Deliciously Simple Gluten Free Pierogi Recipe for a Tasty Treat
A quick and easy hack for making gluten-free pierogi! If you’re working with a gluten-free filling and maintaining a gluten-free kitchen, this hack is for you. Instead of traditional dough, we’ll be using rice paper, which you can find in Asian grocery stores. Rice paper is commonly used for Vietnamese Summer rolls. Look for smaller ones to minimize waste, as the smaller the better.
Now let’s talk about the delicious potato and cheese filling that we’ll be using. Start by peeling, cubing, boiling, and mashing some potatoes. Add butter to make them extra creamy. Next, grate your choice of cheese. Polish Farmers Cheese, cheddar, or any other type of cheese works well. If you like the taste of sautéed onions, finely chop and sauté some to add to the filling. For some color, you can also add chopped green onions. Don’t forget to season with salt to taste.
