molds and place the molds onto a baking sheet so they’re more sturdy if you don’t have any silicone Burger molds then I’ll leave a.

Sure any cottage cheese will work though add two large eggs and if you want to you can add about a teaspoon or so of any dry seasonings or dry spices I’m using a half teaspoon of dry Italian seasoning just to give my bread a little bit of flavor blend everything together for about 1 minute or so or until the batter is completely smooth and slightly.
Foamy now one big tip is I strongly suggest you weigh your cottage cheese if the cottage cheese and egg ratio is not right then this will not work once your batter is smooth and lightly foamy then divide the batter evenly between your prepared silicone molds it’s roughly around a3d cup of the batter in each one of the molds give or.
Take a bit place the flatbreads into your preheated oven bake at 350° for 25 minutes or until the flatbreads are golden and puffy once the flatbreads are done baking remove them from the oven and allow them to sit in the molds for about 5 minutes while while they’re sitting the flatbreads will deflate you want.
That that’s a good thing after about 5 minutes and the flatbreads have deflated turn the flat breads over and place them back into the molds they’re still going to be a little bit moist then place the flat breads back into your oven at 350° and cook for another 5 minutes or until the breads are no longer moist after about 5 minutes and the bread’s no.
Longer moist remove it from the oven then allow it to cool in the mold for another 5 minutes so you can make sure it’s nice and firm after 5 minutes and the breads are firm transfer them to a wire rack you can use these warm or you can do what I did and allow them to cool to room temperature you can use these for sandwiches or basically any recipe.
That requires flatbread all right here we are with my yummy flatbread there it is see it’s nice and soft and flexible you can fold it yeah nice and soft it feels almost like an egg Patty which isn’t bad you know I’m not opposed to that texture but I I have a feeling it probably is going to have an egg.
Taste which again in a sandwich I don’t mind that doesn’t usually bother me so it looks good it smells good normally if you’re wanting a whole sandwich you’d stack two of these on top I just cut one in half and made a half sandwich here but you can see that if I get this hold it here you can see that it holds the filling good it’s not falling apart it’s.
Nice and flexible which is really cool because you can fold it in half make like a taco or something like that out of it if you didn’t want an actual sandwich but yeah so I just have ham cheese and avocado on this you of course can put whatever you want on your sandwich or use your flatbread in any recipe doesn’t have to be a sandwich but.
We want to see what it tastes like so let’s see here mhm yeah yeah that’s good that is good I like that I like that as a bread substitute it does have a little bit of an egg taste but really once you have your fillings and stuff in it you don’t even really taste I mean I don’t really.
Taste it overpowering or anything like that it mixes really well with this ham and cheese and avocado it kind of makes it have a feel of almost like a breakfast sandwich or if you’re like me and you have breakfast for dinner it’d be a dinner sandwich but yeah I would definitely say that this version turned out way better than my other ones my.
Other ones just like I said they just didn’t fit my palette but this fits my palette nicely it’s very pleasing to my taste buds and the texture is nice the texture doesn’t weird me out or anything so I would definitely say that this version is a thumbs up for me it’s definite yes very easy very tasty very versatile yes yes you can eat these.
Immediately if you do have any leftovers store them in an airtight container in your refrigerator for up to 2 days or store them in a freezer safe airtight container in your freezer for up to 1 month if you do freeze these make sure that you put some pieces of parchment paper in between each one of the flatbreads so they won’t stick together.
