Stretch Your Dollar and Your Chicken: 5 Budget-Friendly Gluten Free Recipes!

Good morning everybody I’m just going to get myself a cheeky little macky’s coffee side note McDonald’s like their coffee is decent and it’s cheap and they don’t use oat milk so I drink it because it’s safe also because I like to earn lots of points my app and then I get like a week or fre coffees anyway this is completely beside the point of this.

Video I’ve been doing a lot of like thinking a lot of like soul searching about the kind of stuff I want to put on here I really want it to be like helpful everyday stuff for a gluten-free diet some really quick easy inspiration for like dinner and stuff would be helpful so today I am going to share with you sorry you might be able to hear my.

Washing machine is literally about to take off in the garage very no noising today I’m going to show you something that I do most weeks but I’ve never shared it on the blog for some weird reason so I thought why not share it here so what I do every week is I normally get like a whole chicken and I roast it but we never really have a.

Roast I mean sometimes we have a Sunday roast but generally I roast it and then I use the meat so I’ll put it in like salads and stuff I’ll make soups I make stock and I thought why am I not sharing this with you guys because it’s so much cheaper to do things this way and you can really stretch like a whole chicken out to last so I’m just going to finish.

My beverage and then I will get cracking and get my chicken in the oven so got a medium roast chicken sometimes I buy those like um cook in the bag ones but I mean this was just cheaper so that’s why I got that there’s really no interesting story behind my decision little bit of salt and pepper little drizzle of olive.

Oil so I’m keeping it fairly neutral because I want to use the meat in like different dishes so I’m just going to pop it in like that and roast it right the chicken is out so this has been sitting for a little while I’m going to have some of it in my lunch I’ve just made a really basic salad so I have got rocket spinach tomato spring onion.

A little baby cucumber and these pink figgled onions from Aldi which I’m obsessed with and then this sbra garlic and pepper humus which is the best hummus ever and I’m going to cut a bit of the chicken breast off to have in my lunch and then I will let this cool so that I can show you what I’m going to make with the rest do you know what it’s.

Actually so nice outside I’ve taken us out to the Garden my first Garden lunch that’s exciting I mean get a load of that blue sky this made me very happy so just to show you that the chicken’s cooled down I’ve picked off pretty much all the meat there’s.

Probably a few little Scraggy bits I can still get so I’ve got my carcass there ready to make some stock I just love having homemade chicken stock it’s so good and it’s an easy way to have clean- free stock and then I’ve got a really big bowl these bowls are massive so like a massive bowl of meat here when you cook your chicken so I’ve saved all the.

Juices here so even even if you’re having a chicken and it’s not part of a roast dinner you can still make a really quick gravy with this um I’ll show you how to do that in a second and then you can freeze that or you can save it for another night okay so I’m just going to pour in the roasting juices into this pan just.

Going to pour in some boiling water and then you’ll also need some corn flour and a whisk so I’m going to put about a tablespoon in here and then you should never add the cornflour directly so I’m just going to get a little bit of the liquid which should be like warmish and just Stir It Up and this is what we call a slurry now it’s.

Come to the boiler pour this in as well just going to use my whis now to thicken this up so you can make this gravy as thick as you want and you can also siiv it to get out the little bits but to be honest I don’t really mind those because well it’s chicken it’s going on my chicken don’t mind a bit more chicken I’m going.

To let this cool completely and I’m going to freeze it for next time I have a roast in enough this is so handy if you do want to make a roast with your chicken and then you’re using the leftovers for other recipes either way really simple glutenfree gravy okay it is time to make stock I look like I’m in the stock pot hello.

Everybody I’m going to have to move that because that’s going to be really distracting so I’m now going to make some stock using the chicken carcass so I’ve got the carcass here and basically I like to Chuck it into the slow cooker you can boil it on the hob but I just find it so much easier I’ve got my chicken bone so I’ve got the bones I’ve.

Got any left over little Scraggy bits of meat um I’ve got all the juices that are left on this pan that drained off the chicken when it was Cooling and I kept the skin as well so any odd bits can go in there normally if I know I’m going to do some stock I will save ends of veg so I will save like the ends of the onion so I’ve got some really soft celery.

