Hi there! ◝(ᵔᵕᵔ)◜ Today I’m making a new batch of “Roasted Tomato & Garlic” sauce It’s the viral “tomato and garlic” recipe, slightly tweaked with more Italian flavors — hope you like it! ✩°。⋆⸜(˙꒳​˙) First, oil the baking paper, then chop the shallot I remove the green sprouts inside, otherwise they taste bitter after roasting You don’t need perfect cuts, just small enough to help them cook better ദ്ദി ˉ͈̀꒳ˉ͈́ )✧ I slice the tomatoes and remove any bruised spots Thick slices, about 2cm, work perfectly Into the tray they go! ദ്ദി ˉ͈̀꒳ˉ͈́ )✧.

I fill the tray up nicely and clean my board and knife well I’m using garlic from this brand — not sure if it’s sold everywhere, but I recommend purple garlic! Smells sooo good ( ⸝⸝´꒳`⸝⸝) It’s important the sauce isn’t too runny or too thick, or it won’t cling well to pasta when sautéed Now I portion it into single servings for the freezer After boiling pasta, I first sauté it in a bit of oil — once it’s crispy, I add the sauce and toss until it’s fully absorbed and sticks to the pasta (not the pan!)
