Welcome to Brewing Better Living! My name is Erin and here is the very abbreviated version of my health and fitness journey: I have a long history of weight loss struggles and health issues. In 2013/2014, I hit a high of almost 200 pounds. It would be at that point when I decided that I was sick and tired of being sick and tired. I started to walk and run, along with changing my eating habits.
Within a year, I had brought my weight down to the 130s and run a half marathon. It was at that point in my life, when I should have been at my healthiest, that my life started to fall apart. I started to experience a variety of health symptoms that would intensify. It would take over two years of bouncing from doctor to doctor, including many specialists and ER visits, until one of my doctors suggested I may have Celiac Disease. I saw a gastroenterologist who ultimately diagnosed me with a condition called SIBO.
My SIBO and corresponding symptoms were ultimately brought under control with a treatment that included a Low-FODMAP diet and going strict gluten-free. I finally had my life back and felt great again as time went on. I maintained a strict gluten-free diet until after the lockdown. At that point, I was frustrated (like many were) and decided I wanted to eat everything again and just live my life.
That experiment worked for a while, but over time, many of my symptoms started to reappear. My routine bloodwork in 2023 would include a full Celiac panel, and for the first time ever, it came back positive. After going through the rest of my testing, I again started not only eating a strict gluten-free diet but also went low-carb. My symptoms once again improved, and I felt better than I had in years.
Today my goal is to stave off any of the potential complications of Celiac Disease as well as the often-associated autoimmune conditions. I eat a very minimally processed, low-carb diet, consisting of gluten-free whole foods. I’ve also reignited my passion for fitness and now strength train regularly. I have managed to transform my body and mind and feel better now than I did when I was much younger!
Because of the passion I have for health and fitness, I am working to get my nutrition coaching certification through Precision Nutrition. I plan to obtain further training after that too! What I eat in a day on a gluten-free low carb diet and not a diet isn’t to lose weight but in a way of eating okay so I forgot to um take a video of what I had for my very first meal this morning but what I did was I had some f plain Greek yogurt this is 2% milk fat I keep different um fat contents of this on hand so that I can adjust my meals.
Accordingly depending on where my macros are landing for the day so this this morning I did the 2% F plain Greek yogurt yes uh something you don’t see very often with me I did a tiny bit of this Jessica’s vanilla Maple uh granola the ingredients in this are pretty clean this is why I get this yes it has some sugar but I key in on this one because.
It does not actually contain soy in the ingredients okay it is also um made with organic certified gluten-free oats so if you know about having to be gluten-free you’ll know why that is important and then I also had my coffee this morning with a little bit of heavy cream and MCT oil in between my first and second meal I had some electrolytes mixed in 40 o of.
Water um this morning I did the element grapefruit salt um these I find keep me going um you know I I tend to have issues or have had in the past heart palpitations or you know I also have issues where my blood pressure uh goes quite low so these definitely help with that and I also had another cup of coffee just black coffee for the second.
One moving on to my second meal of the day and anyone that follows me sees that I eat the same thing very often um yeah I’m kind of boring that way but I have some grilled chicken breast that my husband grilled up on the grill yesterday I have some apple sliced I have some fresh mozzarella cheese I have salt and pepper on this and a little bit.
Of drizzle of balsamic vinegar and I do this journey with chocolate Yep this is 78% um lint makes it 78% dark chocolate pretty clean ingredients and again I try to stay away from soy if at all possible and this does not have soy in it so there is my second meal and I am eating this cold I just like it this way.
Also I’m having a little bit of the um lemon cello lacroy with this second meal time for my third meal and now I am having this is one of my favorites I’m having salmon that I pan seared in my cast iron skillet using just a little Old Bay so that is going to be delicious I also have some sweet potato that I roasted yesterday so these are.
Heated up leftovers from from um yesterday and I have just some cheddar cheese so that is um my third of four meals and um I’m going to enjoy this one so this is my fourth and final meal it’s more might look more like a snack what I have is a little bit more yogurt this time this is the full fat F Greek.
Yogurt I have some frozen strawberries that I’ve defrosted on top of there and then I’ve done my usual equip chocolate um Protein that’s just it’s actually a grass-fed beef isolate protein I still can’t get over how amazing these protein powders taste so this is um kind of a daily thing in my life when I need to um finish my protein.
Macros so there you have it I’ve gotten my macros pretty much in today and that is what I eat in a day on a gluten-free low carb diet
