Hello and welcome to Baker brus for those of you that don’t know me my name is Donna I’m a stay-at-home mom to two boys and here on this channel we chat a lot about homesteading in the city and we share a ton of our family Adventures like I said I’m a stay-at-home mom I like to learn how to make things that our family really enjoys I have two boys.

You know we got to have snacks ready to go all the time but I want to surprise your sweet tooth today without any extra added sugar today’s video is a collaboration video hosted by the cooking Chronicles with ingred and there’s going to be a whole.

Playlist of like sugar-free desserts which I really personally like this idea I find that so many recipes and desserts are full of sugar I’m always trying to find ways to like hit that sweet tooth you know craving without adding tons and tons of sugar to the desserts so this sort of playlist really hits the mark for me so if you like that as well and.

You’re looking for healthier ideas and options you know check out the full playlist and check out this recipe the recipe that I want to share with you guys is super easy it’s no bake it’s sugar added extra added sugar free uh it’s glutenfree as well and it keeps for a very long time because you can freeze it after you’re done making it this is a.

Chocolate coconut energy bar or ball recipe I personally like to make them into balls just so that they’re like a nice bite-sized portion ready to go so I’m going to show you how I made these guys today you need 30 dates 1 and 1/2 cups of raw cashews 1 teaspoon of vanilla 1/3 of a cup of cocoa powder an e/ of a teaspoon of sea salt and 2 cups.

Of shredded unsweetened coconut these are the dates that I am using uh they have pits in them so I’m going to have my little helper remove the pits so big yeah these are dates okay put one on the on the cutting board for me so much black we have more black and more black.

We have three more containers are black my just four I feel like I have some of these guys five let’s start with five okay so I’m going to cut them so we can get the pits out you’re going to help the PS so we open them up see and you got to get this hard piece.

Out and put it in a bowl and put the good part in here we can look at the example okay so this one has a pit get that pit out of there take it out even sticky this you’re demolishing them yeah like what if I eat one with s p well you can.

Try a little bite of date if you want but then they C going make and if the pits have this weird little like end nub I don’t even know then I’m going to get rid of those as well all right so first thing I’m going to add are the dates and I’m going to let those go in the food processor for a little.

Bit and then I’ve got my cashews ready to go cuz they are the next ingredient that’s going to go in it’ll still work it’ll still taste good they don’t have to be raw and even if you don’t want to use cashews like you could switch you could probably make this recipe with walnuts.

Or almonds like you might get a slightly different consistency cuz cashews just have that really rich creaminess to them and that’s what I really like about this recipe okay I’ve just put it on like one round of chop so it’s still like it’s still got quite a bit of chunks in it like you could probably let it go even longer if you wanted to I might let it.

Go actually one one more time before I add the cashews so now I’ve let it go a little bit longer and you can see how quickly the consistency of the dates changes like now I have a big sticky ball of dates very.

Quickly I mean if you keep pureeing it it just gets smoother so if you don’t like you know the consistency of the date then you could hide it by pureeing it more perhaps the vanilla just to help it blend around so I ran it on a chop cycle twice and then I ran it on a puree cycle so you wanted to run it like in the food.

Processor like on high for 2 to 3 minutes but I like to kind of keep keep an eye on the cons consistency to see how it’s coming along oh oh there’s all my cashews coming up the sides gosh whoopsie bit too much I just maybe should I think this processor is just old it does say that you might have to like scrape the sides down but I this is.

Looking really good like it’s got this really nice like gummy consistency like it’s sticky but it’s not sticking to me so it’s like it’s bang on what I would want it to be which one this will be a really good consistency for energy balls and I tasted it and it’s got such a nice taste already to it just with the.

Dates and the cashews yeah you can try a little bite thank you oh this smells really good I already made it into a ball yeah you can make it into a ball this tastes back like shoes.

Mhm really bad big gasket yeah where would that gasket go anyway moving along so you want to blend that until it’s combined but as you can see like the the texture is more crumbly so if it’s not sticky enough then you can add a little bit of water to help it like get more sticky again I mean I could have added.

More dates but thank you I think I’m just going to add a little bit more water in addition to the coconut here on my little coconut eater sampler had a lot of coconut I’m a coconut boy you are a coconut I a.

Coconut M M M coconut M once you see it like doing this spinning Motion in a big chunk then I know the consistency is probably a lot better and a lot stickier again so then I just stop the processor and usually take a look and check the consistency cuz it’s usually bang on ready for energy ball making some oh it’s going to.

Be so good the smell is good the texture looks great you want to try yeah it’s really good and I won’t even be it’s chocolatey it’s coconuty look I’m not even dirty M it’s just really good we are going to take these wow this is good it’s good right we’re going to take these out.

We’re going to roll them into balls you can make it into a bar the original recipe is a no-bake chocolate coconut bar so you would lay it out and then cut it into bars but for ease we’re just going to roll it into like an energy ball shape because I like it in an energy ball shape I think it is really awesome I think it tastes really great.

So yeah that is what we’re going to do with these ones today I just grabed some roll it into a nice shaped ball very easy as you can see very little on My Hands you could roll it in coconut or other nuts you know after the fact but we are just going to leave them like this I think for now just very.

Simple it’s even gluten free gluten free but I want a big one well let taste us a small one to make sure you like it you’ve already got one in your fingers o so we know they’re sticky we know they’re sticky they look like Timbits this looks like a chocolate Timbit to me okay do you want it in a.

Ball shape yours now you ready to try a little one yeah okay grab uh just going to taste First grab one of those little ones I’ll grab this one here you go here’s yours two I want a big one these are really good I want a big one they taste so chocolatey and Rich like a mix between a.

Chocolate Timbit and a fudge yeah like a fudge Tam can you please use the for to get me a big one all right here we go I’m glad you like them open your mouth open your mouth Here Comes Your fou is full of them there in total this recipe made us about 50 energy balls plus or minus a few because I had my taste testers already.

Trying them before they were even in the freezer so the original recipe says to put them in the freezer for about 30 minutes to an hour I honestly store them in the freezer I have put these in the freezer for an hour and on just some part paper cookie sheet line cookie sheets and I’m going to transfer them into a Ziploc bag that’s just what works.

Well for our family and then whenever I have that little craving I can just hop into the freezer grab an energy ball or pack them for snacks to go on the road they have a great source of energy they’re easy and then once we arrive or we’re ready to eat them like even Frozen they’re good but then when we arrive they’re a little more defrosted but.

These are just super great snacks to hit that chocolate craving a big reason for me that I want like this recipe is that it uses the natural sweetness of the dates to like help that sweetness uh come forward without adding extra sugar that for me just really hits the mark uh for this recipe and you can tailor it you can make energy bars or balls.

However you want with a variety of nuts and ingredients and like yeah even even if you wanted extra sweetness you can add things like honey or maple syrup so energy balls are something that I’ve really enjoyed making like I said you can store them in the freezer and they keep for a really long time I’ve even used things instead of like dates if.

You’re not into that I’ve even used things like dried apples and dried apricots are one of my other favorite ingredients in the past we have made energy balls before I can link that video below that was when I was first starting to figure out how to make recipe videos so it is not the best quality video but it has a lot of.

Memories with it cuz even back when my kids were little I was making these they were really great when I was like breastfeeding and I needed a really fast and easy energy source and having these in the freezer just ready to go they were really great for you know increasing milk production they were high in like nuts so I just I really.
