Hello everyone and welcome to Journey with the Kellers my name is Amanda Keller and today we are back in the Keller kitchen so today we are going to be making something from the Parks and Recreation cookbook today’s recipe is classic waffles but then there is also a vegan gluten-free classic waffle recipe um that you can do for this as well so I.

Will kind of tell you guys the difference in between the two recipes as we go along okay so the first thing that you are going to need for the classic waffles is two egg whites beaten up until they’re into stiff peaks so you can either use an electric hand mixer or a stand mixer and just beat them until you get stiff peaks and then you’re also.

Going to need two egg yolks that have been beaten by hand so just kind of beat up till they’re nice and liquidy okay now if you are going to be doing the vegan and gluten-free waffles you do not need either one of those okay and then the other thing that you are going to need is 2 tablespoons of unsalted melted butter um and again if you’re going to.

Be using um the vegan and gluten-free you will not need the butter as well okay all right so the first thing that after you get all of that ready so the first thing that you are going to do is in a large bowl you are going to add in some flour which you need two cups of allpurpose flour now I am making more than one um.

Recipe I’m making a double batch of this so I will be putting more in than what it says just so you’re aware um and if you’re going to be making the vegan and glutenfree you will be using flour but you will be using glutenfree flour so you need two cups of gluten-free flour for that okay there’s number two or four for.

Me okay so that’s done the next thing you are going to need is 2 tablespoon of granulated sugar if you’re doing the vegan and gluten-free you will also need two tablespoons of granulated sugar okay so one two and then my extras for my double badge okay there we go all right then you’re also going to.

Need your baking powder so you will need one tablespoon of baking powder for both recipes whether you’re just doing the classic or the vegan and gluten-free okay baking powder one tablespoon and then two tablespoons for me cuz I’m making a double down okay all right and then the last thing that you.

Are going oh two more things you’re going to add is a half a teaspoon of cinnamon that’s for both recipes pce that’s a four here we go half well actually I could have done a hole for mine but that’s okay so a half a teaspoon of cinnamon okay and then you’re also going to need.

A four of a teaspoon of salt and that’s for both recipes as well okay so a fourth and forth again okay so we are done with this so you’re just going to whisk this all together okay and then you’re going to make a nice little well in the middle of.

This for your liquids and I do apologize you guys I got the measuring cup out for my milk but didn’t get my milk so let me get the milk here all right so now what you’re going to do is you’re going to be pouring all your liquids.

Into this well so what you’re going to do for the classic is you’re going to need 1 and 34 of a cup of whole milk which I wasn’t sure if there was enough in here oh there is okay you’re going to dump that in if you’re doing the vegan and glutenfree you’re going to do one and 34 a cup of soy milk okay all right then you’re going to go ahead and add in.

Your two large egg yolks okay if you’re doing the vegan and gluten-free you would add in two large ripe bananas that you mash okay so there is that there okay then you’re also going to add in your vanilla which is one teaspoon of vanilla extract and I just thought too I did not add enough milk I’m so.

Sorry I forgot I was making a double batch there for a second see I almost screwed it up at least I had the eggs and stuff already doubled so I don’t have to worry about that so let me add another 1 and 34 a cup of milk here there we go all right there we go perfect okay okay so now for the uh vanilla you need.

One teaspoon of vanilla extract that’s for either recipe so one two for me okay and then let’s see what else oh and then you’re going to put in your melted butter okay so this is 2 tablespoons of melted unsalted butter um if you’re making the vegan and.

Glutenfree you’re going to do 2 tablespoons of coconut oil melted okay so let’s get this all nice and mixed up and then after we get this mixed up then we’re going to fold in our eggs okay so far so good and you’re just stirring this right now until it’s just combined okay let me grab a spatula.

Here so that we can fold in our egg whites so we’re going to put these in there and then just fold them in let me get this out of the way okay so fold it in your egg whites just means you’re going to be kind of bringing stuff up down going down the side of the wall coming back up and pushing it down into the.

Middle and you’re just going to keep doing that egg whites do take a little bit to get mixed in they’ll and but you want to be kind of gentle with them so that you don’t deflate them their part their thing is to make the batter fluffier more voluminous which will make your waffles fluffier and more voluminous sounds like.

A hair product now instead of a instead of a paint of a waffle okay all right so get those all folded in now once you got these all folded in you are going to pour this in put this into a waffle maker of course so you need to be preheating your waffle maker and depending on what size your waffle maker is will depend on how much batter.

You will need to put into it um I have a smaller one and mine usually takes slightly more than a four of a cup but not quite a half a cup at half a cup it’ll start overflowing so if you’ve used your waffle maker several times before you probably know about how much to use if you’re new to a waffle maker like you just bought one and you wanted.

To try a recipe in it um I would start with like a four of a cup and try cooking that and see how that does and then add just a little bit at a time now if it’s a really large waffle maker of course I would start within a half a cup um so mine is small okay but you’re going to put it in there and you’re going to bake it until it’s crispy and.

Golden brown and that usually can be done by if you watch the waffle maker when you first put the waffles in it’ll start cooking and then a whole bunch of steam will come out and then after that steam starts to settle down is usually about the time you need to kind of check on the waffle and see how it is you can always check on the waffle and then.

Reclose it if it’s not done all the way okay so same for the gluten-free you’re going to do the gluten and V the vegan gluten-free you’re going to do them the same way doesn’t really matter a waffle is a waffle okay all right you guys so I am going to go ahead and get these cooking on the waffle maker and I will be back to show you guys how they turned.

Out and we will try them and see how they taste so I’ll be back in just a minute okay you guys so our first couple of waffles are done and they are actually turning out Fant fantastic those look really good so let’s go ahead and give one of these a try and see how they taste pull a little piece off here all.

Right no we’re not putting anything on it you can put anything on these you want I just like to try them without anything to kind of get the flavor for the waffle okay they are really good they’re nice and moist actually even though they look really crispy and they are crispy on the outside but they’re nice and.

Moist on the inside it’s really delicious they’re just a little bit sweet but not so sweet that you wouldn’t want to put anything on them they’re kind of almost like a a little bit buttery sweet I guess you could say so these turned out excellent I actually really like these all right you guys so that’s it for this video I hope you.
