Hi friends and welcome back to the rustic cottage cuisina. I’m Tatiana and today I’m sharing a cozy springtime recipe that’s both vibrant and comforting Greek stuffed peppers or yamista. These are naturally glutenfree, eggfree, soyf free, and allergyfriendly. Here’s what you’ll.
Need. Four to six bell peppers or tomatoes. One lb of ground beef. Half of one onion. Four cloves of crushed garlic. One tablespoon of parsley. 1 tbsp of oregano. 1 tbspoon of onion powder. 1 tbsp of garlic powder. Half a teaspoon of.
Cumin. Half a teaspoon of red pepper flakes. 1 8 oz can of tomato sauce. 1 14 oz can of petite diced tomatoes. Half cup of water or more as needed. One cup of rice. I used basmati. 2 tablespoon of warsure sauce. 4 oz of feta cheese. Olive oil. Greek seasonings and salt and pepper to taste. The bowl where I put all of these.
Ingredients in will be our seasoning liquid. All the spices and tomatoes will be going in. I just feel like it’s much easier to measure everything out and then just pour it all in the pot later. So now what I’m doing is scraping out the insides of all the tomatoes. And I don’t like to waste.
Anything. So I just put in the inside of the tomatoes into our bowl with seasoning liquid. Next comes the green peppers. And I will be slicing the bottoms so that they will be able to stand up on their own in the baking dish without falling over.
And I will also be cutting the tops open for the filling, but leaving the what I like to call the little hats because I don’t know, it’s just something my Greek mother have has always done and I just learned from her. So, I think it just helps it the filling.
Stay more moist while it’s baking. So, yeah, I keep the tops on while they bake so the top doesn’t burn either and it gives it more flavor. Next, we will be browning the meat all the way through.
Then you’re going to add your onions and garlic and cook until they’re soft and translucent. In the meantime, put another pot of water to boil the green peppers to give a head start in the cooking process. You want them soft, but firm, not mushy. So, don’t boil for too long.
Maybe 15, 20 minutes. Now I’m adding the seasoning liquid. Stir and let everything warm through. After a while, it should smell amazing. Then after that, you add the rice and let it cook until 1 minute away from al dente with the lid on.
Once everything is cooked and ready, it’s time to start stuffing our tomatoes and peppers. First, add a little bit of Greek seasoning and olive oil to the insides of each tomato and pepper for extra flavor. Then fill each one to the top and place the little pepper hats back.
On. Arrange them snug in a baking dish with remaining or extra rice around the bottom of the pan. Next, crumble some feta cheese on top and then drizzle with a little olive oil. Then what you’re going to do is bake at.
375 for 45 minutes until the peppers are tender and golden at the edges with the foil on. You may remove the foil 10 minutes before finishing time. And here they are. Cozy, nourishing, and packed with rustic flavor. These Greekst peppers are fresh from my cuisina to yours.