Which is looking a little bit sad so I chop off the um slightly moldy bit and then I’ve got some spring onions and then I’ve got um I don’t even know how to describe this carrot um but I have some carrots so um that’s going in and then I’m going to chop up an onion and I will also chop up some garlic I think I might.

Have chopped garlic actually instead of whole cloes so I’m going to pop some of that in I will show you how to make the easiest stock ever so we’ll chop off any Ganky bits so then I’m basically just going to take all of this and I’m just going to put it into here just going to pour water in until.

Everything’s covered okay I think that’s about as much as I’m going to fit in there but that is basically how to make the stock now I’m going to pop this on and I’m going to leave whoa I’m drowning the lid oh Lord I’ve made a mess let me try that again going to put the lid on successfully I’m going to put this on.

Low and I’m going to leave this overnight so we’ll come back tomorrow and I will show you how to finalize your chicken stock the chicken stock has been in over night and I’ve been letting it cool down so I’m going to take out all the veg and the chicken bones and I’m going to chop them away and then the rest will be a lovely stock and we’ll.

See what we can make with that there we go that is that beautiful chicken stock it’s a really really good way to just get a little bit extra out of your chicken and full of goodness so I have made my chicken stock and I am going to make chicken soup I always have a stash of this in the freezer and I used the last of it last week so it’s actually.

Really good timing whenever meal St ill I always get some of this out of the freezer and it is so good for making you feel better and I do really think there’s like some sort of medicinal properties to it so I’m going to tap into my stash of chicken meat and I’m going to put some of this in probably use maybe like A4 to a third of this but.

I reckon I can get like four or five batches of soup like good size bowls and then I’ve got some fresh parley some carrots and some onions and I’ve got a little bit of leftover potato so the recipe on my blog I use celery as well but you don’t have to use that I don’t have any so I’m not going to but yeah this is what I’m putting in My.

Soup okay I’ve added in my shredded chicken and some fresh py and now I’m just going to Ladle the stocking and let this simmer probably for about 20 minutes or so until those beds are nice and cooked through and that is how simple it is to make the soup give it a good stir bring it back up to a simmer and then we’ll just leave.

It to do its magic okay doing the all important taste test oh hot that soup is delicious I put a little bit of frozen chili in as well it’s just giving it like a really nice kick um very happy with that for my next trick I’m making the chicken and leak Ras recipe from the Vlog now the one on the blog uses for chicken but I’m just.

Using this shredded cooked chicken leaks I’ve got butter risotto rice some herb salt uh chicken stock which I made the other day so that would be a nice way to use that up and let me show you how simple this recipe is so after about 5 minutes it should look nice and soft like this so I’m going to add in my.

Chicken and my rice and my herbs but I can’t do that onehanded okay some quick fire tips for making risoto so you want to stir all the rice in so it’s coated like this and then we’re going to take our stock NOW ideally the stock would be hot that’s quite important when making Moto I haven’t heated this up because I am a.

Plum so I’m just going to important anyway so imagine this is hot stock so you can see the stock at the moment and this is going to gradually get absorbed and as soon as you feel that this is starting to sort of stick a little bit that’s when we put the same amount of stock in again and keep going like this until all the stock is added.

And hopefully that will be about the time the risoto is cooked in the recipe on my blog I add some frozen peas but I don’t actually have any um but I do have a little bit of cream cheese left so I thought I’d add this in it’s about 50 g um so I’m doing a half batch of the recipe on my blog so this will serve two people um the recipe on my website.

Serves for and I will link it down below and that looks pretty much there right I’ve got my last little bit of chicken here just enough for one portion and I’m going to make a gluten-free quadia there you have it one gluten-free quesadilla not only have I managed to make this I’ve also.

Got two chicken and quato two batches of chicken soup for the freezer plus my gravy plus the amazing stock that I made and that is everything I got out of my Glen free roast chicken so I really really hope this has giving you some inspiration as to how you can stretch a chicken into making lots of different meals it’s so much cheaper.

This way all of this is glutenfree and everything apart from the wraps is naturally gluten-free anyway so I just use the B free protein wraps for this but any glutenfree wraps will do I even have my own homemade glre wraps which I will link in the description down below along with the recipes for the soup and the risoto and what went into the cas.
