These gluten-free quinoa bread rolls are not only delicious but also healthy and easy to bake. They are made with a combination of buckwheat flour, sorghum flour, gluten-free rolled oats, and psyllium powder, creating a plant-based treat that everyone can enjoy.

To make these bread rolls, you’ll need 100g of buckwheat flour, 100g of sorghum flour, 100g of gluten-free rolled oats, 2 1/2 tablespoons of psyllium powder, 1/2 tablespoon of salt, 1 cup of cooked quinoa, 2 cups of lukewarm water, and 25g of fresh yeast. Start by mixing all the dry ingredients in a bowl, adding the quinoa at the end.

In a separate bowl, crumble the yeast into the lukewarm water and stir well until fully mixed. Then, add the water mixture into the dry ingredients and stir until a thick dough forms. Let the dough rise for about 2 hours in a warm place, covering the bowl with a towel.

Once the dough has risen, preheat the oven to 220 C degrees. Shape the dough into around 10 small bread rolls and place them on a baking tray lined with parchment paper. Bake for 25-30 minutes. For an added crusty texture, you can place a form with water in the bottom of the oven.

After baking, allow the bread rolls to cool completely before serving. They can also be stored in the freezer and make a delicious toasted gluten-free breakfast bread. If you prefer not to use yeast, you can substitute it with 2 teaspoons of bicarbonate soda and 1 1/2 tablespoons of apple cider vinegar mixed in the water.
