Feeding the Fam: Budget-Friendly Gluten-Free, Dairy-Free Costco Meal Inspiration!
So I shared a Costco haul not long ago and I wanted to share with you some of the things that I pick up to make healthy eating simple especially on those nights that I don’t feel like cooking so one of the things that I’m going to share with you today you don’t even have to cook it would be perfect to take for lunch but I also have two other.
Ideas that come together in 30 minutes or less and they are so so easy and they’re delicious and good for you everything’s Dairy and glutenfree stick around and see what I made so I’ve shared this a ton of times but I love to get this giant bag of the wild caught Sakai salmon from Costco I always grab a big bag of carrots which are just.
A few dollars and these are just some of the things that I find to be great Staples from Costco this is the Kevin’s brand and what I love about it is it’s top sirloin but it is 100% grass-fed which I rarely see in a package like this this is Paleo so it’s going to be naturally gluten and dairy free um and these are the ingredients always.
Encourage people read the ingredients it is a packaged item so it is not perfect but when we’re talking about this or takeout this is the way to go I picked up a big bag of organic quinoa I always get this it lasts me about a month and it’s just about 10 bucks and you’re getting 4 and2 lbs of it this is a great alternative if you can’t have rice and.
Things like that and it’s higher in protein I always pick up their organic baby Bella mushroom and I’m going to use half of these mushrooms for this pack and this is way cheaper than going to the grocery store and getting that small pack but that’s a good option too I love this this little Chopper cuz it just makes things easier I also shredded well.
I kind of peeled some carrots and I throw that in there and sauté some just onions and um some mushrooms and some carrots I put those in last because I really really want to have a little bit of a crunch I love texture in my food and it’s also great for your gut microbiome especially when you’re giving them plant fibers so this is what it.
Looks like I’m just sautéing this this literally just I chopped everything up and I’m going to add in these packs that it comes in they come in these packs I’m using both packs this entire portion from Costco was $77.99 and this is going to feed a family of three we had leftovers so this could easily feed a family of four so I’m just sautéing that.
You’re just going to follow the package directions you can also pick Kevin’s up as Sprout at Sprouts I’ve also seen it at different it’s becoming more and more W widely available so I’m just going to sauté this meat and you’re really just breaking it up is all that you’re doing and then it has these packs of sauces this is what the vegetables look like I.
Just put that to the side I put it in a stainless steel bowl and that way people can add if they want it or if they don’t they can just kind of leave it out but I like to add a vegetable just to round this meal out along with that quinoa as well so this is just one packet of the sauce I’m going to add in the other pack Kevin also sells the sauce packets by.
Themselves and I’ve shared that here before I’ll share some links in the description that you can buy these on Amazon I also love the coconut um chicken that they have it’s so so good so I am just sautéing that literally I’m not cooking I’m heating things up um we’ll call it cooking I just chopped up some scallions because I just like that.

Thing I’m going to do is I’m going to take these grilled chicken patties they’re fully cooked um these are natural they’re not organic but they are gluten-free and they are raised without antibiotics and hormones here are the ingredients I always tell you look at the ingredients um it’s raised without antibiotics but it does have sugar but.
The reason why I’m not too concerned is because it has 18 g of protein for just one chicken patty this is already cooked I don’t have to do anything but Heat this up so I have a bed of butter lettuce use whatever you you like I have some more carrots which is why I buy that jumbo bag every couple of weeks and I just shredded some carrots or you can.
Shave some carrots or peel some carrots however you like to have that or whatever vegetables you like and I literally just heated this up I’m going to add this to my salad you could also pair this with quinoa in a vegetable or baked potato in a vegetable I do all of the above I’m going to add in some organic hemp Parts cuz this is just a.
Great way to get in some minerals extra protein some extra virgin olive oil I’m going to add some apple cider vinegar to this and I’m going to add just some Italian seasoning that is how simple this was to make I nuked that Patty in the microwave for 2 minutes this is also great with avocado and a baked potato on the side if you’re really hungry just.
Wanted to show kind of as a reference the size the color um and the quality of the wild C Alaska Sakai salmon this one is highest in Omega-3s compared to other um types of salmon you may the salmon which is going to be a lot cheaper it’s actually a lot lower in Omega-3s than this um wild cult Alaskan salmon so this is these are pricey yes.
But I mean this is just I mean it’s just amazing for you so that’s half of what’s in this bag but I wanted to give you just kind of an idea of how much was in this pack I also picked up some aspar arus so I literally just took that washed it trimmed the ends and I just put some.
Coconut oil some ginger and some garlic and some coconut aminos which is a soyf free sauce I put that on top of this on a parchment lined baking sheet I pop it in the oven with um with the vegetables and at 400° for about 25 to 30 minutes and dinner is done it is that simple then I just like to pair mine with something like quinoa or baked potato I.
