We’re making an easy but gorgeous chocolate chunk banana bread with half the sugar and carbs but we won’t compromise on Rich banana flavor or moist fluffy texture we’re using clean simple ingredients including bananas oat flour cotage cheese light olive oil and of course chocolate hello my name is Nicole Bonia and if you love healthier.
Recipes made with all natural ingredients then you are in the right place to make this really easy banana bread we’re going to start by prepping our pan so I’ve just taken my bread pan and then a sheet of parchment paper paper and I like to line it with a parchment paper because it makes it really easy for getting the bread out of.
The pan after it’s baked but of course you could just grease your pan and then bake it without the parchment paper so I’m just going to start with my sheet of paper that is a little bit longer than my pan I’ll fold up one Edge to make sure it’s Square Place My Pan on top slide it down so it’s just inside the pan bottom score the other side fold.
Down on my score line flip it upside down in my pan press it in score the bottom corner ERS pull it up and over fold up and over the other side fold and then I’ll lightly spray the inside edges with some non-stick and then we can set this aside to make this banana bread naturally sweet we want to use some very ripe bananas and those are bananas that.

And this just helps the bread bake up a little bit lighter plus adds a little bit of flavor and then I’ll just insert my immersion blender and blend it until all that cottage cheese is nice and smooth well now the bananas are smashed and we no longer have that curled texture of the cottage cheese now I didn’t want to add my eggs with the.
Other wet ingredients cuz I didn’t want them to be over whipped as we Blended the cotage che cheese so now I’ll go ahead and add two eggs and then I’m just going to whisk these together until I no longer see the egg yolks and this makes sure that they don’t get over whipped well now we can add our dry ingredients which includes 2 and 1/4 cups of oat.
Flour now you can buy oat flour already ground at the store or you can easily make your own all you need are some quick oats or oldfashioned oats in an upright blender or food processor and you just blend the oats for about oh maybe 20 seconds until you get a very fine oat flour so I’m going to add two and A4 cups of oat flour and then I’m.
Adding 2 teaspoons of baking powder 1 teaspoon of cinnamon and half a teaspoon of salt and then we just whisk this together until well combined M that’s smelling really good with that cinnamon and banana and then we have this really thick and gorgeous banana bread batter now for adding in the chocolate you could use any kind of chocolate chunks.
Or chocolate chips that meet your dietary preference Now the recipe includes half a cup of chocolate chips but you could add more if you like I won’t judge so I’m going to go ahead and dump in about half a cup of my chocolate chunks but I’m going to hold out about 2 tablespoons because I want to sprinkle those on top of the loaf before it baks.
And now I’ll just stir these in with my spatula so if I use my whisk then it all gets stuck between the strands and then we’re going to Simply pour our batter down into our prepared bread pan and I’ll just gently spread it with my spatula to make sure it’s nice and even and then we’ll take the extra chocolate chunks and I’m going to spread those on.
Top and then I have found it works well if you’re using the chocolate chunks to go ahead and just kind of gently press them into the batter before it bakes and that will help them so they aren’t quite sitting on top top of the loaf well this looks gorgeous and it’s ready to go into a 350° oven for about 45 to 50 minutes or until a toothpick comes out clean and.
