Hey there welcome to the channel so for dinner last night we had a roasted chicken and this is what’s left over normally we freeze it and I’ll use it later on but today I thought I’d just make an easy dinner with it and use it up so we’re going to make a cheesy chicken and rice baked casserole it’s going to have a Southwest flavor to it.
It’s super easy I’m not even going to show you guys how to prep ingredients because it’s that easy so I’m going to take a recipe I found online I’m going to tweak it to suit my needs and it’s going to come together in no time I’m Jamie with Savory saver I share gluten-free recipes tips tricks and resources to make your gluten-free.
Lifestyle easier so please consider hitting subscribe and let’s get started this recipe isn’t going to take long at all so we’re going to just jump right into it I’ve got a tablespoon of olive oil heating over medium high heat I’ve also turned my oven on to 350° that way there once everything’s together we can just pop it in the oven.
And get it baked off so once your oil’s heated up we’re going to add one chopped onion I’m also going to add one bell pepper any color you choose now we want to cook this until it’s tender so it’s going to be 5 to 10 minutes once your peppers and onions have softened I’m going to add a couple cloves of.
Garlic and guys I the recipe I was inspired by was a pillsberry recipe and I have pretty much changed the entire recipe as far as amounts and ingredients just because it got really good reviews but I felt that it needed some more seasonings and such plus I’m using what I have on hand so I will link below to the original recipe and I will also list.
What I did in the description down below all right so the next thing I’m going to add is a can of black beans that I’ve drained and rinsed also I’m sure you’ve noticed by now I didn’t get a big enough pan so I had to get a bigger can that had enough room for everything to cook very typical of my cooking abilities some days next I’m.
Going to add a can of diced tomatoes juice in all I’m also going to add a can of mild green chilies if you had canned tomatoes with green chilies you could just use that of course next I’m going to add my chicken this is probably about 3 cups maybe 2 to three cups so I’m just adding all of my.
Leftover chicken I’m going to add some rice that I cooked off this was brown rice because I had some I was just trying to use up in the cabinet it was somewhere between 3/4 of a cup and a cup of dried rice so I just cooked it all off and it’s kind of red because I actually used this tomato bullion to make it so I put my water in.
Here and added about a teaspoon and a half of this guys this is not certified gluten-free I do not see any ingredients that contain gluten in it and terara doesn’t have any issues with it so I will link below to it but just be aware this is not certified gluten-free it doesn’t bother her so we use it let’s give this another big.
Stir so at this point in the recipe they didn’t have any seasonings so I’ve already added the Tomato bullion I’m also going to add some Mexican style seasonings to it because I think it needs it so I’m going to add some chili powder guys I’m not measuring anything I’m just going to sprinkle what I think so maybe a teaspoon or.
So I’m going to do the same thing with cumin I’m going to use just a little bit of oregano because I put that in my taco seasoning as well I’m going to grind in some black pepper I’m going to put a little more salt in but I’m going to taste it before I add anything after this right let’s stir this up and see what it looks.
Like all right we have one more ingredient and that is about a cup and a half of shredded cheese the original recipe called monay Jack and I do not have two cups of that I had about half a brick so I’ve added all of that to the pan now I’m going to add just some shredded cheese as well so I’ve just got some finally shredded colby jack so I’m.
Going to add about another cup to there so big handful give everything a big stir to melt the cheese in and mix it up all right everything looks like it’s pretty hot so let’s just turn the burner off let me give it a mix for just a minute more and let’s move back to the.
Counter and get it ready to go in the oven we’re back over at the counter and I’ve got a 13×9 that I’ve sprayed down with cooking spray everything’s been mixed into the casserole so now I’m going to move it into the casserole dish now everything’s in the casserole dish let’s top it with some additional cheese so the original recipe says to.
Cover with foil and bake for 30 minutes then take the foil off and bake for 10 everything is hot in here and the original recipe also didn’t add everything to the pan like I did they mixed some of it separately everything’s warmed through so I’m only going to cook it for about 20 minutes covered and then the last 10 minutes I’m going to take.
The foil off just so it can bubble and brown a little bit more we are covered and ready to go so let’s get this baked off and give it a taste and see how my seasonings came out it’s time to give our cheesy Southwest style chicken and rice casserole a taste and I should probably put some toppings on it cuz some sour.
Cream and some jalapenos would be really good on it some cilantro however we’re having this for dinner in about a half hour so I’m going to take a couple bites now and I’m going to top it later for dinner so excuse the picture on the thumbnail and it not having any toppings at the moment so it’s pretty hot I did 20 minutes covered 10 minutes.
Uncovered I feel that the seasoning is spoton I like that I added the additional seasonings that the original recipe didn’t have the pillsberry recipe I used for inspiration did not have any kind of seasoning in it whatsoever so I added cumin chili powder it really helped the original didn’t have garlic I added a couple cloves of that I probably.
Could have got a little heavier on that honestly it’s 13 by9 probably three clubs of garlic would have worked as well also the pills be recipe called for a carrot chopped which I didn’t think needed being Southwest so I’ve used my leftovers from yesterday from the chicken I finished off a bag of rice I used a can of beans a can of tomatoes.
