Hi there everyone welcome back to my channel Valerie here as you all know I am a huge gluten-free person so if you’re new to my channel welcome happy you’re here and today I’m doing something a little bit different and I am prepping and showing you one of my favorite glutenfree sourdough recipes that I love to make because they’re.
Delicious they’re easy and you can store them in the freezer and save them for future meals Etc so I am going to show you my glutenfree sourdough baguette so enjoy this recipe is so simple all you need is your gluten-free sourdough starter and so something that I teach everybody is how to make the easiest.
Gluten-free sourdough bread take all the guess workk out of it none of these crazy fancy flowers and so this is one of the recipes that is in my ebook and I love it it’s super easy so all you need is your freshly made fed gluten-free sourdough starter I teach everyone in my sourdough guide my glutenfree sourdough guide how to make this beauty I’ve had.
My same starter for two years her name is Bertha and so I have I’m prepping four loaves today so I have two separate so my le is done so my starter has been grown here it is fed and it is Happy um one of the key ingredients with gluten-free baking in general is pelium husk cannot recommend anon’s enough so this is whole celium husk organic cane.
Sugar is another ingredient you’ll need apple cider vinegar olive oil your gluten-free measure for measure flour I use the King Arthur flour with all of my gluten-free sourdough recipes water you’ll need water obviously and salt so I already have made my slurry here as you can see it this is the outsider vinegar olive oil psyllium husk.
Sugar and water and so that is all in here and I am going to mix in this complete starter the whole thing um so my le had for the bagets is a specific um ratio of flour starter and um water and so I prep that for my uh French baguettes anytime I make them and so every recipe calls for a different amount of starter um and the French.
Baguette is no different I just make a specific leavon and I just put the whole thing in there and now my hands are full of starter but that’s fine so I’m going to mix this up get that all mixed up with the slurry and then I’m going to mix in my flour and.
Salt so there’s about 300 G of flour here and 12 G of salt my baby’s outside all right so I’m going to get this going mix it up so while that is mixing so with gluten-free sourdough a lot of people are like well you know it just doesn’t rise the same or doesn’t have the same.
Texture it’s gluten-free guys of course it’s not going to have the same texture I don’t think anything gluten-free has the same texture as things with gluten so that’s just automatic I think my gluten-free sourdough bread is very close um it has a wonderful tanginess the smell the taste of it is.
Just like sourdough it tastes so good like I was telling my husband earlier how much I love the smell of sourdough it smells I just love the smell of sourdough so my Low’s my dough here is almost done we have our dough you see it’s kind of sticky right and what I’m going to do is I’m I’m going to actually weigh my.
Dough I have a small kitchen so hello I’m going to weigh my dough to two equal parts just going to get this out of the way cuz I’m going to have to so the dough itself weighs 950 G so we’re going to cut that in half.
there we go so now I have about equal I’m going to put some flour down here and I’m going to press out my loaves here’s my going to flatten this out into kind of a rectangle my hands get a little sticky that’s all right try to make it as even as.
Possible and then that’s usually about a good size so then I’m going to just roll this beauty up now you have the first loaf okay and my other bread here this beauty there we go a little bit of a.
Rectangle it’s about 6 by 12 each loaf all right and there we have it number two okay so now my baguettes so I have another set I’m making two more loaves but now I will cover these loaves for about 3 hours and I will stick them in my oven with the light on so it stays.
Nice and warm and after 3 Hours come back and we’ll see how they look and has been 3 hours I have my oven preheated and I am going to score these lovely loaves they have proofed for 3 hours and they are looking wonderful so I am going to just give these a few little scores.
Across the top French baguettes will bake for 30 minutes uncovered and the key part about this uh step is the steam that’s created the steam in the oven um I will put these ice cubes in a cast iron skillet that I have in the bottom of the oven and that helps create a bunch of steam which helps form the crust of the bread.
Which is really really key so this is the first step they’ll bake for 30 minutes with the steam then I will take the pan out and then I will cover the loaves with um tin foil for another 30 minutes and then they will be all done so now for baking and I will show you what happens next finally done baking today was very.
Eventful look at those aren’t those beautiful glutenfree s sourdough French bagett they smell so good I’ll let them completely cool take these off and then I will store them um and put them in my deep freezer so they’re ready to go um because I’m prepping some stuff ahead of time for my daughter’s first birthday.
