Plant-powered perfection: A day in the life of a gluten-free, vegan foodie

Hi and welcome to another what I eat in a day as a gluten-free vegan starting with breakfast and because the spring is here the Frozen smoothie season has officially started I made this one with frozen mango cucumber Roma lettuce Ginger some lemon and almond milk just blend it all up until smooth.

Then I poured it over into a glass and I really enjoyed looking at this beautiful green color then I also prepared some Kua matcha which is a caffeine free matcha made of mulberry leaves have some of you tried it let me know I don’t really know how common this one is but I really really like it I whisked the matcha powder in some hot water and then.

I added some more hot water and Fred oat milk I chopped my smoothie with some gluten-free granola and cashu then it was time to eat it was so good for lunch I had some gluten-free baked Ron in the fridge I wanted to use.

So I decided to make a tomato Roni with broccoli I started with chopping some broccoli in pieces and then also some tomato I added it into a skillet with some olive oil salt and black.

Pepper then I chopped the garlic glove and added it into the skillet garlic goes so well together with tomatoes and fried broccoli then I was going to make a herbal oil with th and basil so I shopped the herbs and added them into a glass together with some lemon juice olive oil salt and.

Black pepper then I added some cooked Ron into the tomato mix and let it fry together a couple of minutes to this dish I also served some chopped apple red cabbage and avocado it was time for serving so I added the Tomato Boni on a plate together with.

Some broccoli the greens the avocado The herbal oil and some extra basil on the top then I also added some crunchy sunflower seeds then it was time to dig into this wonderful colorful.

Dish as a quick snack I had some slices of lemon this one was so sweet and so delicious then it was time for dinner and I really love nourishing bowls so I made this Sao cabbage bowl with tofu I started with shopping and wash some leak then I cooked it in some water in a skillet and then I also chopped the Sao.

Cabbage quite thin then I rinsed it in some water too before adding it into the skillet I added some spices which was salt pepper chili flakes onion powder and one crushed garlic loove just let it cook until soft then I.

Sliced some tofu and chopped it in small cubes I added a small amount of salt some garlic powder onion powder nutritional yeast tamari sauce rice vinegar and black pepper optional is also to add some.

Sisam oil then just put a lid on the top and shake it well I let it rest for about 10 minutes before adding it on a baking tray with parchment paper I also added some sesame seeds and then bake the tofu in the oven in 220 cΒ° for about 20 to 25 minutes.

Until a bit crispy I then sliced some veggies some cucumber and some tomatoes and I also added some basil when a tofu was ready it was time to eat and I had some leftover kinoa in the fridge that I used in this bowl I then added the beautiful Sao cabbage.
