Delicious and Healthy Vegan Teriyaki No-Meatballs: Oil-Free and Gluten-Free
This is a recipe for vegan veggie meatballs that are both healthy and delicious. Made with veggie ground and a combination of spices and binding ingredients, these meatballs are a great alternative to traditional meat-based options.
To make the meatballs, you will need 3 cups of healthy vegan veggie ground, 4 tablespoons of chickpea flour, 1 tablespoon of ground flax, 1/2 teaspoon of salt, and 1/2 teaspoon of garlic granules. Combine all the ingredients in a bowl and mix well. Divide the mixture into 8 portions and roll into balls. Place the meatballs on parchment paper and bake in a preheated oven at 350 degrees for 20 minutes.
The meatballs are served with a flavorful teriyaki sauce. To prepare the sauce, you will need 3/4 cup of pineapple juice, 1/4 cup of coconut aminos, 1/2 cup of unsweetened ketchup, 1/2 cup of date paste, 2 tablespoons of apple cider vinegar, 1.5 tablespoons of grated ginger, 3 minced cloves of garlic, and chili flakes to taste. Combine all the sauce ingredients in a saucepan and simmer on low heat for 5-10 minutes until thickened.
For the veggies, you will need 1 head of broccoli, 1/2 red pepper, 1/2 yellow pepper, and 1/2 orange pepper. Heat a pan or wok on medium heat and add 1/4 cup of veggie broth or water. Stir-fry the veggies, adding more liquid as needed to prevent burning. Once the veggies have browned slightly, add a little more liquid and cover to steam for 3-5 minutes, or until cooked to your liking.
To serve, top quinoa or millet with the veggie meatballs, veggies, and teriyaki sauce. This dish is a delicious and satisfying meal that is plant-based, oil-free, and sugar-free. Enjoy!
