Hey there darling welcome to the farmer table my name is Jess I’m so glad to have you in my kitchen this morning I’ve actually got my morning coffee and I am about to start making some breakfast for my family this recipe is one of our go-to Staples when we first got chickens tennish years ago uh we found ourselves drowning in eggs for the first time ever.

And we needed to find creative ways to use those eggs Along Came Dutch baby pancakes and they became hands down one of our favorite breakfast it’s very very easy mornings especially like School mornings weekday mornings when we have a lot going on getting up and making breakfast can be a little daunting especially if you don’t have a plan and.

I love Dutch baby pancakes because as long as I’ve got time for it to bake in the oven the Hands-On time is so small that I can pretty much make it work even on a busy morning you can look up Dutch baby pancake recipes and find 100 different variations with slightly different measurements but they all more or less work the same the.

Recipe I use the base recipe is 1 cup flour 1 cup milk and six eggs and then you can take it from there where you want to go uh with that particular ratio I use a 9 by3 baking dish or a 12in cast iron skillet that I find that that the full cup recipe is how I think about it um works best in these larger containers now if you don’t need to feed a lot of.

People and you don’t want to make such a large Dutch baby pancake you can totally cut that recipe in half but you would need to use a smaller container so if you cut it in half and do 1/2 cup milk 1/2 cup flour and three eggs and just use like an 8 by8 baking dish or maybe like an 8 in pan I will do the half recipe in a 10-in cast iron pan the.

Thing is is it’s going to turn out okay it’s just going to be thinner maybe cook faster whereas if you’re using more contents in a in a smaller container is it’s going to end up being thicker it might not rise as well the thing I’m trying to convey to you here instead of confusing you with a lot of information is that this isn’t hard and fast this is.

Not uh black and white you don’t have to follow it to a te I’m sure there are going to be people who ask me and say well would it work with this I don’t know try it worst thing going to happen is your food is going to have a little bit of a weird texture maybe be a little thicker than you intended but it’ll still probably be edible no matter how.

You do it so for me 1 cup flour 1 cup milk 6 eggs in the 9×13 pan now today I’m going to be doing two Dutch baby pancakes I’ve got my oven preheated to 400 I’m going to do one of these with regular flour and I’m going to do one of these with gluten-free flour the the gluten-free flour doesn’t rise quite as much as the regular but it’s still.

Really good and you can’t really tell a massive difference in the texture and I just wanted to cook them side by side so you guys can see so I use my blender to make Dutch baby pancakes you could mix these by hand you could do them with a hand mixer um I’m not really looking to whip these ingredients I’m just using the blender because it makes it super.

Fast so you definitely want to have your oven preheated to 400 I don’t even start putting my ingredients together until my oven is preheated because the first step that we have here we want to put about 3 or 4 tablespoons of butter in each one of our containers if you are having this recipe and you’re doing like the smaller pan with half the ingredients half the.

Butter you don’t have to put as much in there and I’m going to go ahead and stick these in the oven I want my pans to go ahead and start heating up and I want this butter to melt you do need to keep a close eye on this cuz you don’t want to burn your butter because that’s going to lend a bitter flavor to your whole.

Dish a little tip if you are new to cooking when your oven is preheating it is very very hot let’s say you put 400° on your oven to preheat um and it says on there that it’s 200° and you think oh I’ll go ahead and stick my butter in now and start melting it um your oven is not actually 200° like the ambient heat in your oven is 200°.

But the heating coils like on the top or the bottom however your oven works are at like 550 or something at that point because they’re trying to get the oven up to temperature as fast as possible so if you put that butter in while your oven is still preheating it’s probably going to burn it like if you throw a dish in thinking well it’s still.

Preheating and I you know it’ll be ready in 10 minutes I’ll go ahead and put the the dish in um it’s not going to cook how you want because it’s being exposed to really high like heat from The Broiler in a lot of cases maybe not all ovens act like that but I know a lot of them do so I typically like to make sure that my oven is just fully heated before.

I put anything in it so as I mentioned there’s kind of the base for this recipe and then you can take it in different directions you can serve Dutch baby pancakes with like a Savory application um if I were going to be serving these in a Savory way I would likely season them differently so I could would still.

Do the cup flour cup milk six eggs but then I might add some salt I might add some garlic powder some onion and then when it comes out slice up some like deli ham and put it on top so you could go Savory with this um when I’m going to do it sweet like I am this morning I’m going to put a little bit of nutmeg vanilla and a little bit of sugar in.

Afterwards so that’s what I’m going to put on the written recipe but Phil free to play with this because Dutch baby pancakes are really versatile all right I’m going to start cracking my eggs um you’re going to see me Crack these into a separate bowl and put them in the blender that is because these are farm fresh eggs from our chickens and though.

We collect them daily um I have still had rotten eggs in the in my kitchen it’s a it’s a scarring situation you crack open a rotten egg my rotten egg story is awful I was cooking breakfast for our extended family and I had I had literally already cracked about 40 some odd eggs it was dozens into this really large bowl cuz I was scrambling a really.

