1 cup (226g) Cream cheese at room temperature. 1/2 cup (100g) Sugar. 1 tsp (5g) Vanilla. Combine the cream cheese, sugar, and vanilla in the bowl of an electric mixer. Beat at medium speed until smooth and creamy. 1 cup (90g) Almond flour – You can use 3/4 cup (90g) of plain flour instead of almond flour. 2 Tbsp (11g) Unsweetened cocoa powder (sifted). Beat until well combined. Add 3 large eggs at room temperature, one at a time, beating for a few seconds after each addition until incorporated. Grease a muffin tin with vegetable oil or cooking spray.
Fill about 3/4 full. Place the muffin tin on top of a larger baking sheet. This will prevent the bottom from overheating and burning. Preheat the oven: 180°C. Bake for about 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let them cool in the tin at room temperature. These cakes are very delicate when they come out of the oven, so it’s best to let them rest for 20-30 minutes before handling them. About 40g of White chocolate. Microwave in 30-second intervals. About 30-35g of Roasted almonds. Using a fork, dip each almond into the white chocolate, remove the excess on the side of the bowl, and place them on parchment paper.
15-20g of Semi-sweet chocolate. Using a small piping bag, drizzle semi-sweet chocolate over the chocolate-covered almonds. Refrigerate to set while preparing the chocolate topping. Once cooled, gently unmold the cakes. 2/3 cup (100g) Semi-sweet chocolate. 3 Tbsp (42g) Unsalted butter. Microwave in 30-second intervals, stirring until melted. Dip each cake into the chocolate, tapping the fork on the side of the bowl to remove excess chocolate, and place the cakes on a large plate lined with parchment paper. Place two almonds on top to garnish.
