Hello welcome back to my kitchen today we’re making padc you which I’m I’m like 80% sure I’m pronouncing that wrong because when I Googled how to pronounce it all the sites that I were finding were it felt like just a generic robot voice phonetically saying it back to me which maybe it is pronounced phonetically but it it just made me feel.
Like it was clickbait stuff so if I’m saying it wrong I’m sorry let me know type it out thetically I’m pronounce it this recipe actually kind of I I discovered it from a friend was talking about it I can’t remember if they said it was their favorite meal or if it was specifically like their favorite Thai meal but I.
Googled it obviously putting gluten-free in front of it and found this recipe and thought to myself I’m like that doesn’t seem too difficult and then I was also looking for a video to do and I was like you know what why don’t we merge the ideas do it all in one and so I get to try something new uh make a video out of it and we.
Will see if it is a success and overall a pretty easy recipe as well Fair bit of prep work that you need to do and it does go a little quick on the stove top so you need to be on your game when that’s happening but not terribly complex we’ll say so it’s not a easy recipe it’s probably more of that like easy intermediate kind of zone so.
I’m pretty confident that most people could handle this if they put their mind to it I say that fully knowing that I’m pretty sure I messed up one of the sauces that you’re supposed to make because it’s cooking sugar and I I kind of made hard candy keep an eye on it don’t let it go too far I don’t think it’s I don’t think it negatively.
Affected anything cuz once the heat was reapplied to it it kind of melted back down I’m just assuming that that was not the intended way for things to go but you will see all of that later and I want to make this this as short and sweet as possible because I want to get to eating cuz as always it’s a little bit late and this smells really good and.
I just want to eat all of it so why don’t we run through the ingredients and get into cooking rice noodles chicken soy sauce broccoli garlic eggs vegetable oil oyster sauce fish sauce sugar pepper and brown sugar so first things first we’re going to prepare the noodles and to do that we’re going to take a large bowl put the noodles in there cover it.
With warm water and then let that soak for about 30 to 40 minutes for a lack of a better term the goal we’re going for is alente which is just like when bitten it still has like a little bit of firmness in there so that’s the goal uh and then obviously drain from water once we’re finish and then just set that.
Aside so obviously you know Chrono electrical order I can’t can’t really show you how you should do it but uh just take my word for it while the noodles are soaking so in that 30 to 40 minutes we’re going to do a number of uh prep steps as well as making some sauces and first up is the prep step of just kind.
Of chopping up the broccoli the garlic as well as the chicken now just mix some of the chicken with soy sauce and set that aside effectively it’s giving a little marinade uh but we will use that in a future step so we’re going to make the cooking sauce first and in a small bowl we’re going to mix together the oyer sauce the soy sauce.
The fish sauce as well as the sugar and the black pepper mix it all up set it aside for later use during the cooking step unlike the finishing sauce which is also used during the cooking step but at the end of the cooking step but you do cook the finishing sauce it makes a lot of sense and for the finishing sauce in a.
Small saucepan we’re going to mix together the water and the brown sugar and then add in the soy sauce after it starts boiling and then we’re going to kind of let that simmer for a bit so it thickens up to a molasses like consistency which is completely different from what I did because I mixed everything together right out the.
Gate and then I overcooked it so then it became like hard candy so do what I say not what I do and you’ll be good to go so everything is ready we have the noodles all soaked and and good we have everything chopped up we have all the sauces made now it’s time to actually start making the dish and to do that we’re going to first start by cooking.
The chicken so just throw that in the pan kind of brown up both sides make sure it’s cooked all the way through and then once you’ve cooked everything just kind of set in a bowl set it aside easy as that the time to cook the chicken will vary based on how thick you made it so you will need to fill this one out a little bit maybe cut one in.
Half check to make sure there’s no pink left I believe in you so now in that same pan that we just cooked the chicken in we’re going to throw in some broccoli really get let those flavors kind of uh mix and meld a little bit uh we want it to be a little bit Brown so don’t constantly stir it let it sit for a little bit and then.
Once it’s kind of brown up then we’re going to throw in the garlic and let that cook until it’s golden brown and that usually will take about a minute next we’re just going to kind of push the broccoli in the garlic to the side I haven’t really mentioned it but we’ll probably be adding in oil in between most of these steps so add a.
Little bit of oil now then we’re going to cook the eggs in there kind of like a scrambled egg um but we want it to be just past runny so like it it’ll be just entering that kind of dry State don’t want to overcook it we don’t want to undercook it so try and find that sweet spot now we want to add the noodles into the the the pan so we’re going to mix.