Big pan of eggs for everybody and the last egg that I had to crack in 40 something eggs was rotten I cracked it directly and of course ruining all the other eggs that I had already cracked uh so that’s whenever I adopted the method of cracking into a bowl first to protect myself and my ingredients it was oh rotten eggs are nasty all right six eggs.

Are going in the blender now I’m just going to reuse this little Egg Bowl because it is a one cup measuring cup the thing I really like about Dutch babies is that so many like fast and easy breakfast options are just carbs um and even with Dutch babies being kind of on the sweeter side there’s still a lot it’s a lot of eggs and milk um so there.

Is protein involved and I kind of like the fact that we can have a fast sweet breakfast that my kids actually like and we eat but that is still some protein this is the gluten-free flour that I used it’s a Bob threadmill I order this bulk online I found it on Amazon Azure standard has it I’ll try to find some links and put them below I.

Mean as far as a bag of flour goes it is expensive but if you’ve bought gluten-free flour in the small bags at the grocery store it adds up a lot and you do actually save money buying at bolt now if you couldn’t get through this very quickly you could probably get this separate it out in smaller bags and put it in the freezer and it would be.

Fine um but I definitely wouldn’t just I’ve got the open bag here but I mean we I cook a lot so I can get through food a lot of times before it is at risk of spoiling or having bugs or anything like that gluten-free baking is one of those things that is still relatively new to me um and I’m just kind of doing the best I can and what makes the most sense.

For us so all right eggs milk and flour in here so there’s my base since this is going to be on on the sweeter side I’m going to put 2 tablespoons of sugar in here you can do maple syrup you can do honey you can leave the sugar out all together whichever one you want to do today I’m going to do just a little Shake of.

Nutmeg I mean that’s literally maybe like a/4 of a teaspoon and then a little Shake of cinnamon same not very much and we’re going to put about I don’t know a teaspoon of vanilla extract I do make my vanilla extract out of bourbon so whenever people see me cooking they’re like are you spiking.

Your kids food I’m like I guess might be a little bit I when you really think about what any sort of extract is yes uh it is absolutely alcohol but I love bourbon vanilla it adds really good flavor and of course the alcohol does cook out all right I’m going to go blend this I’m not really looking to like whip this I don’t want to like whip these.

Eggs I just want the contents to be thoroughly Blended you can do this this by hand I do it in the blender every whenever I make these because usually this is a Fast go-to breakfast and being able to put it all in this container makes it up and then pour it um means I don’t have as many dishes to do all right so this butter is just melted you.

Can let it go a little bit longer and uh let it brown if you feel confident in Your Capacity to keep an eye on that brown butter just lends a much nuttier flavor to things but that’s also okay if you just melt it pouring in here make sure you don’t have any um flour pockets all right this is going back in the oven and I’m going to just.

Really quick repeat the process on the regular one with regular flour I do the gluten-free one first cuz I usually don’t even wash this I just move on to putting the next set of ingredients in and the fact that this is gluten-free is not going to make a difference for the next.

One because of how easy Dutch baby paint pancakes come together I love the fact that I can make these make this from scratch breakfast using our farm ingredients and have my kitchen completely cleaned up again um in a minute you know it just doesn’t make a mess which is nice all right my timer just went off after 17 minutes and my.

Oven is like a bottom of the wi oven and it it Heats really unevenly so I just took my pans and flipped them just to make sure that we have cooking I’m going to tell you that if you’re cooking a smaller Dutch baby to put 15 minutes on your timer and then look at it if you’re cooking a larger one 17 minutes and then look at if.

You’re cooking two at one time there are a lot of variables here that can change the cooking times that to kind of pan you’re cooking it in but I’m going to show you what it’s meant to look like at the end um so start with those times but you may have to watch it and give it a couple more minutes and that just depends on the factors because this is a.

Essentially like a pop over it’s kind of like a suet it’s rising up um and things like that can be kind of touchy I mean it variables can change it humidity can change it your oven the container the flour you’re using all of that can change the cooked time so smaller container start with 15 minutes larger container so smaller pan start with 15.

Minutes larger pan start with 17 minutes before you look at it it will probably take a couple more minutes from that okay this is gluten-free this is regular they look very similar um keep in mind the gluten-free was actually in the oven for I don’t know four or 5 minutes longer because I I put this one in and then Blended this one I find with.

Any sort of gluten-free baking things tend to take a little bit longer at this point is when you get to decide what kind of Dutch baby you want to have I actually think that these taste pretty good just like this I mean they do have that little bit of sugar in them so if you want you can just cut these up they’re they’re good with some maple.

Syrup um you can cut them up like I said put some ham or something on them what I do is I’ll take a couple little bits of butter and just drop them along the top so it’ll melt fresh berries make a really good topping but we typically just do some powdered sugar this is a tea ball strainer these are little things that you use to brew loose leaf.

Tea but I use them get a little powdered sugar I mean really like the world are oyster right here you you can be creative and do any sort of way some of my kids actually really like him Savory Jeremiah’s favorite way is just with a little sprinkle powdered sugar and then some fresh berries um again sometimes we.
