Hey everyone it’s Amanda here for Friday family movie night I made Mexican chicken in my ninja foodie possible cooker pro let me show you how easy it is to make and is my family’s favorite I am feeding a family of five and this is what I am using in this recipe two chicken breasts a jar of salsa tortilla chips white rice corn and.

Black beans and cheese and anything else you would like to garnish it with like jalapenos or cilantro I am using my ninja foodie possible cooker pro and if you don’t have one you can use your crock pot just put it on low setting and cook it for 6 hours start by adding a 24 oz jar of salsa of your liking to your crock poot.

Or your ninja foodie possible cooker pro now add the two chicken breasts to it and you’re going to want to coat the chicken breast in the salsa take a can of 15 oz black beans I’m using seasoned and you’re going to want to drain it and then dump it into your ninja or your crock poot I am using a 15.25 can of corn and.

I drained the liquid out and now just go ahead and dump it in now mix it all together and I’m not even adding any seasonings to this because there’s the salsa and the seasoned black beans which is perfect everyone loves this now just go ahead and cover with the lid and let it cook on low for 6 hours I haven’t had time to.

Get over to Costco to do a shopping trip so I’ve been shopping at Aldi a lot and I really like this kobby jack cheese and I’m going to go ahead and shred it up so that way we have this to add to our bowls for dinner tonight and this is perfect you know we go through block cheese quite a bit and I have been really liking the prices of the block.

Cheese at Aldi’s compared to Walmart so I’ve definitely been stocking up on these to have on hand and this is perfect I’m just going to shred it and add it to our dinner for tonight and it’ll be really tasty when I do go to Costco I like to get that Mexican shredded cheese just because we do quite a bit of tacos and Mexican night and my.

Kids really love stuff like that so it’s perfect and it’s a winwin when I can do meals that they actually really enjoy to eat and just having this block cheese on hand is perfect just just easily shred it up and it’s it’s really tasty you can use any white rice that you would prefer I have jasmine rice on hand cuz that’s what I got from C a few.

Months back and it has really lasted us and I really like that I bought it in bulk because it was a better price and we do use quite a bit of rice in recipes for dinner so this is perfect but definitely you know go with whatever white rice you would like to go with and just follow the directions on the package there is 30 minutes left on the.

Timer but I’m going to go ahead and start shredding up the chicken and then just putting it back in because it is done you can check it with your thermometer to make sure that the chicken is reading at 160 5 I have made this meal so many times that I definitely know that it is done at that Mark at 5 hours and 30 minutes but I.

Have 30 minutes left on the clock and this is where I start to kind of get everything prepped and ready making sure I got all my rice done all those fun little things that you’re going to add into your bowl also making sure that my dining room table’s set napkins utensils chips everything’s ready for dinner you can shred your chicken easily in your.

Crock pot or in your Ninja foodie possible cooker pro but definitely use um silicone utensils if you were going to shred it in your Ninja foodie posser Pro so that’s why I am shredding mine on a cutting board so that way I don’t scratch up the inside liner of the pot to it so it just easily shreds apart and I’m just going to go ahead and put it.

Back in my ninja foodie possible cooker pro and I’m just going to still keep it on on the low setting since there was only 30 minutes left that way it still stays nice and warm while I’m shredding this up and everything else is starting to get finished like my rice that is finishing up cooking and my daughter is helping set the table with napkins and.

Utensils now that my chicken is completely shredded I’m just going to go ahead and mix this all together that way it is nicely coated in this salsa and it’s just mixed very well and now that that’s done I’m going to go ahead and start plating up my bowls and I’m going to show you how I’m going to do that I’m going to go ahead and use some.

Cilantro that I got from Aldi’s and just garnish the tops and it’ll look really pretty everything’s done being cooked I’m going to go ahead and start putting rice in the bowls and then I’m going to put the Mexican Chicken on top I try to get a good spoonful of the mixture so that way everyone has chicken corn and the beans and then Place shredded cheese.

On top Place sour cream on top of the cheese I love homegrown peppers and then canning them up it’s such a treat in this jar I have jalapenos ghost peppers and Habaneros so that way it gives it a nice little heat but I am definitely only adding it to my husband’s bowl and my bowl it’s too hot for the kids but.

It’s really nice to add my own little touch to this bowl that definitely came from my garden and it’s just really neat to do stuff like that I I so enjoy growing food for our family um my husband he loves jalapenos ghost peppers habanero peppers he loves anything spicy so this is so perfect to add this to our plates now I’m going to go ahead and.

Garnish some of the bowls with some cilantro I’m really glad I grabbed two bags of tortilla chips because we already went through like half a bag with just homemade salsa earlier today for snacking and this is perfect that we had more lastly I’m going to go ahead and add some salsa to some of the bowls that I made over the summer from things.

From our garden and there are a few videos on here that show how I made them and and they are really tasty this one here is the jalapeno hot salsa that I made and it’s so good the kids actually they’ve been enjoying it too and I’m really shocked there is a little bit Heap to it but they love it look how tasty these all look and so perfect for.
