Whisking Away Worries: A Cozy Reunion Over Delectable Gluten-Free Banana Muffins!
Hello everyone thought we could do some baking together today haven’t been on YouTube in a while and I thought what would be a nice way to get back into it they’re doing some baking just me and you we can do some chatting as well if you want mostly from my side because I can’t hear you through the screen feel free to talk though i wouldn’t judge you.
Today we’re going to be making some banana chocolate chip muffins i don’t necessarily have a recipe for this so I’ve just decided to vibe but if it goes well I’ll remember I did and I’ll write in the caption so don’t check the caption yet because that would be spoilers as to whether it went well or not we Let’s find out together okay.
Banana chocolate chip muffins let’s go i’ve been ripening these bananas for a couple of days they could be a lot more ripe but the the hell’s that but this is what we got i’m going to use three of them let’s get into the baking part first and then we’ll see where that gets i’ll say I’m going to put my dry ingredients in.
Here first i’m going to do like Whoa let’s say let’s go 200 g of um gluten-free flour just use the Dove one 200 g of gluten-free flour i’m not the type of person that likes to sift don’t tell my grandma she will be very angry and the reason I don’t is because I actually.
Just really hate cleaning a sieve let’s go some sugar um usually I think I’d usually use brown sugar for my banana muffins but I don’t have that so I’m going to go 100 g of sugar i’m going to go 90 g of sugar actually there salt of course um let’s go like I don’t know quarter teaspoon whatever i like using salt baking.
Soda there you go it’s half a teaspoon of baking soda so there’s that just going to have that all together give that a we stir though not very necessary right let’s mush these bananas shall we this my bowl bananas i don’t think there’s any special technique to this just squish them all in the bowl.
Together this one’s a bit brown that’s okay just more flavor banana number three i’m also going to preheat my oven it’s on 180° Celsius bake my oven actually doesn’t have like options anymore which has been a weird adjustment but mostly fine the.
Thing I like to do with my recipes is kind of make sure that they’re um minimum effort like it doesn’t have to be too particular i know with a lot of gluten-free baking everything’s a bit like you have to you know if you’re making pastry it has to be like a lot more particular a.
Lot more measured up for things like muffins and cookies and that it doesn’t need to be too much you just sort of whack it in the bowl get the reasonably the right consistency and it’s probably going to be yummy probably haven’t posted a YouTube video in nearly 2 years uh I didn’t stop it for any reason in particular i was just.
Quite busy but a lot has changed in that time i’ve obviously moved house um which is lovely which is still renting in London but um it’s been nice to get into a place that has like natural light it’s not asking for much but it’s big thing in London even got my own little garden which is incredible um what else has happened i got married which is nice got.

I’m feeling quite relieved cuz I so so stressful um honestly a bit of a time capsule when I look back on my YouTube videos i’m like “Oh my god she’s so young she she didn’t even know.” I very much use in my old videos like a presenter voice and actually one of the reasons I want to do this video today was to see if I can just like be a.
Little bit more cash i don’t know i don’t know if that’s coming across at all oh yeah i left my job i’m now a freelancer which is amazing i work as a freelancer for the Free from Food Festival which is um a big gluten-free and dairyfree food festival in the UK which I love i do that one or two days a week and then the rest of the.
Time I’m just making social media content and yeah I I love it feel very lucky what are we doing right this is actually if you use dairyfree chocolate chips a dairyfree recipe so all it’s no milk no butter i’m going to use oil and I’m going to use eggs eggs yes that’s how I say eggs two eggs just crack them straight.
In one oh two that went nearly everywhere and then I’m just chucking in about 75 ms of oil i’m just going to mix these ones together what a texture and then there’s nothing left to do but to pull these two.
Together so let’s chuck that in there m lovely i don’t know if anyone in the world ever has just a plain banana muffin but you could cook them like this or you could seize the day and add as many chocolate chips as you want sadly I’ve bit of an oversight in this recipe.
I’ve only got one packet for myself chocolate chips one for me i think in an ideal world where ingredients weren’t so expensive I’d put in like probably at least two packets of those this is about 100 g 100 g that’s weak honestly I need to grease these tins.
I’m just going to do like a big like a This is quite a liquidy mixture i wonder if that’s going to be an issue later we’ll find out just going to do a spoonful like that oops don’t try not to do that but whatever if it happens it happens world’s not going to end cuz you’ve spil your banana chocolate chip muffin mixture is it.
all right let’s wait these in the oven i’m going to put these in the oven um for I’m assuming around 15 minutes but we’ll go until they’re cooked really I’ll let you know afterwards how long that took oh god that’s on way too hot oh now’s the time for tidying up.
But you don’t need to watch that actually I thought of another update i wrote a recipe book just an online one i need to stop saying just because it’s still an achievement but I wrote a recipe book called The Gluten-Free Kiwi Bakery and it’s got about 70 recipes of all my favorite New Zealand treats that I had growing up.
Made gluten-free there’s recipes in there that you will find nowhere else in the entire world and that’s a promise I think yeah for sure i’ve got like pies like proper New Zealand pl pies custard square Belgium biscuits Afghan biscuits Anzac etc etc obviously no oats can’t have oats in the in the New Zealand can.
Have gluten-free oats over here can’t have oats in the New Zealand so I would never make a cookbook that had oats in it if it was for a New Zealand audience i promise you that um if you want to if you want to take a look at it I’ll just put it in the caption as well but um that was fun that took me about five years not five years straight five years.
Like going I really need to do that um but basically I think I had it about uh 85% finished for about three years in the first like six weeks of the year i was just like let me just get into it let me just tackle it get it done and I did and I’m really happy about that small wins um mostly I’m just happy it’s.
Finished oh I didn’t put on a timer oh dear now this YouTube channel I’m going to try to keep pretty chill but happy to have any suggestions as to what type of videos you’d like to see me make i’d love to more just fun little chatty baking stuff or any gluten-free stuff any celiac stuff that maybe would be useful to you i’m going to Japan again.
This year i’m very excited about so I’ll have to update my J my Japan video i’m laughing because I watched it the other day and it’s so cute like I’m looking at myself going “Oh Morgan look at you trying your best.” So I will update that there’s so many places in Tokyo now like I’m try I’m making my own little map online i will be making a video on how.
To how I plan my travels someone has asked actually several people have asked me for that but I will make I’ve been making my map of Tokyo and all the gluten-free places that I want to visit there’s like so many like there is too many i’m not going to I’m not even going to be able to get round to all of them which is a huge surprise last time I.
Went was before CO there was still like a good handful but then a lot of them closed during CO and now there’s just like this resurgence so I honestly am quite excited to go there i am going to other places in Japan of course which will be a little bit more harder to find gluten-free food but I’m really excited it’s for our honeymoon um I’m not going.
To be doing too much content while I’m there because it is my honeymoon um but I will make sure I keep an a list of where I’ve eaten and make sure to update you when I’m back right i am going to do the dishes actually I’ve returned with a hat says gluten-free girly on it it’s.
