Savor Every Bite: A Wholesome Start to Your Day Without the Guilt!

Hi friends my name is Kim welcome back to Healing Cottage Homestead welcome to my kitchen I’m so happy to have you with me today today we’re making another breakfast um casserole or breakfast fata and for the holiday mornings whatever holiday it is that you celebrate it could be for Thanksgiving morning it could be for Christmas.

Morning Hanukkah morning Quanza morning you name it and and I have missed some things but um you name it it can be for that holidays morning and so the first thing we’re going to do is um fry up some potatoes and M got my grease hot already and I’m going to go ahead and get those.

Going I’m using caned potatoes you can use whatever it is that you would like I think I have a little bit too much grease in here and while that’s getting ready we’re going to get our eggs ready and we’re going to use seven.

Eggs I am becoming notorious for cracking my shells directly into my eggs we don’t want to fry these too long we just want to get them a cooked through and a little um a little brown on them going to give those a.

Whis and we’re going to add about two cups of milk whole milk is what the recipe called for give that a whisk I’m going to add salt and pepper I’m going to Salt my potatoes I love these salt and pepper shakers from Sam’s Club I think I mentioned to you that I got them.

Online and we’re going to add a teaspoon of mustard that’s a tablespoon there I go with my pepper cough dry mustard so a teaspoon of dry mustard I’ve never used that before in an breakfast casserole so I’m anxious to see what that’s going to taste like B whip and it said to add a can of Dr of.

Chilies I’m using mild chilies because you know I can’t do a lot of heat and I’m only using half a can I may regret that I may wish that I use the whole can but I’m concerned because they smell like chilies so I’m concerned that it’s going to be too hot for me and you could make this breakfast casserole in a 9×13 pan or 9 by 12 how.

Does I don’t know how those measure I think it’s 9 by3 and or but I’m going to just make it in the skillet and make it more like a fata but I’m not going to cook it on the stove at all I’m going to um cook it totally in the oven I’m just going to add my eggs to this and the.

Eggs will start to cook and then I’ll put it in the oven I’m just dicing up my potatoes a little smaller it goes a little further you get more potato and other in each bite we want to add about a cup of cheddar cheese.

I’m going to Dr off some of this grease I’m making a mess we know that’s the story of my cooking I’m going to wipe this off so that I don’t start a fire I’m going to go ahead and use that paper towel to absorb some more of that so I did precook my.

Sausage we’re going to go ahead and add it to the potatoes because it’s um just it’s not hot and we’re preheating our oven at 350 and we’re going to start by cooking this for about 30 minutes and we’ll give it a check it may take up to 45 minutes perfect.

Timing get this another whisk so everything’s mixed together we’re going to add this to our sausage and potatoes and then we’re going to put it in the oven and we’re going to cook that for like I said about 30 minutes you could start to cook it on the stove at like a normal frittata and then put.

It in the oven to finish it off either way would work um I’m just going to go ahead and I think that it makes for a lighter custard if you cook it completely in the oven so that’s what I’m going to do I am going to cook it uncovered and I’m going to try to remember to use my pot holder every time I touch this handle from now on because.

That’s the worst part of using a skillet in the oven is remembering you can’t touch that handle but we’re going to go ahead and put this in the oven for 30 minutes and then we’ll come back and check it and see how it looks okay so it’s done it looks beautiful I actually cooked it for about 50 minutes which may be too long for the.

Edges but for the center it needed that extra time it does feel light and fluffy can see looks good give it a taste those Chiles are not too spicy that was just the right amount I can taste the flavor there’s a little bit of a kick.

But not too much um I can’t tell if I can taste the ground mustard what I can taste is a richness um so that sausage the cheese um the chilies and then that ground mustard I think pulled it all together to make it a little bit richer there’s definitely a little bit.

Of a kick to those chilies even though they said they were mild but you know me I can’t tolerate any amount of heat so that is probably uh just mild for everybody else and just medium for Kim so let me give you some uh nutritional information and this made me realize that when I did the nutritional information for the other breakfast.

Casserole that I did um which I’m not sure if this is going to come out before that or after that but the one with croissants I weigh over um put the amount of calories and fat and in that recipe so um I’m going to do a little snippet to make sure that I update that video uh because I hav edit it yet and I want to let people know that I was way.

Off on that when I did the nutrition information so anyway so for this one I said there were eight servings and I do think that there are about eight servings in this 245 calories 17 gam of fat it does have 181 gram of cholesterol but that’s because we’re using the sausage so I have I expect that um um seven grams of carbs and 16.

Grams of protein and if you used uh if you shredded your own cheese this would be glutenfree so um just remember that if you want this to be gluten-free don’t use the pre-shredded prepackaged cheese shred your own cheese and then it’s a gluten-free recipe I think it’s an absolute winner I think that you could prepare this the day before and put it.

In your Pan um I think it is a 9 by 12 I said earlier 9 by 13 but I’m pretty sure it’s a 9 by 12 you could prepare it in your 9 by2 Pan cover it with tin foil and put it in the fridge overnight and then the next morning you could set your uh temperature to 350 on your oven and uh cook that up for your family you might.

Have to cook it a little bit longer than the 50 minutes that I did because of um it being cold but otherwise I think that this would be a great holiday uh breakfast um that for you and your family as we go into this holiday season thank you for being with me today I hope that you enjoyed this video if you did give it a big thumbs up um uh if you’re.

Watching on uh Tik Tock I which I doubt you will because I think this video will be too long long I have a 10-minute limit on Tik Tok but if you’re on Tik Tok give it a heart um and a a like but uh I would love it if you would subscribe to my channel healing Cottage Homestead it really helps me so that I can get in.

That algorithm so that people start to see me when they search for diabetic friendly recipes I post videos every Tuesday and Friday at 5:00 pm Eastern always diabetic friendly often low carb or gluten-free sometimes slow cooker instant pot you name it I try to cover all the bases um I also post videos on Sunday.

That are a little bit different sometime I call those my Homestead videos but they’re really my old fashion cooking skills videos I do food preservation gardening uh and pressure cooking and things like that I really enjoyed our time together today friends I hope you did as well and I look forward to cooking with you again again soon take.
