Comfort in a Bowl: Hearty Vegan Soup for Cozy Nights

Hello and welcome to this recipe episode featuring potato sausage and kale soup that I’ll be making both vegan and gluten-free this recipe comes courtesy of my beloved Uncle I refer to him as Uncle Squidward because he embodies Squidward from SpongeBob in more ways than one I have his cookbook actually his name is Michael I call him Uncle.

Michael SL Uncle Squidward this recipe book was a present that I got for Christmas 2020 three so not too long ago since you can’t access this recipe online I’ll just show you quickly what the recipe text says there’s a dozen ingredients in this recipe and I’ll be doing four substitutions in order to make it vegan and gluten-free there’s 2.

Tablespoons of olive oil one yellow onion I’ve already prepped this 1 to 1 and 1/2 lb of spicy Italian sausage so this is going to be one of the substitutions I love the beyond meat brand so this is what I’m going to be using to sub out the chicken sausages I think that’s what is listed in the original recipe there’s 2 to 3 lbs of.

Potatoes I went with yellow potatoes this is what they look like next on the list we’ve got this mountain of kale in front of me it’s so good for you I think pretty much everyone knows that at this point there is water going into this soup obviously so I’ve got my BR piter here ready to go I just decided to fill it up I’ll be using a vegan soup base.

For this my go-to brand is called better than buan the way that I know it’s vegan is because it has this little V on the back of it with a heart shape around it there’s a couple of bay leaves going in here for those of you who don’t know about bay leaves they add a lot of flavor to whatever you are cooking however you don’t eat them then we’ve.

Got one tablespoon of thyme 1 cup of milk whisked with 1/2 cup of flour and this is to thicken the soup so that it’s not super watery the way that I’ll be doing this is taking the very last half cup of gluten-free flour that I have in this container I love this Pillsbury brand gluten-free flour so I’ll take this and I’ll put it into one cup of.

This almond milk they have this brand of almond milk on sale at my local grocery store I decided to go for it because well one it was on sale but too I thought the packaging was just so pretty the last substitute in this recipe will be a pint of half and a half I actually had to look up what half and half is because I never use it half and half is.

Simply a mixture of half whole milk and half half cream so I was on Google looking at how to make vegan half and half substitutes what I came across and decided to do for this recipe was to do half whole fat coconut milk and half almond milk last but not least we’ve got a little bit of ground pepper to give you a sense of how everything comes.

Together once the onions chopped the kale is chopped and the potatoes are chopped and you know the sausag is ground down the first thing I’ll do is take the chopped onion and sauté it in olive oil over in the soup pot the onion will cook for probably 5 minutes or so the recipe says to cook it until it’s tender then I’ll throw in the pound and.

A half of spicy Italian Beyond sausage into the Soup pot and cook that with the onion until the sausage is nice and browned after that I’ll be throwing in the chopped potatoes along with the soup facee the bay leaves the thyme and then I put in as much water as needed to cover all of the stuff that’s in the Soup pot I’m going to use this measuring.

Cup to determine how many cups of water I put into the pot in order to cover everything and then I’ll use that number of cups of water to then determine how much of this soup base goes into the pot at that point we’ve got our basic concoction of soup things and I’m going to let them simmer it says simmer until the potatoes are tender the way that I.

Like to test if a potato is tender is to take a you know just a fork see if I can gently press my Fork all the way through the potato and if it’s going through like butter for me that’s like the perfect tenderness for a cooked potato for the last few little recipe steps I’ll take the milk and flour mixture that I’ve whisked together on the side.

Pour That Into The Soup pot and then I didn’t realize this but the kale goes in pretty much at the end of the recipe the recipe instruction simply says add kale and cook through the way that I can tell that kale is cooked through is it gets this very almost neon vibrant looking green color the very last step will be to throw in the vegan half and half so.

My coconut whole milk and this almond milk half and half substitute along with however much of this ground pepper I’d like to add in cool okay that is everything I am going to prep my veggies get the sausage all chopped up and ready to go once those four ingredients are prepped and ready to go I will take you over to the stove top and walk you.

Through everything as it gets thrown into the Soup pot.

before I dig into this I have to say this is hands down the thickest creamiest soup I have ever made in my life look at this can’t really tip it.

Any further or else it’s going to fall out oh my gosh try not to make a mess I’ve said this before I think you could fool someone with this recipe if they didn’t know was vegan or gluten-free they probably would think that the Beyond sausage is just plain sausage you can see the potatoes you can kind of see the Beyond sausage crumbled.

Throughout it’s so rich love the potatoes for those of you who are a little bit skeptical about trying vegan stuff it’s okay I get it I think this would be a good recipe for you to try because most of the ingredients are vegan and then there’s just a few sub substitutions and the end result especially if you use the Beyond sausage.
