Hi my name is Susan and welcome to my kitchen uh today’s budget friendly meal is going to be a cabbage and potato soup uh soup is budget friendly cuz first of all it’s simple ingredients this pot is going to cost about $4 to make and it’ll serve me uh between six and eight times depending on how hungry I am that day um so I’m going to be eating soups for my.
Lunches uh soup uh also lets you use up vegetables that you might otherwise be throwing away this I’m using a half a cabbage I have left over from a previous dinner um soup is also very healthy for you if you’re using a homemade bone broth then it has healing qualities as well if you have uh gut issues the collagen in the in the bone broth is.
Very good for your gut um I am not using homemade bone broth today I’m using store bu uh store bu chicken broth at 32 oz carton um I thought I had bone broth in my freezer but when I went and looked I I had used it all up so that’s out um soup is very versatile and it um you can make soup out of anything and it’s so simple to make you throw everything in a.
Pot and Let It Go for 20 minutes maybe a little longer depending on what you’re using so that so today’s recipe is for is going to be for uh cabbage and potato soup okay so I’m going to start with a half a head of cabbage uh it’s left over from another recipe I’m going to estimate that this half cost about $125 I have I’m going to say about a.
Half a pound of potatoes it’s three potatoes um so that’s going to be uh 25 cents cuz I’ve been paying 54 cents uh a pound for potatoes I have one stick of salted butter um butter I pay $4 a pound so one stick is a dollar so two tablespoons is going to be a 25 I have have a carton of uh chicken.
Broth a generic brand so about $150 I have a third of a cup of heavy cream that I need to use up so I’m going to throw that in there and that’s going to be about 60 cents I have one Purple Onion um this would be better with a white onion I prefer white onions U my husband bought purple onions so it’s been turning everything weird colors so.
My soup’s probably going to be a weird color too uh but the onion I’m going to estimate about 50s and then I have some salt some pepper and some curry powder all right let’s get started okay so here’s the onions I just did a rough chop and I have them in a in the pot.
With melted butter and I’m going to add in my potatoes uh I have the heat on medium high and and I’m just going to let this sauté for a minute um just to soften it up just just a little bit just to it get some flavor in there I have 1/4 teaspoon of salt and.
About a e/ of a teaspoon I’m sorry 1/4 teaspoon of pepper and about an eighth of a teaspoon of salt um salt I can always add more later so I’m not too worried about that um and I do like pepper in just about everything so I’m just going to let that.
Go for a few moments I’m going to turn that up to high it’s funny I eat soup a lot um uh almost every day um but a couple of years ago you couldn’t pay me to eat soup I hated soup um you know I just I couldn’t get behind it uh but it turns out it’s not that I hate soup I hate canned soup once I learned how to make.
Soup that I like well that just changed everything that changed because uh I was looking for recipes to use up zucchini and I came across a zucchini recipe which is similar to this um you get the curry powder and the heavy cream and since then I I’ve just been eating a lot of.
Soup okay so that’s starting to sizzle now I’m going to add in my cabbage now the Cabbage I chopped up the stem I I used everything uh here’s a piece of the stem most people throw that out but that’s just more cabbage for my soup um I really try to avoid any food waste in the house we use everything um any scraps that I have are usually put.
Into my compost for my garden let that go for another minute or two okay now I’m just going to add in my chicken breast I forgot I even had this I found it in my in the back of my pantry so that was lifesaver so now I’m going to turn this down to.
Medium I’m going to put my lid on it sorry I’ve got my curry powder okay I’m just going to stir that in get that into the liquid now I’m going to put the lid on it and I’m going to let this go for about 20 minutes until everything starts to get tender I’m going to Stir It occasionally.
Maybe every 2 to 3 minutes and we’ll be back when everything’s tender okay so the soup’s been simmering for about I had it on high and then once it’s brought it to boil I turned it down to a low simmer I let it go for about 15 minutes now I’m just going to take my stick blender carefully I’m going to blend this up you.
Can use a regular blender um I have a regular blender but it leaks so I never use it don’t throw it out because I don’t have something to replace it with um really I’m not sure why I keep it and I’m just going to blend this up and I’m having a little bit of trouble.
Doing it with one hand and not holding the pot but d okay this is a little bit thick for me so I’m just going to add a little bit of water give me one.
Second I guess you can tell I don’t really follow recipes I just kind go with what’s happening make it up as I go all right and now I’m going to add the cream going to give that a good stir okay so I’m going to boil this up and then we’ll go through a price.
Breakdown okay so here is the finished product uh there’s a bowl of soup I’m going to guess that I have about seven more bowls left in here so I’m guessing it’s it’s about eight servings really depends on the size of the bowl that you have but based on uh my estimates uh let’s see the chicken broth was $150 the half a.
Cabbage about a125 one half pound of potatoes was 25 um onions 50 cents one onion two tablespoons of butter 25 cents and 13 of a cup of heavy cream uh 50 UH 60 cents so that worked out to about 405 for the pot uh eight bowls into 405 you’re looking at0 50 cents 51 cents per Bowl um it’s.
Thick you can see that it’s very thick it’s creamy it’s it has the sweetness from the cabbage and the uh and the heavy cream and then it has uh the saltiness from from the curry um it’s a Well Balan soup uh if you’re my husband you’re going to put a little dollop of uh yogurt on top he likes to do that I I’m not big fan of yogurt in my soup but.
