Welcome to in the kitchen with Dina today we’re making gluten-free dairyfree eggree waffles someone’s in the with din’s in the K I know someone’s in the K with din going taste good I know so we are making some waffles they are allergen friendly gluten-free dairy free and eggree and when I saw this or.
Thinking through this I was like how is even that going to work but but it does I’ve got a nephew who can’t have eggs and can’t have gluten so Jacob if you’re watching this one is for you these are delicious I’ve it’s taken a couple batches to uh figure them out they’re a little bit of a beast but they are delicious and if you have any leftover.
Waffles which they’re crispy on the outside chewy on the inside they freeze well and they I just tucked the rest in the fridge I put them in the toaster and heated them back up and put Jam or peanut butter on them for breakfast they were great you would not have known that they didn’t have anything in them really so we’re going to start out with.
Whatever baking gluten-free mix you want Bob’s Red Mill Namaste or um King Arthur you do however when you’re measuring gluten-free ingredients out want to spoon it into a cup so you don’t pack it in there the other thing with gluten-free baking is you don’t don’t want to over mix it.
Because things turn into they’re It’s Tricky anyway level that off so there’s one cup that is my Waffle iron it sounds like the Fred FL Stone whistle if you if you grew up with a Flintstones when he gets off work so my Waffle iron is hot see if that works.
all right the other thing that you’re going to want is two tablespoons of plain old sugar if you don’t want to add that you can totally omit that we need some baking powder so I need two teaspoons of baking powder it’s got to give him some rise some baking soda we need a half a.
Teaspoon and certainly we need some salt and a half a teaspoon of salt all right so that’s all of our leaving so let’s give it a mi a whisk get that mixed in with all our dry ingredients all right so now I have a/4 cup of oil I’m just using a very light olive oil avocado oil works you could also use.
Coconut oil in this and I’m going to use 1 and 3/4 cup of whatever dairyfree milk you want to use just make sure it’s unsweetened and you want 1 and 3/4 cup of dairyfree milk I like this vanilla almond milk the vanilla flavoring really goes well see that’s 3/4 a cup right there really goes well with the with the breakfasty waffle.
And honestly if you threw some egg some sausage with these you could have them for dinner too cuz who doesn’t like breakfast for dinner so again that was 1 and 3/4 cup of dairyfree milk does any kind work I mean yeah you could use Macadamia you could use coconut you could use soy if you like.
That I’m not a big soy person but if you are go ahead and use that and then the last thing is a tablespoon of just distilled vinegar pop that in that is going to help your leavening get a kick start with the soda all right so just really gently mix this.
Up you can tell it’s thickening up here even as it sits all right perfect so if you got a Belgian waffle maker or whatever kind of waffle maker you are going to want to grease it I tried olive oil I tried avocado oil everything and the only thing that would work is the spray oh and I need my.
Cupper my scoopo oh it’s hot it’s hot smokey all right so I’m going to spray it and then I’m just going to add/ qu cupfuls per at least that’s what my batter is I’m not sure whatever your waffle iron is is what you should do somehow Denver knows when we have.
