Today we’re going to make rice wrapped shrimp, cheese sticks, and zucchini all on a skewer with a little rice paper. So, first we’re going to take our shrimp and season those, season our zucchini and cheese. Just going to give them a little bit of a light dusting just to get a little.
Extra flavor on them. This is just our black and red fish seasoning. So now we’re going to mix up our shrimp. Next, we’re going to skewer up the cheese. your skewers like they normally tell you in um water because we’re going to be putting them in oil and we don’t want.
That extra popping. We’re going to stick them in at the tail and go straight down. That way you can just bite them off the skewer like that. I cut three sides on this because I want some overlap over the cheese to seal it in. So, just going to wrap it like.
This. And where our goal is is to make an actual pocket with the wrapper. So, it’s all enclosed. Now, if you can get your hands on square rice wrappers, which for some reason I can’t find lately, this will save you a few steps, but this will work. We’re not doing a hundred of these.
So, we can take all these scraps of the rice paper wrappers and actually chop them up in a food processor and use them like a gluten-free panko. And this is a great option for your friends that are glutenfree and you want to do a fried.
Appetizer for them. You could probably do this with wonton wrappers too if you weren’t worried about glutenfree or using rice paper. They’re a little easier to cut and mold too. Shrimp, zucchini. All right, we got our oil.
Heated up and we’re going to start off with the shrimp first. So, kind of pinch the ends just to close them up a little bit. See how this works. And this way doing it on the skewer, you don’t have to worry about really burning yourself. You got to watch for the flame. But that’s about it. You just want to keep those apart.
Because those rice paper when you’re frying them, they’ll stick together and then rip. And shrimp are all pink. Yep. Looks like they’re just about dried. Oh, that one kind of came out of the rice paper a little bit. See how these do there’s no real air bubbles. Maybe.
That’ll help keep the end from popping open. You could probably do this also in like a fondue pot if you wanted to make it where everybody got to cook their own. We’ll try. I wanted to cheese this. See if that works or makes a huge mess. All right. Today we made rice wrapper shrimp, mozzarella cheese, and zucchini. So, let’s try one of the shrimp right.
Now. So, you got some beautiful color the shrimp, a little crunch, too. So, you got that little bit of red fish seasoning and the sweetness of the shrimp and that crunch of the rice wrappers. All right, next up is our zucchini. It’s also coated in a little black and red fish seasoning and another rice wrapper.
So, that’s really good. You could make a dipping sauce with this or for this, but I really don’t think it needs one. They’re just just kind of highlights the zucchini with that little bit of um smokiness and garlic of the red fish seasoning. A little bit of heat, but nothing too major.
So, last but not least, going to try the cheese. The mozzarella. Hope it kind of comes out like a mozzarella stick is what the idea was. Bang on. I mean, that is just They’ve been sitting for a couple minutes, but Oh, man. These are great. Really good.
