My perfect gluten-free chocolate chip cookies recipe uses four simple tricks everyone can manage for Bakery style cookies with no grittiness hi I’m Melissa Erdelac from the gluten-free website Mamagourmand today we are going to make not just gluten-free chocolate chip cookies but phenomenal gluten-free chocolate chip cookies a common mistake that people make when they transition to gluten-free baking is they will just take a traditional recipe and they’ll swap out gluten-free all purposefully flour you’ll get some cookies but they will not be good cookies they will be flat and greasy or they could be really gritty and chewy today I’m going to teach you four simple tricks they are not hard tricks they are very simple to make really soft incredible gluten-free cookies that I promise no one will actually know that they.
Are gluten-free when you bite into them so let’s make our gluten-free life a success and not a hot mess trick one use melted butter and in fact I just use warm melted butter here the melted butter saturates and coats the gluten-free starches more to kind of get rid of that grittiness what will happen though is that you’ll have a soft dough when it’s done but that’s fine because the other trick is we are going to chill the dough after after the chilling the dough gives extra time to hydrate the flour then to the melted butter we are just going to add our packed brown sugar if I could get it in there 1/3 of a cup of granulated sugar one egg and then we’re going to add a 1 full tablespoon of vanilla extract so then we are just going to mix all of that.
Together and then we’re ready to add our dry ingredients which brings me to the second trick using a good gluten-free flour I use cup for cup gluten-free flour if you find that your baked goods are gritty I would say try a different gluten-free flour I find cup for cup makes a smoother texture in baked goods if you can’t use cup for cup then I also recommend you can take take out a couple tablespoons of whatever gluten-free flour you use and replace it with a couple tablespoons of corn starch so that gives it a lighter texture so we will add a cup and 3/4 of gluten-free flour and then a bonus 2 tablespoon of gluten-free flour and I do this because if your cookies have a tendency to turn out flat adding a little bit of extra flour just keeps that structure one teaspoon of baking soda and then a half a teaspoon of.
Salt so we have our dough and you can see it is a little bit softer than traditional cookie dough which is fine because we are going to chill the dough chilling the dough a little bit also helps get rid of that grittiness because it gives time for the glutenfree starches to soak up with the butter and to saturate everything another trick I like to do for Bakery style chocolate chip cookies is adding majority of it semisweet chips but then I use a four of a cup of mini chocolate chips too that one didn’t want to go in there that way the chocolate just gets dispersed evenly throughout the chocolate chip cookie so you always are biting into gooey chocolate all right we have chocolate overload in there which is exactly how I want it so at this point we are going to refrigerate the dough for a half hour to give it that time to rest and then we’ll pop.
Them into the oven cookie Scoops love these things it just makes it so much easier and then you know your cookies are the same size so for this recipe I’m using a medium cookie scoop I’m going to take a heaping portion of it and then here’s my trick here’s another bonus trick we shape them into like tall cylinders and when they bake they kind of melt down so you get those waves in the cookies so they’re not flat they will have nice rides to them now this dough is a little bit more more salad than your dough will be I refrigerated this one for longer than the 30 minutes you can refrigerate this dough up to 24 hours before baking it the other option you have is you can go ahead and shape it into cookies and freeze them unbaked and then when you’re ready to have some fresh chocolate chip cookies you would just bake them straight from Frozen it’s a little bit weird.
But you got to trust it’s going to look beautiful after they’re baked last trick bake at a 325 oven I tested the recipe at 350 and 325 325 had a less sticky texture to it when you bake them at 350 they will turn out good but they just kind of have this um unpleasant chewiness to it so 325 is the way to go with cookies you can use this with any gluten-free cookie recipe oh my gosh I wish you could smell the kitchen it smells like heaven they look amazing look at these things they’re melty they have little crevices in there that’s gooey chocolate they are the perfect texture and I I can’t resist I have to try one oh my God that’s a good cookie you can find the full printable recipe on the recipe link below and I will see you in the next video.
