Unleashing Culinary Magic: Crafting Irresistible Gluten-Free Noodles with Siobhan Muir and Mr. SM
Hey y’all welcome back so we were deciding about what to make and we were thinking about doing things that like are considered sides but sometimes what you need is you’re making something that needs to be eaten on something like rice or pasta and you don’t have any well it turns out there’s an old recipe and it’s very simple to be.
Used when you don’t have anything like pasta or rice lying around the kitchen you can make your own pasta now it is egg based so if you are allergic to eggs you’re not going to want this recipe but it’s very simple you can actually make it gluten-free and it is a old Hungarian recipe so it’s called No kidly which means egg noodles and but we just call.
Them homemade noodles yeah but but in my family since we are we I have a Hungarian husband Mr SM that he go say I’m just going to make some no kly and I know exactly what he’s talking about but we had to translate so I’m going to let him explain it because it’s an old family recipe on his side and um the muret number one is going to.
Help because she required that it become gluten-free and this is the this is we had to modify the original recipe to make sure that it could be made gluten-free mhm and when sioban puts the recipe up she will have both the regular and the gluten-free version there is actually very little modification to this overall there’s a few little things.
That you have to add extra but they’re minimal in comparison now making your own homemade noodles or Nook atly uh it will require a specialized instrument it’s called a spel uh um Riser and or it’s a noodle maker um but online you can find it as it’s called a spel s p a e t z l e um they’re about anywhere between 10 to 20.
Bucks is it l or e l e um and so what you’re going to end up doing is you’re going to make the dough um we’ve already started a boiling pot of hot water we’ll put a little bit of salt in there in a bit um but once you make the dough this can be done in less than 10 minutes yeah total from start to finish um that’s if you.
Have the water boiling so what you’re going to need to do is it’s a very very simple recipe so the traditional way of doing it is strictly flour eggs and a little bit of salt that’s it 1.5 cups of flour three eggs and 1/4 teaspoon of salt is the original recipe I was going to get to that my de so the original recipe as Siobhan pointed out is 1 and.
1/2 cups of flour that is no different between the regular or the gluten-free in the original you use three eggs in gluten-free you want to use a fourth egg um with that the 1/4 teaspoon of salt in the original you want to up that to about a half a teaspoon and then the last modification that’s required in the gluten-free is a little bit of water and.
That’s partly because the flour itself is a little too it thickens and so you want it to actually flow a little bit and the idea with this is the moment it gets added into the spitzel tray it’s going to want to ooze out from the bottom and you’re going to literally I’m going to show it right now on the bowl but when it gets.
Poured in you basically just move this forward and back until it is literally empty and then you fill it again and then when the water is done or when the water is boiling that’s when you add it in but you take all of of this dough put it into the tray as fast as you can and you scrape it through the moment everything.
Starts to boil to the top and sit there for about a minute your pasta is literally done so without further Ado I’m going to start putting together the dough hopefully we’ll have that ready to go and then we will make the pasta it’s just going to take a little while and you do need a stock pot just because even at 1 and 1 12 cups of.
Flour this will make a fair amount of pasta yes it will so with that let’s get started all right so this a half a cup yeah that’s a supposedly half a cup yes all right it says half cup looks can be deceiving okay it says half a cup it looks a lot bigger than that please don’t hand me crack.
Yes I knew it said half a cup but it didn’t look like half all right so we’ve got our one cup and then oh I would like a whisk please big medium or small uh give me a medium please and then watch out for the handle it’s p snicky.
Nice didn’t we tell you we like to keep the egg in the bowl yeah I like making a mess I’m good at it okay all right so I’m going to mix together you don’t have to do this but because it’s gluten Fleet glutenfree flour I like to blend in the salt a little bit with the flour.
So okay smart alec you can hold those smart alec no lots of experience yes and what may need to happen it’s all going to come down to how fluid no pun intended the pasta will be once you add in the water so break up the eggs a little bit and throw in a little water and.
Then Stir It Together together to make the pasta I may need more water Kido then just let me know I will you will need more water uh yeah just a little more so pasta’s coming together just hold on actually I may not.
Need any you want to make sure you get most of the clumps out that is perfect so just half a cup so it’s just over a half a cup and but this is literally it you just made pasta now the hard part is just waiting for the water to boil so I am just transferring this into a measuring cup.
Because it’ll make it a lot easier to pour rather than trying to hold a pot a a big old bowl over a stock pot of boiling water you’re going to need to soak those the bowl and things like that because the problem with gluten-free dough is that it turns into concrete when it dries out and if if you have someone who does your.
Dishes for you they’re going to thank you if you soak it otherwise they’ll be let they’ll be cursing you as they dig that stuff off the edges of the bowl thank you yep which I was going to mention it should you have not works this is this is kind of a fun a fun recipe because it looks really.
Strange when when they’re making this but it it that too will need to be soaked immediately when you’re done with it because again it will turn into a thick sludge that you can’t get off guess what that’s real fun to clean all right water’s finally boiling so what we did was we transferred all of the dough into a measuring cup so it’s a.
Lot easier to pour into the Basin on the spotle grabbed the glass bowl grabbed a simple straining Ladle and now comes the fun part we go and make it so the water is all boiling all ready to go and then go ahead and start pouring it there kiddo and I will tell you when to stop keep going keep going I’m going all right good so now we just go.
Back and forth and literally it is all done keep pouring go ahead pour some more here’s this okay sure okay sorry not ready for that it’s okay okay so we get the last of it in.
And you can already see that the dough is already boil oiling and most of it is done take this please thank you and I’m assuming we’re done pretty much this is all finished all right now I need you to take that I that no problem then will one second there you.
Go and pretty much the dough is done need help yes okay now can I help you grab me the the bowl and the ladle move your hand please you drain off all the water as much as possible and.
Then you have a bowl of fresh homemade noodles and we are finished go ahead and put that in the sink so aside from having a slight boil over that is it.
That is homemade noodles and these are glutenfree so so again it was 1 and 1/2 cups of flour uh General recipe is three eggs gluten-free is four uh 1/4 teaspoon of salt in the regular half a teaspoon of salt in the gluten-free and then you just add in about a half a cup of water and that is.
It and then you just put it through the spettel and voila homemade noodles and you can do them in batches or you can do them in one big whole bunch and maybe not have as much water as we decided to put in the stock pot that was.
My mistake and it just all done so thank you and it was and what’s great is that when it cools down it will it will be just like like regular pasta it will keep its shape it won’t break down um you store it in the refrigerator and it let it cool and then you can like put it on a plate add sauce to it and heat it up and it’s it’s just like regular pasta.
And it should keep in the fridge for up to a week yeah so yeah cooked really easy and again it’s it’s a it’s an old recipe that that if you didn’t have if you have basically you need flour and eggs a with salt um and you if you don’t have any pasta you can make your own and if you have an issue with being gluten needing.
Gluten-free you can make your own gluten-free pasta which that’s a lot cheaper to do it that way than to go and buy gluten pasta of course you know you’re not going to get pen or uh rotoni or any of that you you will just get pasta but thank you so much for joining us definitely ring the bell to find out for new videos or post.
