Hi welcome to Summer P my name’s Sue and I’d like to share a waffle recipe today it’s waffle day very soon here in Sweden and I thought could I swap my pancake recipe that I do in baket flour into a waffle recipe so I’m going to share this recipe today with you and you can come with me and see if it works so in the bowl here I’m using a gluten-free oat.

Milk I’ve gone back to drinking oat milk every now and then and I’ve got 1 and 1/2 cups or 2 90 G and I’m going to put some apple cider vinegar just two teaspoons as a first step so I want to sour that and make it like thick so I’m just going to put that aside I’ve got my waffle maker here and I’m going to turn that on to preheat.

That I bought that last year because it was Waffle day here and I thought I really want waffles and I didn’t have one so I rushed out and bought one so now this year I’m ready for Waffle day because I’ve got my waffle maker grab another bowl and we’re going to pop the flour in here just move my scales out of the.

Way so I’ve measured out 150 g or one cup of buckwheat flour and I’ve got an eighth of a teaspoon of salt that’s optional you can have more or less and we need to add in some raising agents so I’ve got half a teaspoon of baking powder and this is just the way I do it.

You can have add a little bit more or a little bit less um half teaspoon of Bard soda if you don’t have baking soda you can add one teaspoon of baking powder I like adding cinnamon to all my pancakes so one teaspoon of cinnamon I’ll just grab my teaspoon out just going to whisk those.

Together so I want to add in some vanilla so I’m going to add in just half a teaspoon of vanilla you can add in a little bit more this is a really strong vanilla it’s a real vanilla extract and I’ve got um some some coconut oil that I’ve what I was trying to say was I’ve got coconut oil that I’ve melted in my.

Microwave I’m adding one tablespoon to the liquid and you can either add in a little bit of sweeten and maple syrup or what I like recently is date syrup so I’m going to add in just one tablespoon you can leave this out if you only add sweetness to the top but it just kind of helps make the it balances the nuttiness.

Of the bucke flour cuz some people find the bucke flour a little bit bit too um distinct in flavor so add all those wet ingredients to the dry and it’s always best to let the batter SE for at least 10 5 to 10 minutes before you pop it into the waffle maker so I’m just going to put a timer on hey Siri set a time for 10.

Minutes and don’t be too worried about if you’ve got any lumps in there just get any big ones out but there might be a few little ones left in there like with a pancake the first one’s sometimes not always perfect I should have been timing this but needs to be a little bit crispier I probably could have used more.

Butter I’m just going to let it sit here on a wire rack a little tip I just read that that helps them be crispier okay let’s scoop a second one in I had my microwave buzzing in the background cuz I was defrosting some raspberries to go on top I’ll be a bit more generous with my batter this time and this is a large.

Waffle maker so we we often like grab that and share it or you can just eat it all if you like so they’re my frozen raspberries that I’ve just defrosted slightly I’ll pop those on top so two are slightly smaller but look at that put the nice ones on.

Going to go in and taste them and the other ones we can reheat these tomorrow either in the oven in the microwave um or you can freeze them for a later date and bring them out and reheat them you can even have them cold and I don’t have any yogurt in the house but if you wanted to put yogurt on top you could top them with yogurt or ice cream some.

People like Ice Cream they have gone a bit cold now cuz I’ve been photographing but the texture is really good my waffle maker makes the waffles quite thin you might have have a waffle maker that creates a thicker waffle I think there’s a difference between Norwegian waffles and Belgian.
