Cauliflower Dreams: Elevating Taco Night to a Whole New Level ๐ฎโจ
Hello and welcome back to another recipe episode today I’m going to be making roasted cauliflower tacos these 16 ingredients yes 16 ingredients will come together and eventually turn into this lovely tray of tacos first up we’ve got chipotle peppers in aobo sauce I prefer to go for dried instead of fresh cilantro because honestly I can’t find.
Enough ways to use up fresh cilantro and it usually ends up going bad in my fridge some lovely sliced almonds these are going to be roasting in my oven shortly we’ve got a few spices there’s paprika there’s also chili powder and finally to round out the spices some ground cumin the recipe says to use sea salt I just decided to go with this.
Himalayan pink salt because why not it’s cute it’s pink and I had it on hand fire roasted diced tomatoes this is homemade maple syrup the recipe uses just a little bit of this to sweeten up an otherwise very Savory set of ingredients one of the MVPs of my recipe episodes there’s some extra virgin olive oil I’ll be chopping up two heads of organic.
Cauliflower that’s actually the first step I’ll be taking for this recipe this is a bonus item I love this brand of vegan cheese I would say it’s the best brand out there for those of you who are looking for a non-dairy substitute for your typical shredded cheese cheese that you’d like to melt all right the last few ingredients we’ve got here there’s.
Some cloves of garlic both raw and roasted I’m using all cornflour tortillas in order to keep this glutenfree of course if you prefer wheat flour tortillas you can use those if you’re not concerned or don’t really care about having gluten in this recipe there’s a bit of lime juice going in here and then we’ve got some red cabbage.
I’m using this to garnish the tortillas once they’re all ready to go before I give you an overview of the recipe process I wanted to give a little Spotlight moment to this taco holder I’ve never ever owned one until now and I wanted to buy this specifically for this episode it seemed like a good investment anyways because I do eat.
Tacos quite often there’s three parts to this recipe first there’s the roasted cauliflower filling for the tacos second there’s the spicy red sauce that goes on top of the roasted cauliflower filling and lastly there’s the garnish ingredients that go on top of the tacos at the very end before I get started though I have to give a quick shout out.
To the minimalist Baker website that is where the recipe comes from and I will link it down in the description box below the minimalist Baker is my all-time favorite vegan and gluten-free recipe resource out there I highly recommend you go and check it out first I need to get these two packages of cauliflower undone and I’ll go and grab.
My cutting board so I can chop these guys up and throw them into this mixing bowl that I have just off camera use this guy I’ve already got my oven set to 400ยฐ fah so once the cauliflower is chopped and mixed up with the spices and the oil that’ll go in there and I’ll move on to the spicy red.
Sauce while the cauliflower is roasting in the oven I’m going to get started on step two to get going with that I actually have to roast a couple of things in the oven alongside the cauliflower which is already in there I spread out a/4 cup of these sliced almonds along with four.
Peeled cloves of garlic like get these all scattered out just going to quickly grab four cloves off of this bulb just chopping the ends off of each of these cloves don’t want those ending up in the sauce these are only going to roast for about 8 minutes so I’m going to set a separate timer than the one I have already going for the.
cauliflower I didn’t mention it at the beginning but to make the red sauce I’ll be using this food processor the first ingredient I’m throwing into the food processor is this 15 oz can 14.5 o can of fire roasted diced.
Tomatoes not only am I throwing in four cloves of garlic that we’re roasting in the oven but there’s also four cloves that I’m throwing in that are raw not roasted in the oven so I’m going to throw those in super quickly the sauce has 3 tablespoons of good old extra virgin olive oil next I’ll throw in three tablespoon.
Of lime juice and you can use a whole lime for this one tbspoon of this homemade maple syrup in my opinion this is the most fun ingredient just to give you a closeup I love the color of these the sauce smells Divine we’re going to use some of the same spices that you saw for the roasted cauliflower there’s a bit of cumin going in here and paprika.
Too 1/4 teaspoon of salt last but not least I’m going to grab the baking sheet with the roasted almonds and the cloves of garlic after the sauce is Blended down and ready to go it’s really just assembly of the tacos let me take the chamber off the stand and show you the mess that is the mix of ingredients inside before I blend.
Them all together I’m going to heat up my corn tortillas so let’s get some cheese on here yum look at these Beauties like I was saying the DIA brand vegan cheese melts very well I think it does a great job of mimicking Dairy cheese don’t.
Remember if I gave you a close-up of this but if you didn’t see it before here you go I’ve been craving tacos for quite a while I love tacos Bell there are great ways to eat vegan at Taco Bell but homemade tacos especially ones that aren’t traditional fillings like you know black beans refried beans I love the taste of roasted cauliflower with.
The seasonings that you put on as well spicy sauce time oh my gosh look at that consistency smooth but still a little bit chunky just a tiny bit so there’s some green here you go final product they’re dribbling a little bit but I would much rather have an over stuffed taco than a.
Measly little porly filled one let’s go just know that if you follow the recipe and use all the garlic that it calls for your breath will definitely smell like garlic after eating just one of these tacos that’s all for this roasted cauliflower taco recipe episode definitely go try these tacos out this is in my top three favorite recipes of.
All time thank you so much for watching eat well and I will see you in the next episode on this channel bye you.
