Hey so I got an order for blueberry muffins and I thought I’d share a little bit of the baking process with you and with the holidays being so close I think it’s only fitting that we add a little sweetness to the Channel all right let’s go okay so I have all my ingredients pre-measured and ready to go this order is coming from a returning customer who.

Is not vegan nor gluten intolerant now I’m appreciative to all my customers but it’s something about the non-vegan ones taking a l to my desserts makes me feel even more appreciated I normally get orders on my cookies and cupcakes but rarely on my muffins and honestly I don’t advertise them as much as I do the other dessert so clearly that’s my bad.

Also I will share with you when baking gluten-free avoid over mixing as much as possible the goal is to get all the ingredients equally combined over mixing the batter can yield rough and tough results and we don’t want rough and tough we want fluffy and moist so make sure to keep that in mind when baking gluten-free items I’m using fresh.

Blueberries for this recipe Frozen or dried blueberri are okay to use as well it’s just frozen blueberries can lower the temperature of the batter causing me to have to adjust my baking temperature and with the ingredients that I use for this recipe I don’t recommend baking at higher than needed temperatures on the other hand with dried blueberries I.
