Welcome back to cooking gluten and dairyfree with Dave D today I’m going to be making some jerk pasta with chicken gluten and dairy free of course this dish packs a lot of flavor and it’s very creamy please remember that even though we focus on gluten and dairyfree products on this channel you can sub in gluten and dairy products let’s get down.

To business so starting with our chicken breast after removing them from the package and cleaning them place them on several sheets of paper towel and blot them dry with additional paper towel when the chicken breast is dry place them in a large bowl for seasoning all right so for seasoning chicken breast is pretty lean so we’re going to add a.

Splash of avocado oil next we’re going to add a touch of liquid smoke the best jerk chicken is made on a charcoal grill but since we ain’t got time for that Liquid Smoke will work this is optional next going with some jerk seasoning if you can find it skip it if you can’t go going with some garlic powder onion powder.

Adobo ground all spice paprika and some jerk paste unlike our jerk seasoning this paste is absolutely necessary so check your grocery stores International aisle my preference is a brand called walkerwood but any jerk Pace should work finally go in with some brown sugar all right so go ahead and rub all the seasoning into the chicken.

Let it marinate in the fridge now we can work on our veggies slice one red bell pepper into skinny strips do the same with one yellow bell pepper next dice up two stocks of green onion finally dice up one sweet onion and voila our beautiful rainbow of veggies which along with the garlic or garlic paste are going to add lots of flavor to this.

Pasta so after your chicken has marinated remove it from the refrigerator and allow it to warm at room temperature put your oven on 400° F this is going to finish our chicken let a cast iron skillet get to smoking hot on medium high heat next add some avocado oil add your chicken to the pan making sure to press it down let it cook.

On each side for about 2 to 3 minutes or until it gets some nice color we aren’t fully cooking here we’re going to finish it in the oven like I said before when your chicken has a nice color turn your heat down to medium add 2 tablespoons of dairyfree butter and allow it to partially melt down add 1 tbsp of jerk paste to it mix the melted butter with.

The jerk paste lean your Skillet to the side and use a spoon to base the chicken next put your chicken in the oven for about 10 minutes or until that internal temperature gets to about 165° F not overcooking the chicken is very important to it being juicy so don’t overcook here a degree or two below 165 is totally fine as the chicken will.

Continue to cook as it rests speaking of resting make sure the chicken rests for about 10 minutes before cutting into it again this makes for juicy chicken breast all right so while our chicken is cooking and resting bring a pot of water to a boil we’re going to be using some glutenfree penet for this recipe made from corn brown rice and quinoa but feel.

Of gluten-free flour this is going to allow our sauce to thicken cook the flour off until it disappears or for about 30 seconds add your mixture of heavy cream and half and half stir it in so the veggies incorporate turn the heat up to medium high until it comes to a gentle boil Stir It And reduce your heat down to low and allow it to simmer for.

About 5 minutes after 5 minutes season it with some Cajun seasoning and jerk seasoning stir that seasoning in now allow the sauce to simmer and thicken until it can coat to spoon go ahead and taste your sauce and season to your taste mine was perfect and I didn’t need to add anything next cut the heat and add 4 oz of dairyfree Parmesan cheese I.

Like the brand follow your heart add your cheese little by little and allow the heat from the sauce to melt the cheese stir it in all right so cut your chicken into bite-sized pieces mix the chicken into the sauce and stir it in next add your noodles to the sauce and stir that in until they’re nice and coated and that’s it jerk pasta with.
