Sourdough bread has many of us wideeyed and interested as it’s considered to be a healthier alternative to regular bread. In this video, I’m going to share with you how it may be a healthier option, but also reasons that you should avoid sourdough bread altogether. So, let’s go ahead and dive in. But before we do, I’m Dr. Nick Zorowski, and it’s.

Awesome hanging out with you here in this video today. Let’s take a look at why sourdough could be a healthier choice, and then we’ll talk next about when to avoid it. The first reason it’s really beneficial is because it’s easier to digest. Okay. As you go through the fermentation process, what happens is gluten is broken down and so are the.

Phytic acids. And this makes the nutrients in the sourdough bread more bioavailable, but also it’s much more gentler on your gut than traditional bread. I want to focus in on the gluten aspect of this because it’s more important than you think. Now, it’s estimated that 90% of us are gluten sensitive. Well, what does that mean?.

Well, there’s a small portion of us that have celiac disease, meaning that we can’t have gluten at all. I mean, we’re so intolerant to it that it’ll ruin our day, it’ll ruin our week. And then there’s the 90% of us. It’s those of us who don’t really know that we have a gluten problem, but we are having a low-level sensitivity in our body and.

It’s driving inflammation and it also is causing a autoimmune reaction that could be causing major problems from you down the road where it’s attacking your thyroid or causing some other issue in your body. So, we know that gluten is a big problem for most of us in the fermentation process lowers gluten significantly in bread. Let me give you.

An example. Regular bread has about 124,000 parts per million of gluten in it. Sourdough, this fermented sourdough bread has about 200 parts per million of gluten in it. And then, let me take this a step further for you. Gluten-free bread has about 10 parts per million or less of gluten in it. So, you can see regular bread has 124,000. ferment it.

Now you have 200 parts per million, a significant reduction. However, you’re still not good if you’re someone who has celiacs. You, this isn’t a gluten-free bread. You still can’t eat it if you have celiac disease. But if you’re someone who’s gluten sensitive, you’re going to have a profound benefit from eating fermented sourdough bread. And so.

This is really interesting. Now, if you’re somebody who is um has to eat gluten-free, you know, you could look at gluten-free sourdough breads. There’s other problems that are associated with it, though. A lot of them are made with rice flowers. And then also, if you’re trying to make gluten-free sourdough bread at home, it can be kind of a tough.

Process. It doesn’t come out particularly great. Been there, done that in our own home. So, now let’s talk about how sourdough bread actually supports your gut health. When you are starting with a sourdough starter, as it’s called, it’s going to be very rich in probiotics. This is what’s going to ferment the bread. And traditional.

Sourdough will have wild yeast. It’ll have a probiotic called lactobacilli in it. And this is all going to produce beneficial organic acids, prebiotics, and postbiotics, which are all going to be really good for your gut and fuel your gut microbes. So, it’s very good for your gut health. Now, sourdough bread also is going to have a lower.

Glycemic index, okay? Meaning that it’s not going to raise your blood sugar as high as conventional bread would simply due to the fermentation process and the acidity of it. It’s going to slow the starch breakdown, and it’s much better if you’re somebody who is suffering with some blood sugar issues. Now, I’m also going to point out to you if you’re.

Because of the phytic acid is reduced, you’re going to be able to actually access these minerals in there like magnesium, iron, zinc, and more bioavailable nutrients in the sourdough.

Versus conventional bread. So, that’s another big benefit. Now, what you need to watch out for is also pretty important. And I mentioned at the beginning of this video, there’s a few things that I hear about sourdough bread, some misconceptions as to how it can be used, and I want to clarify this because it’s important. First of all,.

Store-bought sourdough bread in many cases is more flavored to taste like sourdough. It’s not actually fermented sourdough. So, you have to be aware of that because a lot of these stores that are selling this, you’re not going to get the same benefit as sourdough bread. So, be aware that you may actually have had sourdough in the past that isn’t.

True sourdough. It has to go through a fermentation process to be true sourdough bread. So, always be aware of what you’re buying. Now, also understand that sourdough bread still contains gluten. I went over this before, but I want to revisit it because I hear so many people who need to be eating gluten-free say, “I can eat sourdough.

Because, you know, it’s it’s, you know, gluten-free.” It’s not a gluten-free bread. It has a much lower level of gluten. However, it’s not gluten-free. So, those of us, the 90% who are gluten sensitive will do really good with it. Okay? But those of us who have celiacs, it’s not the answer. The other thing that’s important is that if you are.

Someone who is suffering from an autoimmune condition or a gut issue like IBS or leaky gut or some other problem, you probably will not do very good with sourdough bread. You’ll probably have a negative reaction, lots of bloating, irritation. So, you’re going to want to probably stay away from it in this case as well. So sourdough bread is a great.

Option for so many of us. Some of us need to still avoid it and just stick with those grainfree diets.