That all up so make sure everything’s nice and incorporated then add 3 tablespoons of the cooking sauce once again mix it all up make sure everything’s coated and then let it kind of sit for about 20 to 30 seconds so that it can caramelize and sear before stirring and then kind of repeat that a few times so a lot of the noodles kind.
Of get that seared caramelized action going on and the chicken that we cooked already that’s been sitting aside just put that back into the pan mix that all up once more super easy step and finally we put on 3 tbspoon of the finishing sauce on top once again mix that all up until.
It’s nice and evenly coated taste one of the rules and see what the the flavor Balan are like CU it should be sweet and savory and so if it’s you know if it needs more Savory then we’re going add more of the cooking sauce and if it needs more sweet then we’d add more of the finishing sauce so to try and find that balance add what you need also if.
Like the noodles feel like they’re undercooked you can add in some water to kind of steam them a little bit just fine-tune it at this point and then plate it up it’s time to eat all right so looks great smells great now we’ll see if it tastes great I mean this recipe in terms of kind of like that Umami kind of comfort.
Food feeling reminds me a lot of the uh garlic Sesame Ramen that I made I think like my like two videos ago you take a bite of it and you’re just like it’s like that like salty Savory goodness and there is a little bit of sweet from like the um from the sugar in there so it does have a little bit that like kind of salty sweet kind of vibe.
Going on it’s not a lot of sweet so maybe if if you’re a fan of that being a little bit more pronounced maybe add more of the uh I believe that was the cooking sauce that had the sugar in there the sugar that I’m pretty sure I overcooked but overall just like it just it just makes it feel good it makes you want to eat all of it but it does feel I.
Think it’s probably because there’s the chicken in there that it’s going to be a little bit more hearty than the uh Ramen was and so I do have some left over so we’ll actually see how that reheats I’m not sure if I’m going to do like stove top or microwave yet but also I’ve been taking so long and editing these videos that I probably will make this recipe.
Again by the time that I finish editing so I’ll make sure that if I do that I will reheat it a different way and I’ll have both of those methods uh to let you know but I I suspect that either one should be fine uh microwave might kind of keep the the noodles a little more tender where his soap top probably will uh kind of caramelize them a little bit.
So whichever way that you like things a little bit more can probably dictate how you can of go about it but this recipe at one point I kind of had like three criteria I believe it was I mean taste obviously I would I wouldn’t give it like a 10 out of 10 cuz the the fish sauce in there it’s something about that just never.
Sits quite right with me it has that like very fishy aftertaste but it’s not like a good fish so I wouldn’t give it full works but it might be one of those things that it kind of grows on you like the more I eat of it it might kind of that flavor might meld with the others versus the first bite it might just be feeling a little bit more pronounced but.
Besides that I feel like all the flavors are working really well together I’m I’m very happy with that complexity it wasn’t super complex it like wasn’t the easiest recipe cuz it had a little bit of uh a lot of things going on I mean obviously I struggled with the sugar aspect so I can’t say that it was the simplest thing in the world because then.
What would that say about me I I think my other one was like time it took probably cuz I mean like the noodles themselves took about 30 minutes probably it’s under it’s like between 30 minutes an hour so it kind of is pushing it a little bit on like that like week night meal cuz to me a week night meal is like 30 minutes or less but at the.
Same time if you have a well structured schedule and have a free hour on a week night I feel like this would be a very easy relaxing meal to make that will be very like satisfying but maybe this is more of like a Friday night meal where it’s not quite the weekend not quite the week it’s that nice little in between where you’re you’re easing into into the.
Weekend overall uh I highly recommend this to be it was my first time making it so hopefully you kind of give it a go if you haven’t done before I mean like this is me doing something fresh out the gate I also had the handicap of listening to an Audi book while cooking that probably wasn’t the smartest of ideas but I’m almost done and it’s due.
In I think like three days and I have like six hours left of it so I’m I got to get through that having that kind of voices talking to me and the me trying to read things probably was some of my struggles if you weren’t filming you could probably listen to audiobook just fine that was just me making things complicated overall like I said I hope.
You give this a go and if not I hope you try a recipe for the first time because I like cooking is the best form of experimenting because you get to eat the product afterwards like you can’t do well you shouldn’t do that in a science lab if you’re doing an experiment hopefully don’t don’t be eating things.
