Thrifty Finds and Tasty Eats: Gluten & Dairy Free Goodies Galore!

Welcome back my friends to another grocery shopping day for anybody new hello my name is Meg I am lactose intolerant I am gluten intolerant my husband he is not now this week it is a little bit smaller of a grocery haul but I was inspired by you guys to show you how I meal plan for the week based upon what I have so we’ll start off with what.

I got this week at the grocery store and then we’ll jump in to how I do my meal plan for grocery shop and this week I only went to two stores bashes a store local to my area and to fries my local Kroger store we’ll start off with what I got at bashes the only thing that I got at bashes these are Hatch green chilies they were 99 cents a pound I this is.

About 3 lb I’m going to roast these up and then either can them or freeze them so I will have green chilies throughout the year and if I can catch them on sale again I might buy even more I love green chilies and then what I got at fries so fries was having the half gallons of milk on sale with coupon for a19 a piece a little bit more than I.

Have been paying but still not a bad price then canned uh black beans lentils and two cans of garbanzo beans they they were a do a piece 97 cents a piece with coupon for the Honeydew and the Tuscan cantaloupe a single cucumber some bananas a couple of packages of extra firm tofu and then the strawberries were 97 cents a piece I believe with coupon.

That is what I got at the store this week and yes these melt are regular milks they are not lactose free but I do get these um lactase drops I get them online and I can add them to this milk to make it lactose free I really had to do some budget shopping this month because I’d already gone through a little over $100 of my.

$200 budget now that is for two grown adults including one with all sorts of food sensitivities so how much did I actually spend this week at bashes I spent $35 and at fries $181 meaning my total for this week $21.86 and my grand total so far for this month1.

12758 but with what I got at the grocery store what could I possibly be eating this week well let me run to the fridge freezer and Pantry collect a few things and we will come up with a meal plan for this week for my meal prepping process I kind of just grabbed a whole bunch of stuff that I kind of keep generally in my fridge freezer and Pantry just so I’m.

Not running back and forth between them all so that you guys can kind of see what I keep I generally keep chicken whether it’s chicken wings chicken thighs white meat chicken uh I usually have fish this case right now I have some cod salmon almost always have shrimp on hand frozen veggies I love them always keep frozen.

Veggies potatoes right now I still have a head of lettuce that I got from shopping last week rice either white rice or in this case brown rice oats I love to keep oats on hand at all times and finally some gluten-free pasta oh and and can’t forget canned veggies as well well in this case some canned corn so here is the plan for the week we got.

Breakfast lunches and seven dinners we’ll start at breakfast sweet or savory oats I can do like strawberries and bananas with the oats or I could do Savory with like some roasted pepper and some broccoli with an egg on top next um yogurt I have a whole bunch of milk back there I already have plans to make some yogurt with some of that granola that I.

Made last week that was super super good have that with some fruit or a lot of the time lately I’ve just been having a couple boiled eggs with fruit and that’s it that’s all I’ve been having for breakfast and it’s been really satisfying lunches grain bowls I love them salads I love them if they come together really really quickly I love.

Them even more for proteins I have the tofu I have canned beans I also have some caned tuna I generally just throw something together that sounds good at the time lunch is I really try to keep super simple cuz I don’t have a lot of time to make them then dinners chicken hummus bowls with rice I’m thinking I’ll make some hummus with.

The chick one of the cans of chickpeas that I bought have rice and then I’ll either do like the chicken thighs or some white meat chicken on it chicken wings with veggies that’s simple enough uh salmon and rice bowls then lentil Sloppy Joe’s with potatoes probably just make the sloppy joe mix and then put it over the top of the potato keep it super.

Super simple lemon garlic shrimp with glutenfree pasta uh I made this for a what I eaten a day a while ago and it is just so so so super good uh we’ve had it a couple of times since and I wouldn’t mind having it again either baked cod or fish taco bowls with veggies and finally Mongolian tofu with broccoli and rice that is the menu that we are going to be.

Eating this week and hopefully that gives you an idea of how I make my meal plans compared to how I shop I know that I kind of meal plan a little bit backwards from how a lot of people do it I don’t meal plan and then create a grocery list I just go shopping and then I create a meal plan but I feel like doing that helps me save a lot more.

Money because I’m not buying ingredients that I may never use again and utilizing the ones that I do have on hand and keep on hand regularly one thing that I didn’t really do a good job showing on the meal plan though was that every single meal I strive to try to at least have a fruit or a vegetable if not both now does that always happen no but that.

Is kind of the goal so the ones that didn’t show any fruits or vegetables I will probably have some cut up you know melons with it or a side of Frozen veget vegetable like brussels sprouts or broccoli but I hope that you guys found a little bit of inspiration in the meal plan that I made and that you guys enjoyed today’s grocery haul if you did.
